Herb Roasted Pork Tenderloin is one of my go-to weeknight dinners. It’s super easy to make, it only requires a few simple ingredients, and the flavor is amazing.


Fresh rosemary, thyme, and garlic coat the pork tenderloin and the flavors infuse into the pork as it roasts. It smells amazing as it cooks, and tastes even better!

What is the best seasoning for pork tenderloin?

You can marinate your tenderloin but, for this easy recipe, I simply salt and pepper the tenderloin before browning it in a hot skillet.

Then I rub it with a homemade herb butter made with salted butter, rosemary, thyme, and garlic.

The herb butter soaks into the meat as it roasts and what you end up with is a perfectly tender, juicy, roasted pork tenderloin that is bursting with the flavor of fresh herbs.

How to cook my pork tenderloin


After browning it in a hot skillet, into a roasting pan it goes, along with some more fresh herbs, and it bakes for about 20 minutes, or until it reaches an internal temperature of 145°F.

Helpful Tips to make Herb Roasted Pork Tenderloin:

  • Make sure your skillet is fully heated before adding your pork tenderloin. You want to get a good sear on each side to help seal in the juices. 
  • Use a meat thermometer. The key to a moist roasted pork tenderloin is making sure it isn’t overcooked. When the internal temperature reaches 145 degrees F it is done!
  • It is ok if there is a little pink coloring to your pork as long as your meat thermometer indicates that it reached an internal temperature of 145 degrees F.

  • A large skillet – This skillet is the perfect size for browning my pork tenderloin. 
  • Roasting PanA good quality roasting pan can be used to make so many amazing meals.
  • Meat ThermometerThis is a game-changer! No more over-cooking your pork. Use this meat thermometer to get perfectly cooked, juicy, pork every time.

Roasted Pork Tenderloin

This easy Herb Roasted Pork Tenderloin recipe is the ultimate weeknight dinner. Perfectly cooked, juicy, roasted pork tenderloin that is bursting with flavor!

Ingredients

  • 1 – 1 1/2 pounds Open Nature® Pork Tenderloin
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons olive oil, divided
  • 4 tablespoons salted butter 
  • 1 tablespoon fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 1 clove garlic, finely minced 
  • 3-4 sprigs fresh rosemary
  • 1 bundle of fresh thyme

Instructions

  1. Preheat oven to 400°F. 
  2. Rinse the pork in cool water and pat dry with paper towels, this helps the meat sear better without creating steam.
  3. Sprinkle the pork tenderloin with salt and pepper on all sides. 
  4. Heat a large skillet (I used cast iron) over medium high heat and add 2 tablespoons of olive oil to the heated skillet.
  5. Place the tenderloin in the skillet and brown on each side, approximately 2-3 minutes per side. Set aside and let cool for 5 minutes.
  6. In a small bowl combine butter, rosemary, thyme, and garlic. Mash together with a fork or spoon to create the herb butter. 
  7. When the pork has cooled rub with herb butter. Use a butter knife if necessary to avoid burning your hands. The butter will begin to melt, that's ok!
  8. Add the remaining 2 tablespoons of olive oil and place the pork tenderloin in the pan. 
  9. Place fresh rosemary and thyme on either side of the pork tenderloin.
  10. Place the pork tenderloin in the oven and bake for 20-25 minutes or until internal temperature reaches 145 degrees F. 
  11. Let rest for 5 minutes, so the juices can evenly distribute, before slicing.

How to Make Pizza Pinwheels

Pizza is such a popular game day food, but these pinwheels are sure to kick up the fun factor! The dough is slightly crisp on the outside and tender inside. It’s like unrolling a little piece of heaven wrapped in marinara, your favorite meat toppings and ooey gooey cheese.

Simply roll out your favorite dough. Top with your favorite marinara, I use this homemade sauce but store bought is perfect too. Then scatter your chicken sausage, bacon, beef and pepperoni over the sauce.

You can make rows of the toppings, but I love to get all of them in each bite. Especially those scrumptious chicken link coins! {{swoon}}.  Sprinkle with cheese. Lots of cheese. Then you roll it up and slice it into 12 pinwheels. Easy peazy!!!

How do I Make Pizza Dough

I use a really simple pizza dough with only 5 minutes of rise time. The trick is to make it a little sticky so it can rise in the oven.

But, honestly, if you are short on time, you can even substitute store-bought pizza dough.

The best part is that you can make them ahead and warm them to serve when you are ready, which makes them party-perfect! Easy party + fun food = happy mama!

Swoon! Everyone went nuts over these. Munchkin loves them anytime she can get them; I mean, hello, they are pizza!


These pinwheels are the perfect grab and go meal too. We made these while my dad was here visiting from Florida and they were just what we needed as we dashed out the door for fun family time.

Helpful Tips to make Meat Lovers Pizza Pinwheels:

  • These freeze wonderfully. Simply allow them to cool to room temperature after baking. Store in a gallon-size zip-top bag in the freezer. When you are ready to eat, just thaw them and bake at 350°F for 10 minutes, or until warmed through.
  • Preshredded cheeses generally have anti-caking ingredients that will absorb moisture from your food. Shredding your own cheese makes for more predictable cooking results.
  • Adding sugar to tomato-based recipes helps balance the tartness and coax the sweet side out of the tomatoes.

Meat Lovers Pizza Pinwheels

Ingredients

For the Dough
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 tablespoon granulated sugar
  • 1 1/2 cups warm water (110°–115°F)
  • 2 tablespoons extra virgin olive oil
  • 3–3 1/2 cups all-purpose flour, divided
  • 1 tablespoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
For the Filling
  • 4 tablespoons unsalted butter, melted
  • 1 cup your favorite pizza sauce
  • 2 cups freshly shredded mozzarella cheese
  • 1/2 package thawed Jones Dairy Farm Antibiotic free chicken sausage, cut into coins
  • 1/2 cup mini pepperoni
  • 1/2 cup cooked ground beef
  • 5 slices cooked bacon, chopped
  • 1/2 teaspoons dried parsley
  • 1/4 teaspoon kosher salt

Instructions

  1. Preheat the oven to 350°F. Prepare a baking sheet with a silicone baking mat or parchment paper. Set aside.
  2. In the bowl of a stand mixer fitted with a dough hook, combine the yeast, sugar and warm water. Swirl with a spoon to dissolve the yeast. Let the mixture rest until the yeast becomes foamy and aromatic, about 3 minutes.
  3. Pour the olive oil, 3 cups of the flour, Italian seasoning, salt and garlic into the bowl.
  4. Mix on medium speed until the dough comes together in one ball, and then knead for 3 minutes on medium to medium-high speed. The dough should be just a little bit sticky. When you touch your finger to the dough and pull away, you should have just a little dough on your fingertip.
  5. Add the remaining flour 1 tablespoon at a time as needed. The sticky dough is important to help the pizza pinwheels get a little lift as it cooks.
  6. Lightly flour your counter top. Form the dough into a ball and cover with a dish towel. Let the dough rest for 5 minutes.
  7. On a lightly floured counter top, roll the dough into a 12 x 18-inch rectangle.
  8. Spread about 1/2 to 1 cup of marinara over the dough, leaving a 1-inch border on the top edge (this is where you will pinch the dough together, if there is sauce here it will make it hard for the dough to stick together).
  9. Sprinkle sausage, pepperoni, beef and bacon over the top of the sauce. Then sprinkle the cheese over the meat.
  10. Starting at the long edge nearest you, fold the edge of the dough on top of itself and begin tightly rolling the dough away from you, pinching the pepperoni slices into the roll if they try to escape as you go. Use the last 1 inch of clean dough to seal the roll, pressing gently to keep it closed.
  11. Cut the roll in half and then cut those halves in half, giving you 4 logs. Cut each of those logs into 3 pinwheels, giving you 12 pinwheels total.
  12. Arrange the pinwheels cut side up on the baking sheet and spread them out so they are not touching. Bake for 20 minutes, or until they are golden brown and cooked through.
  13. Meanwhile, combine the remaining butter, parsley and salt in a small bowl. Stir together with a pastry brush or spoon. Brush the top and sides of the baked pinwheels with the butter mixture. Serve with the remaining marinara.

How to Make Zuppa Toscana

This classic soup can be made on the stovetop, in a crockpot and now we have the easiest version yet, Zuppa Toscana in the Instant Pot.

With this soup, the Zuppa Toscana is built on the sausage. You start out by cooking the sausage, and then build the soup on top of it so it is an incredibly important component. It really makes a difference to start with great sausage!

It comes together in just 20 minutes and starts by sauteing the sausage right in the Instant Pot. Add your seasonings, potatoes and chicken stock. Cook for 8 minutes. Add the cream and kale. Cook for 2 minutes. Serve and enjoy!

Can I freeze Zuppa Toscana Soup

You can freeze this Zuppa Toscana. Make sure you let the soup come to room temperature and pack it up into portion size containers or one large container. Make sure you remember to leave about 1" at the top for expansion.

It is important to note that chunks of potatoes tend to break apart and have a grainy texture when reheated. If you are sensitive to texture you may want to skip freezing this soup.

Can I substitute spinach for the kale?

You can substitute traditional lacinato kale or spinach in this recipe. I love the tenderness of baby kale, so it is my favorite.

Can you make Zuppa Toscana in the Slow Cooker?

You can absolutely make this Zuppa Toscana in the Slow Cooker. Simply cook the sausage on the stovetop. Add the seasonings and stir. Then add the chicken stock to the pot and scrape the bits on the bottom of the pan.

Transfer sausage and broth to your slow cooker and add potatoes. Cover and cook on high for 3-4 hours or low for 6-8 hours. Remove 2 cups of potatoes and mash them. Return mashed potatoes to the slow cooker, add the cream and the baby kale. Stir until kale is wilted.

  • Wooden Spatula- I find the best tool for breaking up ground meat is a wooden spatula. Whether I am cooking in a slow cooker, stovetop or in the Instant pot it is my top choice.

Instant Pot Zuppa Toscana (Sausage & Potato Soup)

Instant Pot Zuppa Toscana is the ultimate copycat recipe of the classic Olive Garden soup made quick and easy in a pressure cooker. Sausage, potatoes and fresh kale in a perfectly seasoned rich and creamy broth make this Tuscan Italian-inspired soup a hit from the first bite.

Ingredients:

  • 1 tablespoon extra virgin olive oil
  • 2 (12 ounce) packages No-Sugar All Natural Pork Sausage Roll
  • 1 tablespoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon kosher salt
  • 6 cups chicken stock
  • 6-8 medium russet potatoes, cut into 1/2" cubes
  • 1 cup heavy cream
  • 5 ounces baby kale

Instructions:

  1. Turn the 6-quart Instant Pot to "Saute". Once you can feel the heat when you hold your hand above it, add olive oil and crumble in the sausage.
  2. Cook, stirring occasionally and breaking up the sausage as desired (I like bigger chunks), until the sausage is cooked through, about 3-5 minutes. Drain excess the sausage drippings from the pan (if necessary).
  3. Add the Italian seasoning, onion powder, garlic powder, red pepper flakes and salt. Stir to combine.
  4. Add the potatoes and pour in the chicken stock. Stir to combine and scrape the bits from the bottom of the pot.
  5. Close the lid on the Instant Pot. Select "Manual" setting on the Instant Pot. Turn the pressure to high. Set timer for 8 minutes. Make sure the vent is closed.
  6. When cook time is complete, quick-release pressure according to manufacturer's directions.
  7. Use a slotted spoon to remove 2 cups of potatoes from the pot and place them in a bowl. Mash the potatoes and pour them back into the pot; this will help thicken the soup.
  8. Add the cream and kale to the soup, and stir to combine. Continue cooking the soup until the kale is wilted and tender, about 3 more minutes.
  9. Serve and enjoy!

1st - PASTA. Start by selecting the perfect pasta. We love cheese tortellini in pasta salads. It adds another dimension to the pasta salad. But, medium size pasta with lots of ridges that catch the dressing are also perfect, like rotini, cavatappi and ridged elbows.

2nd - PROTEIN. Choose your protein(s). We have tried many different options in our pasta salads. There are so many options: chicken, shrimp, cold cuts, beef, pork, eggs and so many more ideas.

3rd - VEGGIES. Pick vegetables that compliment your pasta salad. I like to choose vegetables that add a colorful element to the salad as well. For example I use orange bell peppers to make salads more visually appealing.

4th - CHEESE. Whether or not to add cheese is a personal decision, but for my creations "if" I add cheese is never a consideration. It is only what type goes with the salad. I think cheese is a requirement in just about every pasta salad. Although there are a few exceptions.

5th - FLAVOR. Look for the pop of flavor. Add pepperoncinis, jalapenos, roasted red peppers, olives, onions, pickles, hot sauce, citrus,  there are so many options. Of course my favorite: BACON. It is really the perfect addition, especially Jones' Dry Aged Cherrywood Smoked Bacon that adds an unexpected flavor boost to your pasta salad.

6th - DRESSING. There are so many options, you can use your favorite coordinating store bought dressing or put your own together.

What goes with pasta salad?

Pasta salad can be the perfect side dish for so many recipes. But when it is made right, it is an all in one meal. Take for example this Avocado Club Pasta Salad that is loaded with bacon, chicken, cheese, avocado, tomatoes and fresh parsley. It is the ultimate satisfying all in one meal!

How long does pasta salad stay good for?

Pasta salad with mayonnaise will last for 3-5 days in the refrigerator. It is best served the day after it is prepared and should not be left at room temperature more than 2 hours.

Do you rinse pasta for cold pasta salad?

When you are making a cold pasta salad it is important to drain and rinse the pasta in warm water. Rinsing the pasta stops the cooking process and also washes off the stach from the pasta and that results in a creamier pasta salad dressing that will not get gummy.

When you are preparing a hot pasta dish it is not important to rinse the pasta as the starch will help your sauce come together.

Helpful Tips to make Avocado Club Pasta Salad:

  • If you are sensitive to spicy food, you can make the ranchito sauce without the hot sauce and it is an amazing herbed buttermilk ranch dressing.
  • Choose a hot sauce that you enjoy the flavor of.
  • To halve tomatoes: Grab two lids of the same size. You can use plasticware or lids from your fridge. Place one lid with the lip facing up, so you have an edge that will hold your food. Fill the lid with grape tomatoes. Place the second lid on top of the tomatoes with the lip facing down. Firmly press down on the top lid. The two lips will hold the tomatoes in place, so they do not roll off the lid. Slide your serrated knife between the lids and carefully slice through the tomatoes. Watch your fingers. Now you have halved tomatoes in the blink of an eye!

    Bacon Avocado Club Pasta Salad

    This easy pasta salad recipe really takes your favorite bacon avocado club and transforms it into this amazing fully loaded pasta salad that will knock your socks off!

    Ingredients:

    • (2) 8-ounce packages Dry Aged Cherrywood Smoked Bacon
    • 1 pound uncooked rotini pasta
    • 12 ounces cooked chicken breast, diced
    • 16 ounces grape tomatoes, halved
    • 8 ounces Monterey Jack cheese, diced
    • 2 medium avocados, diced
    • 1 bunch parsley, rough chopped
    • 1 lemon, juiced
    Ranchito Dressing
    • 3/4 cup whole milk
    • 2 tablespoon lemon juice (from the above juiced lemon)
    • 1/2 cup mayonnaise
    • 1/2 cup sour cream
    • 1/2 teaspoon dried chives
    • 1/2 teaspoon dried dill weed
    • 1/2 teaspoon dried parsley
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 1/4 teaspoon kosher salt
    • 1/4 teaspoon fresh cracked black pepper
    • 1-2 tablespoons hot sauce

    Instructions:

    1.  Lay slices of bacon on a foil-lined baking pan. Place the pan in your cold oven.
    2.  Turn the heat to 400°F and bake for 12 to 20 minutes. The length of time will vary based on the thickness of your bacon (thick-cut takes longer) and the doneness you prefer (I like mine crispy). Chop up the cooked bacon and set aide.
    3. Meanwhile: Pour 2 tablespoons of lemon juice in a 1 cup measuring cup or a small mixing bowl. Pour milk over top. Set aside. The milk will thicken and curdle, making a scrumptious homemade buttermilk for our dressing.
    4. Meanwhile: Combine mayonnaise, sour cream, dried herbs and spices in a 16 ounce or larger canning jar. Whisk until well combined. Add homemade buttermilk and 1 tablespoon hot sauce, seal jar and shake the living tar out of it until well combined. Taste for flavor and heat. Add more hot sauce as desired.
    5. Chill until ready to use. This can be made ahead and let to sit in the fridge until you are ready to make the pasta salad. It keeps for at least a week in the fridge.
    6. Bring a large pot of salted water to a boil. Cook pasta according to directions on the package. Make sure the pasta is cooked through and past the al dente stage. Remember your pasta will firm up when it is chilled.
    7. Drain and rinse pasta in water. Rinsing the pasta stops the cooking process and also washes off the starch from the pasta and that results in a creamier pasta salad dressing that will not get gummy.
    8. Combine pasta and 1/2 of salad dressing in a large serving bowl. Toss to combine.
    9. Add remaining salad ingredients, the remaining dressing, and the lemon juice. Gently fold salad ingredients together. Refrigerate until ready to serve.

    Munchkin is growing up so fast, I can't believe that she is 7! We started this site 6 years ago when she was 1 1/2 and she has been cooking right beside me ever since. With Chad and I so involved in the food world, she follows in our footsteps with a serious interest in cooking and planning out our meals.

    Well, actually at this point she wants to make the recipes not just watch. She absolutely loves pizza and I thought that would be a fun way to switch it up. Needless to say, they were a huge hit!


    So, when we were talking about fun breakfast/brinner ideas, we thought a breakfast pinwheel would totally rock our worlds and oh my gosh, we were so right!

    This has to be the most fun that I have ever had working on a recipe. Like I said, Munchkin has been working with me in the kitchen and Chad in photo shoots since she was little, but to get her involved in the process was absolutely so much fun!

    I put together a sweet and tender milk and honey bread dough. Then I rolled it out and Munchkin topped with 2 kinds of cheese, sausage, bacon and eggs and we rolled it up! Then we sliced and baked it. In a snap it was ready to eat, start to finish in an hour!

    Chad has literally been eating these every day for 2 weeks. He swears they remind him of his favorite stuffing in a fabulous breakfast. Just follow the make-ahead freezing directions and you can make these with the kids on the weekend and enjoy them all week long.

      Cheesy Sausage Breakfast Pinwheels

      Cheesy Sausage Breakfast Pinwheels are a simple recipe made with soft and tender bread filled with your favorite breakfast fixin's. It's like unrolling a little piece of heaven loaded with smoky bacon, pork sausage, scrambled eggs and ooey gooey cheese!       Ingredients

      For the Dough
      • 4 1/2 tsp active dry yeast (2 packets)
      • 1 1/4 cups warm milk (110° to 115°)
      • 1/4 cup honey
      • 8 tbsp unsalted butter, melted (divided)
      • 4 cups all-purpose flour
      • 1 1/2 tsp kosher salt
      For the Filling
      • 1/4 cup chopped scallions
      • 4 ounces pepperjack cheese, shredded
      • 6 large eggs, scrambled
      • 1/2 cup Jones Dairy Farm Dry Aged Bacon, cooked and chopped
      • 1 (7 ounce) package Jones Dairy Farm Fully Cooked Sausage links, sliced
      • 4 ounces cheddar cheese, shredded

      Instructions

      1. Preheat oven 350°F.
      2. In the bowl of a stand mixer fitted with a dough hook; add yeast, milk and honey. Swirl with a spoon to dissolve the yeast. Allow the mixture to rest until the yeast becomes foamy and aromatic, about 3 minutes.
      3. Add 3 tablespoons of butter and 3 1/2 cups flour, mix on low until smooth. Add remaining flour to form a soft dough. Add salt. Allow to knead for about 3 minutes. Ball of dough should be slightly sticky.
      4. Meanwhile, grease 9"x13" baking pan with 2 tablespoons remaining melted butter. Set aside.
      5. Turn the dough out onto a lightly floured countertop and form into a ball. Roll the dough out into a 12"x18" wide rectangle. Sprinkle the scallions and pepperjack cheese evenly over the dough leaving a 1" border on the top edge. Lightly press the scallions and cheese into the dough with fingertips or rolling pin.
      6. Add eggs, bacon and sausage in alternating rows over the top. Sprinkle the cheddar cheese evenly over top.
      7. Starting at the long edge, fold the edge of the dough on top of itself and begin tightly rolling the dough away, pinching the ingredients into the roll. Use the last 1” to seal the roll. Cut dough roll in quarters. Cut each of those pieces into 3 pieces for 12 pieces.
      8. Arrange the pinwheels cut side up on the buttered baking sheet, spread them out so they are not touching. Bake 20-25 minutes or until golden brown and cooked through. Brush with remaining 3 tablespoons melted butter.
      9. Serve and enjoy!
