I love quick and easy treats and I especially love my crockpot. When they come together it is pure magic!

This simple 3-ingredient recipe is creamy, crunchy, peanutty and incredibly gorgeous. What treats do you make in your slow cooker?

A few years ago I created my first ever crockpot candy recipe and it has gone wild on our site ever since. So, this past Christmas I decided to make a variation.

And so, Crockpot Chocolate and Caramel Pecan Clusters (AKA Turtles) were born. Truly genius and amazing, if I must say so myself!

With spring upon us, I was up for a new magnificent creation and I have to say, I have outdone myself.

This recipe is amazing with rich vanilla candy coated peanuts topped with festive candy and sprinkles. You are going to love them!

Helpful Tips to make Easter Crockpot Candy:

  • You can make this recipe with Candy Quick, Almond Bark (not actually made with almonds), vanilla candy melts and even white chocolate in this recipe. I have tried them all and we have loved every one.
  • You can use two spoons to drop the candy onto your parchment paper but using a tablespoon scooper is my preferred method. It assures all of the candy will be the same size and it is easier and less messy.

What you will need to make Easter Crockpot Candy:

  • Vanilla Candy Coating - You can use Candy Quick, Almond Bark (not actually made with almonds), vanilla candy melts and even white chocolate in this recipe.
  • 4-6 Quart Slow Cooker - This is my favorite. 
  • 1 Tablespoon Scooper - This is one of my favorite kitchen tools. It is perfect for candy making, meatballs and so many more recipes.
  • Crockpot Liners - I never use them because I wash the crock when it is still a little warm and the candy comes right out, but if you are worries about the cleanup, these are foolproof.
  • Parchment Paper-

Easter Crockpot Candy

White Chocolate Easter Crockpot Candy Clusters are a simple, impressive 3-ingredient homemade Easter candy that everyone will be raving about! An easy recipe that you layer in the slow cooker, stir and scoop. It is so easy it almost makes itself.
prep time: 30 MINScook time: 2 hourtotal time: 2 hours and 30 mins

Ingredients

  • 34.5 ounces honey roasted dry roasted peanuts (I used planters)
  • 48 ounces vanilla-flavored candy coating (Almond Bark or CandiQuik)
  • 11.4 ounces M&M Milk Chocolate Plain
  • optional garnish: seasonal sprinkles (I used jimmies and nonpareils)

Instructions

  1. Layer peanuts and then vanilla candy coating into the crockpot (I used a 5 quart). Cover. Cook for 1 hour on low temperature without lifting the lid. After 1 hour, stir the mixture and continue to cook, stirring every 15-20 minutes for another hour (a total of 2 hours).
  2. Meanwhile, line 3 cookie sheets with Silpat mats or line countertop or table with a long piece of parchment paper.
  3. Turn off the crockpot. Reserve 1/2 cup M&M's.
  4. When you are ready to scoop, pour remaining M&M's into the crockpot and fold in.
  5. Working quickly, use a 1 tablespoon scooper to portion out candy from crockpot and onto parchment paper. Make sure candy is not touching. Once the entire cookie sheet is scooped (before candy dries) top with 1 M&M and sprinkles.
  6. Allow the candy to cool completely.

  • When forming meatballs if you lightly coat your hands with olive oil the meatballs will form better and crack less. These are great to make ahead meatballs. Freeze when you make them and simply reheat at 350°F for 12-15 minutes.
  • The best way to bake bacon with little cleanup, check it out here

  • Baking Sheetused for everything from cookies to roasting, a good baking pan will last for years.

Bacon JalapeƱo Popper Meatballs

Jalapeno Popper Meatballs are incredibly moist flavorful and even better than the infamous appetizer. If your kids love southwestern flavors they will devour these. This recipe is the perfect make ahead meal. Freeze, defrost and reheat.

Ingredients

  • 1 pound lean ground beef (or turkey)
  • 2 ounces cream cheese
  • 1 large egg
  • 3 slices bacon, cooked and diced
  • 3 jalapeƱos, finely diced
  • 1/2 cup Panko bread crumbs
  • 4 garlic cloves, minced
  • 1/2 cup Mexican cheese blend
  • 1 tablespoon dried oregano
  • 1 teaspoon New Mexico chili powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F. 
  2. In a large mixing bowl, combine all ingredients. Mix well, do not over mix or you will have tough meatballs. Using a 1 tablespoon scoop, portion out meat and place on baking sheet.  After all meatballs have been scooped onto tray, roll into balls.
  3. Bake for 20-22 minutes until lightly browned and cooked through.
  4. Serve and enjoy!

Sweet Blueberry Banana Milk Shake / Smoothie

Sweet Blueberry Banana Milk Shake / Smoothie - Packed with antioxidants and immune system boosters and only 3 grams of fat per serving, this is a very healthy milk shake!

Ingredients

  • 3 large bananas, frozen
  • 2 cups blueberries, frozen
  • 2 cups milk, divided
  • 2 tablespoons good honey

Instructions

  1. In a blender process bananas until they break down to pea size pieces of frozen banana, add 1 cup milk and blend until combined.  You may need to scrape down a few times. 
  2. Add blueberries and remaining 1 cup of milk and process until thick and creamy.
  3. Add honey and spin it a few times to combine.
  4. Serve and enjoy!

It is so funny how things change.  Five years ago (when I was pregnant with my daughter) I told my best friend, I will never change.

I will keep my kid out all night long and still visit you every night until midnight.  I said I would never like Barney.  I said I would never have a problem losing that 'baby weight' and I said that I would never understand why people try to find shortcuts in the kitchen.

Doesn't everyone love to spend all day in the kitchen preparing a dinner that is devoured in 20 minutes?

Well, five years later...  Keeping Munchkin on a schedule is more important than visiting with friends (sorry friends), I kinda dig Barney and Dora.  Go figure.

Although Munchkin does not watch much TV anymore (that is a story for another day).  Baby weight still here.  Yes, my 'baby' is 4, don't judge.  I have a food blog.  LOL

Lastly, I am now constantly on the hunt for quicker and simpler ways to feed my family in a healthier manner.  30 minute meals are big around here.

Even Christmas dinner, which used to be an all-day affair is now prepared in 30 minutes or in a crockpot.  So, never say never.

In my quest for quick and easy dinners, one-pot meals have been spectacular for me.  Only one pot to wash, yahoo!  So last year I saw this one-pot pasta recipe all over the web.  "One-pot" piqued my curiosity as I have a collection of one-pot meals.

This one is amazing!  You literally toss it in a pot, cook it.  Toss a few more things in and serve.  Oh, my heavens.  It is the perfect meal. Tomatoes, basil, ooey-gooey cheese, and sausage come together to create the perfect sauce for the pasta.

It is so flavorful that Chad and I ate two bowls each.  Even Munchkin loved it, and I am sure you will too.

Helpful Tips to make One-Pot Cheesy Pasta and Sausage:

  • Choose your favorite sausage. I prefer Italian sausage, but you can use your favorite.
  • You can use reduced-sodium chicken broth in place of the water for even more flavor.
  • You can substitute 1 pound any dry pasta for the spaghetti, just cook until al dente.
  • To quickly cut the tomatoes: Grab 2 same size lids. You can use plasticware or lids from your fridge. The lid does not have to be round.  You can use any size lid as long as it has a lip around the edge. You can even use small appetizer plates from your kitchen. Place lid with the lip facing up, so you have an edge that will hold your food. Fill lid with cherry tomatoes. Place the 2nd lid on top of the tomatoes with the lip facing down. Firmly press down on the top lid, but do not squish your tomatoes. The two lips will hold the tomatoes in place, so they do not roll off the lid. Slide your serrated knife between the lids and carefully slice through them. Watch your fingers. And voila you have a plate full of sliced tomatoes in a blink!

What you will need to make One-Pot Cheesy Pasta and Sausage:

  • 4 Quart Braising Pan - this is my favorite for my one-pot wonders. The spaghetti fits inside so you can put the lid on.
  • Tongs - I love this set of 3. I use every pair of them. They are so handy and grip amazingly well!

One Pot Cheesy Pasta and Sausage

A creamy, cheesy tomato basil sauce is cooked right into the linguine pasta in this amazing One Pot Pasta recipe, ready in 20 Minutes! Toss it all in a pot and let it cook. It's so easy it that just about cooks itself. Now that's my kind of meal.
prep time: 5 MINScook time: 15 MINStotal time: 20 mins

Ingredients

  • 3 cups halved grape tomatoes, divided
  • 1 large onion, sliced
  • 1 pound smoked Italian sausage links, precooked (sliced into coins)
  • 20-30 basil leaves, divided
  • 4 garlic cloves, sliced
  • 1 pound dry linguine
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon fresh ground pepper
  • 4 1/2 cups water
  • 1 cup shredded Parmesan cheese

Instructions

  1. Reserve (set aside) 1 cup halved tomatoes, 10 basil leaves, and cheese.
  2. Combine remaining ingredients in a large (12") braising pan or Dutch oven over medium-high heat.  Cover and bring to a boil.  Once water is boiling, remove the cover and cook 7-9 minutes until pasta is al dente (with a bite to it).  Toss pasta with tongs occasionally to keep the pasta from sticking.  The liquid will be mostly absorbed when pasta is finished cooking.
  3. Add cheese and toss to combine.  Cheese may clump but will melt into the sauce after a few minutes.  Toss in remaining tomatoes and basil before serving.
DONNA'S NOTES:

Copycat Cheesecake Factory Bang Bang Shrimp Copycat Cheesecake Factory Bang Bang Shrimp


Helpful Tips to make Copycat Cheesecake Factory Bang Bang Shrimp:

  • This recipe calls for smooth peanut butter but if you only have crunchy peanut butter on hand, that will definitely work.  Brands such as Skippy and Jif work best in this recipe as opposed to natural peanut butters because they don’t melt as well. 
  • If you don’t have chicken broth on hand, you can substitute with water.
  • Asian Sweet Chili Sauce can be found in the Asian aisle of your grocery store.  It is a dynamic balance of tangy sweet heat derived from red Thai chilies, sugar, rice vinegar, garlic and ginger.
  • To toast coconut, preheat oven to 400 degrees F.  Spread coconut in an even layer on a baking sheet.  Bake for 3-5 minutes, stirring occasionally, until coconut is golden.  Watch closely towards the end because it will go from golden to burnt very quickly. 
  • You can make this Bang Bang Shrimp perfect for YOU by customizing the consistency, flavor and spice level.  I find Cheesecake Factory Bang Bang Shrimp a little on the sweet side, so I prefer 2 tablespoons Asian Sweet Chili Sauce and 1/2 teaspoon pepper but I recommend tasting first before you change/add any ingredients.
  • If you would like a thinner sauce, thin with additional chicken broth or water.
  • For a spicier sauce, add sriracha. 
  • For a tangier sauce, add lime juice.
  • For a sweeter sauce, add additional brown sugar (keeping in mind the coconut will add sweetness).

What you will need to make Copycat Cheesecake Factory Bang Bang Shrimp:

Copycat Cheesecake Factory Bang Bang Shrimp

Copycat Cheesecake Factory Bang Bang Shrimp is quick and easy to make bursting with curry, peanut, coconut flavors. With this copycat recipe at your fingertips, you can eat bang bang shrimp whenver the cravings strike - in your slippers – at a fraction of the price!

Ingredients

Shrimp
  • 1 pound medium uncooked shrimp, shelled, deveined, tails on
  • 2 tablespoon Asian Sweet Chili Sauce
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon butter
Coconut Curry Sauce
  • 1 tablespoon olive oil
  • 1/2 large onion, chopped
  • 1 large carrot, julienned and cut into 1” length pieces (1 cup)
  • 2 teaspoons freshly grated ginger
  • 3 garlic cloves, minced
  • 2 teaspoons curry powder
  • 1 13.5 oz. can quality coconut milk (I like Chaokoh)
  • 3/4 cup low sodium chicken broth
  • 1 tablespoon cornstarch
  • 3 tablespoons brown sugar
  • 3 tablespoons smooth peanut butter
  • 2 tablespoons less sodium soy sauce
  • 2 tablespoons lime juice
  • 1-2 tablespoons Asian/Thai Sweet Chili Sauce (like Mae Ploy) (2 for spicier)
  • 1 tablespoon fish sauce (may sub soy sauce)
  • 1/2 teaspoon dried basil
  • 1/4-1/2 teaspoon pepper 
  • sriracha to taste (optional)
Add later
  • 1 small zucchini, julienned and cut into 1” length pieces (1 cup)
  • 1/2 cup frozen petite peas
Garnish
  • 1/3 cup toasted sweet coconut flakes
  • 1/4 cup chopped peanuts
  • 2 chopped green onions

Instructions

  1. Add shrimp to a medium bowl along with 1 tablespoon olive oil, 2 tablespoons Asian Sweet Chili Sauce and 1/4 teaspoon salt. Stir to combine and set aside while you prep your veggies. (Shrimp may sit at room temperature for 30 minutes or refrigerate for up to 8 hours.)
  2. Melt one tablespoon butter over medium high heat in large skillet. Discard shrimp marinade and add shrimp to the pan in a single layer (you may need to work in 2 batches).  Cook shrimp just until opaque, about 3 minutes, then flip over and cook another 2-3 minutes until cooked through.  Remove shrimp to a cutting board.  Chop off tails when cool enough to handle/while sauce is simmering.
  3. Using the now empty skillet (don’t wipe out), heat one tablespoon olive oil over medium-high heat.  Add onions and cook three minutes.  Add carrots, ginger, garlic and curry powder and sautĆ© 1 minute. Turn heat to low and add coconut milk.  Mix chicken broth with 1 tablespoon cornstarch and add to skillet along with all remaining Coconut Curry Sauce ingredients.
  4. Bring sauce to a simmer until thickened and the carrots are crisp-tender, about 5 minutes.  Stir in zucchini and frozen peas and cook until peas are heated through, about one minute.  If you would like a thinner sauce, thin with additional chicken broth or water.  For a spicier sauce, add sriracha, for tangier, add lime juice, for sweeter, add additional brown sugar (keeping in mind the coconut will add sweetness).
  5. Serve with rice and garnish with toasted coconut, green onions and peanuts.

During the fall though I am so excited to dive into the glorious fall creation. Made with pumpkin puree, cinnamon, ginger, nutmeg and allspice it is like autumn in a glass. I am not normally a trend chaser, but I have to tell you there is something about this combination that calls to me.

  • This recipe will fill and frost a 2 layer, 9 inch cake or 24 cupcakes (12 with a stacked swirl).
  • It is tempting to use a pre-blended pumpkin pie spice. I would avoid that in this recipe, as the allspice would not work very well with the espresso.

Pumpkin Spice Latte Buttercream

Pumpkin Spice Latte Buttercream Frosting is a simple recipe for a rich and creamy icing with notes of espresso, pumpkin and the perfect spice mix this one is sure to be a favorite... on everything, including a spoon.

Ingredients

  • 1 teaspoon espresso coffee powder
  • 1 tablespoon International Delight French Vanilla Liquid Creamer
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1/4 cup pumpkin puree
  • 3 cups powdered sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground clove
  • 1/4 teaspoon salt

Instructions

  1. In a small bowl, combine espresso powder and creamer. Stir until the espresso powder dissolves. Set aside.
  2. In a standing mixer fitted with a whisk, cream the butter for 3 minutes. Scrape down the sides of the bowl if necessary. Add pumpkin puree. Mix until combined. Turn the mixer to low and add powdered sugar one cup at a time. Mix until well blended and then increase speed to medium and beat for another 3 minutes.
  3. Add cinnamon, pumpkin pie spice, salt and espresso mixture and continue to beat on medium speed for 1 minute more, adding more creamer as needed until desired consistency is reached.
  4. Enjoy on your favorite dessert, or with a spoon! We especially love it on our Pumpkin Spice Cake and Easy Chocolate Cake.
