Helpful Tips to make Copycat Outback Alice Springs Chicken:

  • Use a plastic Zip lock bag to marinade your chicken in. Doing this allows the chicken to be fully immersed in the honey mustard sauce and makes for easier cleanup, too.
  • Add a pinch of salt to the mushrooms while they are cooking. The salt not only seasons the mushrooms, but helps them release their moisture, which means a faster cooking time.
  • Use parchment paper to line your baking sheet. The sweet honey mustard sauce will run off the chicken and burn onto the baking sheet as it cooks. Lining it with parchment paper creates a non-stick surface for the chicken and makes cleanup a breeze! 

What you will need to make Copycat Outback Alice Springs Chicken:

  • Baking Sheets - Good, sturdy baking sheets will last for years and bake much more evenly than cheaply made ones.
  • Heavy-bottomed Skillet – Whether it’s stainless steel, cast iron, or non-stick, a good, heavy bottomed skillet will, just like the baking sheets, cook more evenly and allow you to get that nice, pretty sear on the chicken that adds a lot of flavor.
  • Cheese Grater – Hand grated cheese melts better than store-bought shredded cheese because it doesn’t have the added starches that prevent caking. I much prefer to grate my own cheese whenever possible and a good cheese grater makes the job a lot easier!

Outback Copycat Alice Springs Chicken

Outback Copycat Alice Springs Chicken is bursting with flavor and so easy to prepare! It is no wonder its one of the most popular menu items at Outback Steakhouse! Tender chicken, honey mustard sauce, sautéed mushrooms, bacon and Swiss cheese turn ordinary, plain chicken into a meal you’ll want again and again!
prep time: 1 hour 10 Min cook time: 35 minstotal time: 1 hours and 45 mins

Ingredients

  • 1/2 cup honey
  • 1/2 cup Dijon mustard
  • 3 tablespoons mayonnaise
  • 1 tablespoon fresh lemon juice
  • salt and pepper
  • 4 boneless skinless chicken breast halves
  • 2 tablespoons olive oil
  • 6 slices bacon, cooked until crispy and cut in half
  • 2 cups button mushrooms
  • 1 tablespoon butter
  • 1 cup Monterrey Jack Cheese, grated
  • Fresh Parsley, chopped

Instructions

  1. Whisk together honey, Dijon mustard, mayonnaise, and lemon juice in a small bowl until smooth. Reserve ½ cup of sauce and set aside. Pour remaining honey mustard sauce into a gallon-sized Zip lock bag and add chicken. Marinade for 1 hour, up to 24 hours. 
  2. Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  3. In a heavy-bottomed skillet, heat 2 tablespoons of olive oil over medium-high heat until it shimmers. 
  4. Remove chicken from the marinade with tongs and place into hot skillet. Season each side with salt and pepper and cook until golden brown but not cooked through, working in batches as not to over-crowd the pan.
  5. Place browned chicken on prepared baking sheet. 
  6. In the same skillet, add butter and melt over medium heat. Stir in mushrooms and a pinch of salt, and cook until tender and starting to brown. Remove from heat. 
  7. Divide and spoon mushrooms over the chicken breasts, followed by 2 slices of bacon, and the Monterrey jack cheese. 
  8. Bake for 10-15 minutes or until the thickest part of the chicken reaches 165 degrees.
  9. Top with fresh parsley and serve with reserved honey mustard sauce for dipping.

Starbuck's Copycat Cranberry Bliss Bars are supercalifragilisticly delish! A tender blondie base packed with cranberries, white chocolate and a hint of spice is topped with a fabulous orange cream cheese frosting and topped with tart dried cranberries and drizzled with white chocolate.

If you have ever been to Starbucks in the fall or winter I am sure you have at seen these spectacular treats, if not devoured one or twenty.

Cranberry Bliss Bars are perfectly named they are pure dessert bliss packed into a little bar.

Munchkin and I had so much fun making these bars.  She was officially promoted to chief egg cracker when she was 3-years-old.

Over that summer we ate a lot of scrambled eggs and omelets so I would plop a dozen eggs on the counter and let her practice.

Well, I have to tell you after a few dozen, she cracks eggs better than any kid I have ever met and even better than some adults.  I still have to teach her a one-handed technique and of course, egg juggling is next.  {{{not a chance}}}

Munchkin was not about waiting for these beauties to cool off or waiting at all.  Watching her bite into our creation after helping me develop this fabulous copycat recipe was amazing.

  • The best way to get parchment paper to stick to the pan is to spray the pan with non stick spray and then place the parchment on top.

Better than Starbucks: Cranberry Bliss Bars

Starbuck's Copycat Cranberry Bliss Bars are supercalifragilisticly delish! The only problem that I could see is we did it even better. A tender blondie base packed with cranberries, white chocolate and a hint of spice is topped with a fabulous orange cream cheese frosting and topped with tart dried cranberries and drizzled with white chocolate.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cups packed light brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon kosher salt
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • 1 (5 ounce) bag sweetened dried cranberries
  • 1 (12 ounce) bag white chocolate chips, divided
  • 4 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 2 tablespoons orange juice

Instructions

  1. Preheat oven to 350°F.  Line an 8"x8" baking pan with parchment paper and spray with cooking spray.
  2. Place butter in a large microwave safe bowl, microwave to melt butter.  Add sugar to melted butter, beat with an electric mixer.  Add eggs and vanilla.  Beat until well combined.
  3. Add salt, flour, baking powder, cinnamon and ginger.  Mix until just combined.  Do not over mix or the bars will be tough.  Fold in 3/4 cup cranberries and 3/4 cup white chocolate chips.  Pour batter into prepared pan.
  4. Bake for 20-22 minutes until the center is set.
  5. Meanwhile melt remaining white chocolate in a small microwave safe bowl.  Set aside.  Combine cream cheese, powdered sugar and orange juice in a medium size bowl.  Beat until combined.  Pour in half of white chocolate, reserve the remaining chocolate.  Beat to combine.  Set aside.
  6. Remove bars from oven and place on a cooling rack.
  7. Frost bars with cream cheese frosting.  Sprinkle with remaining cranberries.  Drizzle with reserved melted white chocolate.
  8. Serve and enjoy!

How to Make Zuppa Toscana

This classic soup can be made on the stovetop, in a crockpot and now we have the easiest version yet, Zuppa Toscana in the Instant Pot.

With this soup, the Zuppa Toscana is built on the sausage. You start out by cooking the sausage, and then build the soup on top of it so it is an incredibly important component. It really makes a difference to start with great sausage!

It comes together in just 20 minutes and starts by sauteing the sausage right in the Instant Pot. Add your seasonings, potatoes and chicken stock. Cook for 8 minutes. Add the cream and kale. Cook for 2 minutes. Serve and enjoy!

Can I freeze Zuppa Toscana Soup

You can freeze this Zuppa Toscana. Make sure you let the soup come to room temperature and pack it up into portion size containers or one large container. Make sure you remember to leave about 1" at the top for expansion.

It is important to note that chunks of potatoes tend to break apart and have a grainy texture when reheated. If you are sensitive to texture you may want to skip freezing this soup.

Can I substitute spinach for the kale?

You can substitute traditional lacinato kale or spinach in this recipe. I love the tenderness of baby kale, so it is my favorite.

Can you make Zuppa Toscana in the Slow Cooker?

You can absolutely make this Zuppa Toscana in the Slow Cooker. Simply cook the sausage on the stovetop. Add the seasonings and stir. Then add the chicken stock to the pot and scrape the bits on the bottom of the pan.

Transfer sausage and broth to your slow cooker and add potatoes. Cover and cook on high for 3-4 hours or low for 6-8 hours. Remove 2 cups of potatoes and mash them. Return mashed potatoes to the slow cooker, add the cream and the baby kale. Stir until kale is wilted.

  • You can substitute traditional lacinato kale or spinach in this recipe. I love the tenderness of baby kale, so it is my favorite.
  • We love to serve with shredded Parmesan cheese.

  • Wooden Spatula- I find the best tool for breaking up ground meat is a wooden spatula. Whether I am cooking in a slow cooker, stovetop or in the Instant pot it is my top choice.

Instant Pot Zuppa Toscana (Sausage & Potato Soup)

Instant Pot Zuppa Toscana is the ultimate copycat recipe of the classic Olive Garden soup made quick and easy in a pressure cooker. Sausage, potatoes and fresh kale in a perfectly seasoned rich and creamy broth make this Tuscan Italian-inspired soup a hit from the first bite.

Ingredients:

  • 1 tablespoon extra virgin olive oil
  • 2 (12 ounce) packages No-Sugar All Natural Pork Sausage Roll
  • 1 tablespoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon kosher salt
  • 6 cups chicken stock
  • 6-8 medium russet potatoes, cut into 1/2" cubes
  • 1 cup heavy cream
  • 5 ounces baby kale

Instructions:

  1. Turn the 6-quart Instant Pot to "Saute". Once you can feel the heat when you hold your hand above it, add olive oil and crumble in the sausage.
  2. Cook, stirring occasionally and breaking up the sausage as desired (I like bigger chunks), until the sausage is cooked through, about 3-5 minutes. Drain excess the sausage drippings from the pan (if necessary).
  3. Add the Italian seasoning, onion powder, garlic powder, red pepper flakes and salt. Stir to combine.
  4. Add the potatoes and pour in the chicken stock. Stir to combine and scrape the bits from the bottom of the pot.
  5. Close the lid on the Instant Pot. Select "Manual" setting on the Instant Pot. Turn the pressure to high. Set timer for 8 minutes. Make sure the vent is closed.
  6. When cook time is complete, quick-release pressure according to manufacturer's directions.
  7. Use a slotted spoon to remove 2 cups of potatoes from the pot and place them in a bowl. Mash the potatoes and pour them back into the pot; this will help thicken the soup.
  8. Add the cream and kale to the soup, and stir to combine. Continue cooking the soup until the kale is wilted and tender, about 3 more minutes.
  9. Serve and enjoy!

Copycat Homemade Magic Shell - Only 2 Ingredients

Do you remember Magic Shell from your childhood? The chocolate syrup that formed a crisp magic shell when you poured it over something cold? I love that syrup. I really love making treats homemade and decided to create my own Magic Shell recipe so I could choose my ingredients.

I was working on these outrageous banana split ice cream pops  and needed the perfect hard chocolate coating, so I decided homemade magic shell was perfect.  

After I made this super simple magic shell recipe we dipped everything in it.  I ended up making a second batch because we used the first one so quickly.

I tell you though this was the best magic shell I have ever eaten.  I left it on the counter and used it as desired.  It is so easy to make and tastes so good.  You are going to love it too!

Homemade Magic Shell

Do you remember Magic Shell from your childhood? The chocolate syrup that formed a crisp magic shell when you poured it over something cold? I love that syrup. I really love making treats homemade and decided to create my own Magic Shell recipe so I could choose my ingredients.

Ingredients

  • 2 cups Milk Chocolate Chips (or your favorite flavor)
  • 1/4 cup coconut oil

Instructions

  1. Combine ingredients in a wide microwave safe bowl, heat at 30 second intervals until chips are almost completely melted.  Stir to combine and allow to cool.
  2. Transfer to a tall mason jar.  Dip into jar or pour topping over frozen treats.
  3. Enjoy!

Once upon a time, I lived next door to a Wendy’s restaurant.  I bought dinner there just about every night.  Why?  Well, I was a 20-something. It was close, it was cheap and I had a love affair going on with the honey mustard dipping sauce.  

Oh how I loved that sauce. To date, no other restaurant's honey mustard recipe compares to Wendy's sauces.

You would be surprised at all the ways you can use dipping sauces. Sandwiches and salads are so much better with honey mustard sauce.

I use it when I make our version of Outback's Alice Springs Chicken. It's so delicious!

Last week, I made baked chicken nuggets for Munchkin.  She asked for some "dippin’ sauce” and quite frankly, the thought of ketchup and chicken nuggets kinda makes me gag.

I found a honey mustard recipe that looked promising. I was skeptical, but oh my, it is better than I hoped for. It really tastes like the Wendy's sauce!

Their recipe for honey mustard is sweet, with a tangy mustard flavor, and it's perfectly delicious. We devoured the whole first batch and made a double batch after dinner. 

Recipe Notes: How to Make Honey Mustard:
  • You may use the sauce immediately, but the flavors meld overnight and become a fantastic creation!
  • Use fresh lemon juice for the best results.
  • Organic "raw" honey will give you much better flavor 
  • Dijon mustard is what I use. I don't recommended traditional yellow mustard. If you want to use a grainy mustard, that could be delicious!

    Copycat Honey Mustard Dipping Sauce (Wendy's Sauces)

    This Honey Mustard recipe is a copycat for one of the Wendy's sauces. Sweet, creamy and delicious. Make this dipping sauce easily at home!

    Ingredients

    • 1/2 cup mayonnaise
    • 3 tablespoons raw honey
    • 2 tablespoons yellow mustard
    • 1 tablespoon Dijon mustard
    • 1/2 tablespoon fresh lemon juice

    Instructions

    1. Combine ingredients in a small bowl.  Whisk until well combined.  
    2. Allow to sit overnight in the refrigerator. You may use immediately, but the flavors meld overnight and become a fantastic creation!
    3. Serve and enjoy.

    Helpful Tips to make Copycat Cheesecake Factory Bang Bang Shrimp:

    • This recipe calls for smooth peanut butter but if you only have crunchy peanut butter on hand, that will definitely work.  Brands such as Skippy and Jif work best in this recipe as opposed to natural peanut butters because they don’t melt as well. 
    • If you don’t have chicken broth on hand, you can substitute with water.
    • Asian Sweet Chili Sauce can be found in the Asian aisle of your grocery store.  It is a dynamic balance of tangy sweet heat derived from red Thai chilies, sugar, rice vinegar, garlic and ginger.
    • To toast coconut, preheat oven to 400 degrees F.  Spread coconut in an even layer on a baking sheet.  Bake for 3-5 minutes, stirring occasionally, until coconut is golden.  Watch closely towards the end because it will go from golden to burnt very quickly. 
    • You can make this Bang Bang Shrimp perfect for YOU by customizing the consistency, flavor and spice level.  I find Cheesecake Factory Bang Bang Shrimp a little on the sweet side, so I prefer 2 tablespoons Asian Sweet Chili Sauce and 1/2 teaspoon pepper but I recommend tasting first before you change/add any ingredients.
    • If you would like a thinner sauce, thin with additional chicken broth or water.
    • For a spicier sauce, add sriracha. 
    • For a tangier sauce, add lime juice.
    • For a sweeter sauce, add additional brown sugar (keeping in mind the coconut will add sweetness).

    What you will need to make Copycat Cheesecake Factory Bang Bang Shrimp:

    • Wide Stainless Steel Pan -  Using a wide stainless steel pan allows you to cook your shrimp in one batch. It also heats evenly and quickly which allows your food to cook faster and develop that pretty sear on seafood, chicken and meats that adds a lot of flavor. Stainless steel pans also clean up beautifully with a little baking soda so they still look brand new.
    • Garlic Press - One of my moist used kitchen tools! I received mine as a gift years ago and I can't imagine why I never had one. It minces garlic with one squeeze, with the peel still on!
    • Microplane/Zester - This is great for zesting ginger, garlic, citrus and even potatoes.   You will use it practically every day!

    Copycat Cheesecake Factory Bang Bang Shrimp

    Copycat Cheesecake Factory Bang Bang Shrimp is quick and easy to make bursting with curry, peanut, coconut flavors. With this copycat recipe at your fingertips, you can eat bang bang shrimp whenver the cravings strike - in your slippers – at a fraction of the price!

    Ingredients

    Shrimp
    • 1 pound medium uncooked shrimp, shelled, deveined, tails on
    • 2 tablespoon Asian Sweet Chili Sauce
    • 1/4 teaspoon salt
    • 1 tablespoon olive oil
    • 1 tablespoon butter
    Coconut Curry Sauce
    • 1 tablespoon olive oil
    • 1/2 large onion, chopped
    • 1 large carrot, julienned and cut into 1” length pieces (1 cup)
    • 2 teaspoons freshly grated ginger
    • 3 garlic cloves, minced
    • 2 teaspoons curry powder
    • 1 13.5 oz. can quality coconut milk (I like Chaokoh)
    • 3/4 cup low sodium chicken broth
    • 1 tablespoon cornstarch
    • 3 tablespoons brown sugar
    • 3 tablespoons smooth peanut butter
    • 2 tablespoons less sodium soy sauce
    • 2 tablespoons lime juice
    • 1-2 tablespoons Asian/Thai Sweet Chili Sauce (like Mae Ploy) (2 for spicier)
    • 1 tablespoon fish sauce (may sub soy sauce)
    • 1/2 teaspoon dried basil
    • 1/4-1/2 teaspoon pepper 
    • sriracha to taste (optional)
    Add later
    • 1 small zucchini, julienned and cut into 1” length pieces (1 cup)
    • 1/2 cup frozen petite peas
    Garnish
    • 1/3 cup toasted sweet coconut flakes
    • 1/4 cup chopped peanuts
    • 2 chopped green onions

    Instructions

    1. Add shrimp to a medium bowl along with 1 tablespoon olive oil, 2 tablespoons Asian Sweet Chili Sauce and 1/4 teaspoon salt. Stir to combine and set aside while you prep your veggies. (Shrimp may sit at room temperature for 30 minutes or refrigerate for up to 8 hours.)
    2. Melt one tablespoon butter over medium high heat in large skillet. Discard shrimp marinade and add shrimp to the pan in a single layer (you may need to work in 2 batches).  Cook shrimp just until opaque, about 3 minutes, then flip over and cook another 2-3 minutes until cooked through.  Remove shrimp to a cutting board.  Chop off tails when cool enough to handle/while sauce is simmering.
    3. Using the now empty skillet (don’t wipe out), heat one tablespoon olive oil over medium-high heat.  Add onions and cook three minutes.  Add carrots, ginger, garlic and curry powder and sauté 1 minute. Turn heat to low and add coconut milk.  Mix chicken broth with 1 tablespoon cornstarch and add to skillet along with all remaining Coconut Curry Sauce ingredients.
    4. Bring sauce to a simmer until thickened and the carrots are crisp-tender, about 5 minutes.  Stir in zucchini and frozen peas and cook until peas are heated through, about one minute.  If you would like a thinner sauce, thin with additional chicken broth or water.  For a spicier sauce, add sriracha, for tangier, add lime juice, for sweeter, add additional brown sugar (keeping in mind the coconut will add sweetness).
    5. Serve with rice and garnish with toasted coconut, green onions and peanuts.
