Combine chicken, fresh jalapeños, pasta, cheese and a few other simple ingredients in one pot to make dinner easy. Top the pasta with bacon and garnish with flat leaf parsley before serving.

One Pot Jalapeño Popper Chicken Pasta

One Pot Jalapeño Popper Chicken Pasta cooks in one pot to make clean up easy! The meal is packed with flavor and is perfect for the entire family.

Ingredients

  • 1 pound chicken breast, cut into 1 inch pieces
  • 2 teaspoons chili powder
  • 2 tablespoons olive oil
  • 1/2 cup diced yellow onion
  • 1 tablespoon minced garlic
  • 2 1/2 cups uncooked penne pasta
  • 2 cups chicken broth
  • 1/3 cup water
  • 2-3 jalapeño peppers, minced
  • 4 ounces cream cheese
  • 1/2 cup shredded Monterey Jack or Colby Jack cheese
  • 4 slices cooked bacon
  • Sliced jalapeño, for garnish
  • Freshly chopped Italian flat leaf parsley, for garnish

Instructions

  1. Season chicken with chili powder; set aside.
  2. In a 12” pan or skillet, heat olive oil over medium heat. Add onions and stir until soft, about 3 minutes. Add chicken to pan and cook until brown on both sides. Stir in garlic and cook one additional minute.
  3. Add uncooked pasta, chicken broth, water and sliced peppers. Stir then bring to a boil. Reduce heat to low, cover and simmer for 22 minutes.
  4. Uncover and cook until almost all of the liquid is absorbed, about 5 additional minutes. Remove from heat, stir in cream cheese and shredded cheese. Stir until cheese is melted.
  5. Garnish with bacon, sliced jalapeños and fresh parsley. Enjoy!

I love keeping prepared salads in my fridge during the summer months. They keep so well and make a perfect, cool and filling lunch.

This Taco Tortellini Salad brings two worlds of flavor into one big bowl and it keeps in the fridge for days, making it a perfect grab-and-go lunch.

Helpful Tips to make Taco Pasta Salad:

  • Make sure to cook the tortellini just until tender. Overcooked tortellini will be more likely to turn soggy and fall apart in your salad.
  • Add the Doritos to the salad just before serving so they stay crunchy. If you’re taking this salad to a potluck, crush the chips in a big layer on the top so every serving gets a good helping. If keeping in your fridge for individual servings, take a handful of chips and crush them over the top of your plate before eating.
  • Drain your cooked ground beef well. Make sure to remove any excess fat from your cooked ground beef before seasoning. Since this is a cold salad, ground beef that has not been drained can taste gritty and undesirable. 

What you will need to make Taco Pasta Salad:

  • Large slotted spoon- Use this to remove the cooked tortellini from the cooking water to avoid broken pasta and uneven draining. 
  • Wooden SpoonYou’ll want a nice, sturdy spoon to help you stir this hearty salad together
  • Mixing Bowl- This tortellini salad is perfect for a crowd and will need a large bowl to mix and store it in.

Taco Pasta Salad

Taco Pasta Salad

Taco Pasta Salad takes south-of-the-border ingredients and wraps them up with tender cheese tortellini for a fusion of flavors, sure to be your next potluck favorite!

Ingredients

  • 1/2 pound ground beef
  • 1/2 packed taco seasoning
  • 16 ounces frozen cheese tortellini
  • 1/2 cup sliced black olives
  • 1 orange bell pepper, chopped
  • 1 cup cherry tomatoes, quartered
  • 3 green onions, chopped
  • 1 bottle catalina dressing
  • 1/2 bag Nacho Cheese Doritos, Crushed 

Instructions

  1. Cook Cheese tortellini according to packaged directions. Remove from cooking water with a slotted spoon and transfer to a large mixing bowl.
  2. Meanwhile, in a medium skillet over medium high heat cook ground beef until cooked through. Add taco seasoning (about 1 1/2 tablespoons). Stir to combine. Add 1/4 cup water and cover. Allow to cook for 5-7 minutes. Remove cover and cook until the liquid cooks off. Set aside.
  3. Combine tortellini with cooked and seasoned ground beef, olives, bell pepper, cherry tomatoes, and green onions.
  4. Dress salad with Catalina Dressing, adding just enough to coat all of the ingredients. Taste and add additional dressing as needed.
  5. Top salad with crushed Doritos just before serving.

Helpful Tips to make Taco Cheese Stuffed Meatballs:

  • Do not overmix the meat or you can end up with tough meatballs.
  • Use a cookie dough or ice cream scoop to get uniform meatballs.
  • Be sure to fully seal the cheese within the meatballs or all of the cheese will ooze out while broiling.
  • To make extra meatballs to keep in the freezer, double or triple this recipe. Transfer extra meatballs to a rimmed baking sheet and freeze completely. Then transfer frozen meatballs to a ziploc bag or container.
  • This recipe makes a mild flavored taco meatball. If you prefer extra taco flavor, double the amount of taco seasoning.

What you will need to make Taco Cheese Stuffed Meatballs:

  • Large mixing bowlYou will need a bowl large enough for the ingredients and your hands.
  • Sharp knifeThis recipe requires the cheese to be cut into cubes. A good, sharp knife is always handy to have in the kitchen.
  • Rimmed baking sheetused for everything from cookies to roasting, a good baking pan will last for years.

Taco Cheese Stuffed Meatballs

Taco Cheese Stuffed Meatballs are a fun twist for Taco Tuesdays! This easy meatball recipe is taken to the next level with taco seasoning and colby jack cheese.

Ingredients

  • 2 pounds lean ground beef
  • 1/2 cup bread crumbs
  • 2 large eggs
  • 1/4 cup whole milk
  • 1 package taco seasoning (or 2 Tablespoons Homemade Seasoning)
  • 6 ounces Colby Jack cheese - cut into cubes

Instructions

  1. Mix beef, bread crumbs, eggs, milk and taco seasoning until just combined. Do not over mix.
  2. Scoop out 4 tablespoons of beef mixture, flatten then place cheese cube into the center. Bring the edges together to form a ball. Ensure that the meatball is completely sealed.
  3. Transfer meatballs to a greased rimmed baking sheet.
  4. Freeze meatballs on baking sheet for 10-15 minutes to firm up.
  5. Raise oven rack to top and preheat broiler on high.
  6. Broil meatballs on high for 10-12 minutes or until cooked through. Some cheese may escape while broiling.

Best Ever Shrimp Tacos

Take Taco Tuesday to the next level with these quick and easy Shrimp Tacos with Avocado Cilantro Sauce.

Put these easy Shrimp Tacos on the menu for Taco Tuesday because this is one meal you don't want to pass up.

Although, tacos aren't just for Tuesday. I could seriously eat tacos everyday. I mean, the variations are endless so why not?

Hello again! Melanie here again from Garnish & Glaze to bring you an awesome and easy dish the whole family will love.


These tacos are seriously the easiest to make though. The shrimp cooks so fast and the killer Avocado Cilantro Sauce is a dump and puree kind of thing so... you have no excuse not to make these babies!

I love that this meal is full of good-for-you ingredients. The sauce is made up of healthy fats and is even high in protein thanks to the plain Greek yogurt.

The cabbage is delicious, ads great texture, a gorgeous pop of color, but it's definitely nice to get some more fiber in one's diet.

How to Make Shrimp Tacos:

Since the shrimp cooks so fast, you'll want to get everything else prepped and ready so that when the shrimp is done cooking you can dig right in while it's hot.

First you'll make the Avocado Cilantro Sauce. This is easy as throwing everything into a blender and pressing puree. I think we can all handle that.

Next you'll need to get all your veggies and cilantro chopped and warm up your tortillas. Heat them in the microwave or give them more of an authentic look and taste by frying them in a little bit of oil.


The last step is to season the shrimp and cook it. Do you know what I love about shrimp? It cooks so fast!

Two minutes per side and it's dinner time! Squeeze fresh lime juice over the shrimp and then assemble the tacos.

Fill your tacos with cabbage, drizzle with avocado sauce, top with warm shrimp, more avocado sauce, sprinkle it with cilantro, and serve. These babies are so good they'll disappear in minutes!

What kind of shrimp should I use?

I like to save myself some time by buying shrimp that is already deveined, peeled, and has the tail removed.

No one wants to be picking the tails off the shrimp in their tacos so just buy the ones without. Frozen shrimp works great and is nice to always have on hand.

It thaws super fast under cold running water so even if you decide to make this last minute, it won't take too long. As for the size, I prefer either medium or large.

  • No one wants to be picking the tails off the shrimp in their tacos so just buy the ones without. Frozen shrimp works great and is nice to always have on hand.

  • Chef Knife- Every kitchen needs a sharp, good quality knife for chopping. Grab your cutting board and let this knife do the work.
  • Nutribullet- This little blender is the perfect size for making sauces, dressings, or smoothies.
  • Cast Iron Fry Pan I love using cast iron to cook my proteins. It creates the perfect and most beautiful crust.

Shrimp Tacos

Take Taco Tuesday to the next level with these quick and easy Shrimp Tacos with Avocado Cilantro Sauce.

Ingredients

  • 1 pound deveined, tail removed raw shrimp medium or large
  • 2 teaspoons chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • 1 juice of lime
  • 1/4 teaspoon salt
For the Sauce
  • 1 avocado
  • 3/4 cup milk
  • 1/2 cup plain Greek Yogurt
  • 1/2 jalapeno (remove seeds for mild heat)
  • 1/4 cup cilantro packed
  • 1 teaspoon vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1 juice of lime
For Serving
  • 1 1/2 cups green cabbage sliced
  • 1 1/2 cups purple cabbage sliced
  • 2 tablespoons cilantro chopped
  • 8 corn tortillas

Instructions

For the Avocado Sauce
  1. Place all sauce ingredients in a blender or food processor and puree until smooth.
For the Shrimp
  1. Heat 1 tablespoon oil in a large skillet over medium-high heat.
  2. Season shrimp with chili powder, cumin, and cayenne pepper and toss until evenly coated. Add to the pan (you'll need to work in two batches) and cook 2-3 minutes per side until pink and cooked through. Remove onto a plate and cook remaining shrimp. Sprinkle with salt and squeeze lime juice over the top.
For Assembling
  1. Place a little of each cabbage on tortilla, drizzle with some sauce, top with 4-5 shrimp, drizzle with more sauce, sprinkle with cilantro. Repeat with remaining ingredients and serve.

Fully Loaded Cheesy Taco Fries

Ingredients

  • 1 (15 ounce) bag Alexia Foods Organic Yukon Select Fries
  • 8 ounces lean ground beef
  • 1/2 tablespoon New Mexico chile powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh ground black pepper
  • 4 ounces Colby Jack cheese, shredded
  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • sour cream

Instructions

  1. Preheat oven 425°F. Line baking sheet with aluminum foil and pour fries in an even layer. Once oven it preheated place baking sheet in oven and bake 26-28 minutes until desired color and crispness are reached, stirring 1/2 way between bake time.
  2. In a large (10 inch) skillet over medium-high heat cook ground beef, until cooked through.  Break beef up with a spatula as it cooks. Add all seasonings and 1/2 cup water. Stir and cover with lid.  Cook 10 minutes, remove cover and continue to cook until water evaporates. Reduce heat to low until ready to serve.
  3. While beef is cooking, prep toppings:  Shred lettuce, dice tomatoes and shred cheese. Set aside.
  4. Once fries are baked, place on a serving tray and sprinkle seasoned beef over top. Sprinkle cheese over beef and top with lettuce, tomatoes and sour cream.
  5. Serve and enjoy!
