Helpful Tips to make Taco Cheese Stuffed Meatballs:

  • Do not overmix the meat or you can end up with tough meatballs.
  • Use a cookie dough or ice cream scoop to get uniform meatballs.
  • Be sure to fully seal the cheese within the meatballs or all of the cheese will ooze out while broiling.
  • To make extra meatballs to keep in the freezer, double or triple this recipe. Transfer extra meatballs to a rimmed baking sheet and freeze completely. Then transfer frozen meatballs to a ziploc bag or container.
  • This recipe makes a mild flavored taco meatball. If you prefer extra taco flavor, double the amount of taco seasoning.

What you will need to make Taco Cheese Stuffed Meatballs:

  • Large mixing bowlYou will need a bowl large enough for the ingredients and your hands.
  • Sharp knifeThis recipe requires the cheese to be cut into cubes. A good, sharp knife is always handy to have in the kitchen.

Taco Cheese Stuffed Meatballs

Taco Cheese Stuffed Meatballs are a fun twist for Taco Tuesdays! This easy meatball recipe is taken to the next level with taco seasoning and colby jack cheese.

Ingredients

  • 2 pounds lean ground beef
  • 1/2 cup bread crumbs
  • 2 large eggs
  • 1/4 cup whole milk
  • 1 package taco seasoning (or 2 Tablespoons Homemade Seasoning)
  • 6 ounces Colby Jack cheese - cut into cubes

Instructions

  1. Mix beef, bread crumbs, eggs, milk and taco seasoning until just combined. Do not over mix.
  2. Scoop out 4 tablespoons of beef mixture, flatten then place cheese cube into the center. Bring the edges together to form a ball. Ensure that the meatball is completely sealed.
  3. Transfer meatballs to a greased rimmed baking sheet.
  4. Freeze meatballs on baking sheet for 10-15 minutes to firm up.
  5. Raise oven rack to top and preheat broiler on high.
  6. Broil meatballs on high for 10-12 minutes or until cooked through. Some cheese may escape while broiling.

How to Make Pizza Pinwheels

Pizza is such a popular game day food, but these pinwheels are sure to kick up the fun factor! The dough is slightly crisp on the outside and tender inside. It’s like unrolling a little piece of heaven wrapped in marinara, your favorite meat toppings and ooey gooey cheese.

Simply roll out your favorite dough. Top with your favorite marinara, I use this homemade sauce but store bought is perfect too. Then scatter your chicken sausage, bacon, beef and pepperoni over the sauce.

You can make rows of the toppings, but I love to get all of them in each bite. Especially those scrumptious chicken link coins! {{swoon}}.  Sprinkle with cheese. Lots of cheese. Then you roll it up and slice it into 12 pinwheels. Easy peazy!!!

How do I Make Pizza Dough

I use a really simple pizza dough with only 5 minutes of rise time. The trick is to make it a little sticky so it can rise in the oven.

But, honestly, if you are short on time, you can even substitute store-bought pizza dough.

The best part is that you can make them ahead and warm them to serve when you are ready, which makes them party-perfect! Easy party + fun food = happy mama!

Swoon! Everyone went nuts over these. Munchkin loves them anytime she can get them; I mean, hello, they are pizza!


These pinwheels are the perfect grab and go meal too. We made these while my dad was here visiting from Florida and they were just what we needed as we dashed out the door for fun family time.

Helpful Tips to make Meat Lovers Pizza Pinwheels:

  • These freeze wonderfully. Simply allow them to cool to room temperature after baking. Store in a gallon-size zip-top bag in the freezer. When you are ready to eat, just thaw them and bake at 350°F for 10 minutes, or until warmed through.
  • Preshredded cheeses generally have anti-caking ingredients that will absorb moisture from your food. Shredding your own cheese makes for more predictable cooking results.
  • Adding sugar to tomato-based recipes helps balance the tartness and coax the sweet side out of the tomatoes.

Meat Lovers Pizza Pinwheels

Easy Pizza Pinwheels are loaded with your favorite meat lovers toppings for the perfect grab and go game day snack! The best part is you can make them ahead and freeze them for a simple meal anytime.

Ingredients

For the Dough
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 tablespoon granulated sugar
  • 1 1/2 cups warm water (110°–115°F)
  • 2 tablespoons extra virgin olive oil
  • 3–3 1/2 cups all-purpose flour, divided
  • 1 tablespoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
For the Filling
  • 4 tablespoons unsalted butter, melted
  • 1 cup your favorite pizza sauce
  • 2 cups freshly shredded mozzarella cheese
  • 1/2 package thawed Jones Dairy Farm Antibiotic free chicken sausage, cut into coins
  • 1/2 cup mini pepperoni
  • 1/2 cup cooked ground beef
  • 5 slices cooked bacon, chopped
  • 1/2 teaspoons dried parsley
  • 1/4 teaspoon kosher salt

Instructions

  1. Preheat the oven to 350°F. Prepare a baking sheet with a silicone baking mat or parchment paper. Set aside.
  2. In the bowl of a stand mixer fitted with a dough hook, combine the yeast, sugar and warm water. Swirl with a spoon to dissolve the yeast. Let the mixture rest until the yeast becomes foamy and aromatic, about 3 minutes.
  3. Pour the olive oil, 3 cups of the flour, Italian seasoning, salt and garlic into the bowl.
  4. Mix on medium speed until the dough comes together in one ball, and then knead for 3 minutes on medium to medium-high speed. The dough should be just a little bit sticky. When you touch your finger to the dough and pull away, you should have just a little dough on your fingertip.
  5. Add the remaining flour 1 tablespoon at a time as needed. The sticky dough is important to help the pizza pinwheels get a little lift as it cooks.
  6. Lightly flour your counter top. Form the dough into a ball and cover with a dish towel. Let the dough rest for 5 minutes.
  7. On a lightly floured counter top, roll the dough into a 12 x 18-inch rectangle.
  8. Spread about 1/2 to 1 cup of marinara over the dough, leaving a 1-inch border on the top edge (this is where you will pinch the dough together, if there is sauce here it will make it hard for the dough to stick together).
  9. Sprinkle sausage, pepperoni, beef and bacon over the top of the sauce. Then sprinkle the cheese over the meat.
  10. Starting at the long edge nearest you, fold the edge of the dough on top of itself and begin tightly rolling the dough away from you, pinching the pepperoni slices into the roll if they try to escape as you go. Use the last 1 inch of clean dough to seal the roll, pressing gently to keep it closed.
  11. Cut the roll in half and then cut those halves in half, giving you 4 logs. Cut each of those logs into 3 pinwheels, giving you 12 pinwheels total.
  12. Arrange the pinwheels cut side up on the baking sheet and spread them out so they are not touching. Bake for 20 minutes, or until they are golden brown and cooked through.
  13. Meanwhile, combine the remaining butter, parsley and salt in a small bowl. Stir together with a pastry brush or spoon. Brush the top and sides of the baked pinwheels with the butter mixture. Serve with the remaining marinara.

Munchkin is growing up so fast, I can't believe that she is 7! We started this site 6 years ago when she was 1 1/2 and she has been cooking right beside me ever since. With Chad and I so involved in the food world, she follows in our footsteps with a serious interest in cooking and planning out our meals.

Well, actually at this point she wants to make the recipes not just watch. While we were working on our cookbook (The Simple Kitchen - available for preorder) we came up with the idea for pizza pinwheels. She absolutely loves pizza and I thought that would be a fun way to switch it up. Needless to say, they were a huge hit!


So, when we were talking about fun breakfast/brinner ideas, we thought a breakfast pinwheel would totally rock our worlds and oh my gosh, we were so right!

This has to be the most fun that I have ever had working on a recipe. Like I said, Munchkin has been working with me in the kitchen and Chad in photo shoots since she was little, but to get her involved in the process was absolutely so much fun!

I put together a sweet and tender milk and honey bread dough. Then I rolled it out and Munchkin topped with 2 kinds of cheese, sausage, bacon and eggs and we rolled it up! Then we sliced and baked it. In a snap it was ready to eat, start to finish in an hour!


Soft and tender milk and honey bread filled with scrambled eggs, bacon, sausage and 2 scrumptious kinds of cheese to add just enough flavor to make this a new favorite!

Chad has literally been eating these every day for 2 weeks. He swears they remind him of his favorite stuffing in a fabulous breakfast. He can't get enough and I am sure your crew is going to go crazy over them too. Just follow the make-ahead freezing directions and you can make these with the kids on the weekend and enjoy them all week long.

    Cheesy Sausage Breakfast Pinwheels

    Cheesy Sausage Breakfast Pinwheels are a simple recipe made with soft and tender bread filled with your favorite breakfast fixin's.     Ingredients

    For the Dough

    • 8 tbsp unsalted butter, melted (divided)

    • 4 ounces pepperjack cheese, shredded
    • 6 large eggs, scrambled
    • 1/2 cup Jones Dairy Farm Dry Aged Bacon, cooked and chopped
    • 1 (7 ounce) package Jones Dairy Farm Fully Cooked Sausage links, sliced
    • 4 ounces cheddar cheese, shredded

    Instructions

    1. Preheat oven 350°F.
    2. In the bowl of a stand mixer fitted with a dough hook; add yeast, milk and honey. Swirl with a spoon to dissolve the yeast. Allow the mixture to rest until the yeast becomes foamy and aromatic, about 3 minutes.
    3. Add 3 tablespoons of butter and 3 1/2 cups flour, mix on low until smooth. Add remaining flour to form a soft dough. Add salt. Allow to knead for about 3 minutes. Ball of dough should be slightly sticky.
    4. Meanwhile, grease 9"x13" baking pan with 2 tablespoons remaining melted butter. Set aside.
    5. Turn the dough out onto a lightly floured countertop and form into a ball. Roll the dough out into a 12"x18" wide rectangle. Sprinkle the scallions and pepperjack cheese evenly over the dough leaving a 1" border on the top edge. Lightly press the scallions and cheese into the dough with fingertips or rolling pin.
    6. Add eggs, bacon and sausage in alternating rows over the top. Sprinkle the cheddar cheese evenly over top.
    7. Starting at the long edge, fold the edge of the dough on top of itself and begin tightly rolling the dough away, pinching the ingredients into the roll. Use the last 1” to seal the roll. Cut dough roll in quarters. Cut each of those pieces into 3 pieces for 12 pieces.
    8. Arrange the pinwheels cut side up on the buttered baking sheet, spread them out so they are not touching. Bake 20-25 minutes or until golden brown and cooked through. Brush with remaining 3 tablespoons melted butter.
    9. Serve and enjoy!

    Did you know that I bought my first crockpot when I moved out on my own? I purchased my first one so I could make prepare dried beans.

    Helpful Tips to make Crockpot Italian Meatballs and Marinara :

    • Mix until just combined. Overmixing will create a tough meatball and that isn't good for anyone.
    • Use a scoop to make uniform-size meatballs; this way you handle them less and they will cook evenly.
    • If you lightly coat your hands with olive oil before rolling the meatballs, they will form better and crack less.
    • Make a few batches of meatballs ahead and freeze them for easy dinners. To freeze, allow meatballs to come to room temperature and place in a freezer bag. I like to flash freeze them on a cookie sheet and then transfer the frozen meatballs to a freezer bag. It makes it easier to grab as many meatballs as I need.

Whip it up and toss it in the crockpot to cook, the meatballs cook right in the sauce! How much easier could it be? This meal just about cooks itself.

    Ingredients

    Marinara
    • 2 (14.5 ounce) cans fire roasted diced tomatoes with garlic
    • 1 (15 ounce) can tomato sauce
    • 2 tablespoons tomato paste
    • 2 tablespoons dried Italian seasoning
    • 1 tablespoon sugar
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon kosher salt
    • 1/4 teaspoon red pepper flakes (optional)
    • meatballs, uncooked (recipe to follow)
    • 2 dried bay leaves
    Meatballs
    • 1 pound lean ground beef (I used 88%)
    • 1/2 cup Italian breadcrumbs
    • 1/2 cup marinara
    • 1/4 cup fresh grated Parmesan cheese
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 tablespoon dried Italian seasoning
    • 1/2 teaspoon kosher salt
    • 1/2 teaspoon fresh cracked black pepper
    • 1 large egg, lightly beaten

    Instructions

    Marinara
    1. Combine all ingredients in a blender in the order they are listed, except meatballs and bay leaves.  Process until your sauce is the consistency you prefer. Cover bottom of crockpot with sauce crockpot. Reserve remaining sauce to pour on top of meatballs.
    2. Gently place 1 layer of meatballs in crockpot. Pour sauce over top, until covered. Continue adding meatballs until they are all in the slow cooker.  You may have to layer them, just be sure the bottom layer is thoroughly coated in sauce before you add the next layer. Pour remaining sauce over top. Add bay leaves. Cover and cook on high for 3-4 hours, or low for 6-8 hours.
    Meatballs
    1. In a large mixing bowl, combine all ingredients. Mix well, do not over mix or you will have tough meatballs.
    2. Using a 1 tablespoon scoop, portion out meat and place on a plate.  After all meatballs have been scooped onto plate, roll into balls.

    DONNA'S NOTES

    1. If you lightly oil your hands the meatballs will form better and crack less.
    2. You can prepare meatballs the night before and refrigerate to cut down on prep time.

    How to make Cheeseburger Soup

    It is the cool season around here.  We are dipping in the 80's in Arizona and that means SOUP!   I have to tell you we have made a ton of soup already and I do not see any stopping in the near future.

    So keep your eyes peeled we have a new soup planned each week throughout the cool season and they will knock your socks off.

    One of our soups from last year has kind of gone crazy around here. Bacon Cheddar Beer Cheese Soup with Chicken has over 113,000 Pins and is our #2 all time recipe on the site. 

    We have had such a fantastic response to the recipe with rave reviews all over Facebook and our site.  We have even eaten it a gazillion times so I decided to mix it up a bit.

    I created a soup inspired by one of Chad's favorites.  Chad loves burgers.  No really.  HE LOVES BURGERS.  So this soup was just for him (and all of you of course).

    The Bacon Double Cheeseburger Beer Cheese Soup oh my word.  It is a grand slam home run (that means 'flippin' spectacularly fabulously' awesome for you non-baseball fans).  I think if we could eat it breakfast, lunch and dinner we would.

    Its loaded with thick cut bacon and seasoned ground beef in the most scrumptious beer cheese soup.  One pot, 30 minutes and you have dinner.  For fun we have been adding croutons, bacon, chopped pickles and other favorite toppings as a garnish.

    I have to say the croutons are a must! 30 minutes from prep to plate for this rich creamy delicious soup and I am sure it will be on your menu all winter long.

    Bacon Double Cheeseburger Beer Cheese Soup

    BACON DOUBLE CHEESEBURGER BEER CHEESE SOUP - Its loaded with thick cut bacon and seasoned ground beef in the most scrumptious beer cheese soup. A one pot 30 minute simple recipe and you have dinner.

    Ingredients

    • 12 ounces thick cut bacon, uncooked
    • 1 pound lean ground beef
    • ¼ cup all-purpose flour
    • 1 tablespoon Montreal steak seasoning
    • 2 teaspoons smoked paprika
    • 1 (12 ounce) beer (I used Blue Moon)
    • 4 cups half and half 
    • 16 ounces mild cheddar cheese, shredded
    • croutons, pickles, bacon bits (optional garnishes)

    Instructions

    1. Warm an 8 quart pot over high heat.  Using clean scissors; cut bacon into pot.  Cook bacon until lightly crisp, stirring occasionally.
    2. Add beef into pot.  Break beef up with a wooden spoon.  Cook until cooked through, stirring occasionally.  Drain bacon/beef drippings as necessary; only leave about 2 tablespoons of drippings in the pan.  Tip for checking drippings:  Scrape all meat to one side, tip pan.  Drippings will pool on the side.  Use a spoon to remove drippings as necessary.
    3. Stir in flour, seasoning and paprika.  Stir until flour is coated.  Add beer and scrape the bottom of the pot with a spoon to deglaze the pan, allow to cook for 3 minutes. Add half & half.  Stir to combine and bring to a bubble.  Add cheese and stir until cheese is melted.   Allow to simmer until ready to serve, stirring occasionally.
    4. Garnish with croutons, bacon, pickles, whatever you like on your burger.
    5. Enjoy!
