Lazy Day Mac and Cheese

3-Ingredient Mac and Cheese is the ultimate comfort food made simple. This Lazy Day recipe is so easy to cook, you will be making it all the time. It is utterly creamy and loaded with ooey gooey cheese. Perfect any night. This one pot meal makes for less dish washing and that my friends makes it a home run.

Ever since I first shared our One-Skillet 20-Minute Mac and Cheese with Broccoli, 2 years ago I have been enjoying this quick and easy method of mac and cheese making more nights than not.

Now don't get me wrong, Super Simple Mac & Cheese Italian Style is still a family favorite. As a matter of fact. I made it the night I was working on this post. I was so inspired by all the mac and cheese recipes.

I have a culinary confession to make. I have been playing with a lot of different variations of mac and cheese this last year and Munchkin says "Mommy, I don't mean to hurt your feelings. But, I don't like your mac and cheese.

Can we have the one in the box?" Ugh!  True confession; I have been battling the box mac and cheese with my 5 year old. It's like a dagger in the heart.


Well, after some playing around I realized she did not like the flavor and texture of the mac and cheese she was associating with 'homemade'. You know the thick and yummy cheese that you think of when it is potluck time.

So, I went back to basics. I stick with familiar cheeses, like mozzarella, Parmesan and cheddar. I also add more milk so the cheese sauce is creamier. SCORE! I got my mac and cheese lover back.

This 3-Ingredient recipe is so easy and creamy. As with any recipe that relies on a few ingredients, make sure those ingredients are the best. For this recipe I picked out my favorite good quality cheese and it really kicks the flavor up a notch!

It's funny but I absolutely love homemade mac and cheese and while we were working on our new cookbook, we developed our new favorite.

Helpful Tips to make Lazy Day Mac and Cheese:

  • Use full fat milk in this recipe. If you choose to go with a low-fat (2% or skim milk) you will want to cook more slowly and add in a little corn starch.
  • Do NOT add salt until the end, adding it too soon will result in a grainy mac and cheese (caused by the milk curdling, which is fine to eat but not as pleasant). For an ΓΌber rich mac and cheese you can use heavy cream or half and half.
  • Feel free to add spices as desired at the end. A sprinkle of parsley goes a long way for added freshness.
  • Add your favorite cheeses, I have used sharp cheddar, mild cheddar and extra sharp. I usually use about half sharp and half mild for my perfect flavor. Also note, the pre-shredded cheese you can buy at the store has a corn starch like coating on it that may cause your cheese sauce to be super thick. You can add an extra splash of milk to thin it out a little.

Lazy Day Mac and Cheese

3-Ingredient Mac and Cheese is the ultimate comfort food made simple. This Lazy Day recipe is so easy to cook, you will be making it all the time. It is utterly creamy and loaded with ooey gooey cheese. Perfect any night. This one pot meal makes for less dish washing and that my friends makes it a home run.
prep time: cook time: 15 minstotal time: 15 mins

Ingredients

  • 8 ounces dried elbow macaroni
  • 24 ounces (3 cups) whole milk
  • 8 ounces finely shredded cheddar cheese
  • optional, salt and pepper to taste

Instructions

  1. In a medium saucepan combine milk and pasta. Stir. Bring to a boil slowly over medium heat stirring occasionally. Do not walk away from the stove the milk  Once milk comes to a boil, reduce to simmer until pasta is cooked al dente (cooked but firm to the bite). Sprinkle in cheese and stir until cheese is completely melted. Turn off burner and cover pot while you are cleaning up, about 5-6 minutes to allow sauce to thicken.
  2. Add salt and pepper to taste, if desired. (I actually add about 1/2 teaspoon kosher salt and 1 teaspoon fresh ground course black pepper).
  3. Serve and enjoy!

DONNA'S NOTES

I love quick and easy treats and I especially love my crockpot. When they come together it is pure magic!

This simple 3-ingredient recipe is creamy, crunchy, peanutty and incredibly gorgeous. What treats do you make in your slow cooker?

A few years ago I created my first ever crockpot candy recipe and it has gone wild on our site ever since. So, this past Christmas I decided to make a variation.

And so, Crockpot Chocolate and Caramel Pecan Clusters (AKA Turtles) were born. Truly genius and amazing, if I must say so myself!

With spring upon us, I was up for a new magnificent creation and I have to say, I have outdone myself.

Helpful Tips to make Easter Crockpot Candy:

  • You can make this recipe with Candy Quick, Almond Bark (not actually made with almonds), vanilla candy melts and even white chocolate in this recipe. I have tried them all and we have loved every one.
  • You can use two spoons to drop the candy onto your parchment paper but using a tablespoon scooper is my preferred method. It assures all of the candy will be the same size and it is easier and less messy.

What you will need to make Easter Crockpot Candy:

  • Vanilla Candy Coating - You can use Candy Quick, Almond Bark (not actually made with almonds), vanilla candy melts and even white chocolate in this recipe.
  • 4-6 Quart Slow Cooker - This is my favorite. 
  • 1 Tablespoon Scooper - This is one of my favorite kitchen tools. It is perfect for candy making, meatballs and so many more recipes.
  • Crockpot Liners - I never use them because I wash the crock when it is still a little warm and the candy comes right out, but if you are worries about the cleanup, these are foolproof.

Easter Crockpot Candy

White Chocolate Easter Crockpot Candy Clusters are a simple, impressive 3-ingredient homemade Easter candy that everyone will be raving about! An easy recipe that you layer in the slow cooker, stir and scoop. It is so easy it almost makes itself.
prep time: 30 MINScook time: 2 hourtotal time: 2 hours and 30 mins

Ingredients

  • 34.5 ounces honey roasted dry roasted peanuts (I used planters)
  • 48 ounces vanilla-flavored candy coating (Almond Bark or CandiQuik)
  • 11.4 ounces M&M Milk Chocolate Plain
  • optional garnish: seasonal sprinkles (I used jimmies and nonpareils)

Instructions

  1. Layer peanuts and then vanilla candy coating into the crockpot (I used a 5 quart). Cover. Cook for 1 hour on low temperature without lifting the lid. After 1 hour, stir the mixture and continue to cook, stirring every 15-20 minutes for another hour (a total of 2 hours).
  2. Meanwhile, line 3 cookie sheets with Silpat mats or line countertop or table with a long piece of parchment paper.
  3. Turn off the crockpot. Reserve 1/2 cup M&M's.
  4. When you are ready to scoop, pour remaining M&M's into the crockpot and fold in.
  5. Working quickly, use a 1 tablespoon scooper to portion out candy from crockpot and onto parchment paper. Make sure candy is not touching. Once the entire cookie sheet is scooped (before candy dries) top with 1 M&M and sprinkles.
  6. Allow the candy to cool completely.

Sweet Blueberry Banana Milk Shake / Smoothie

Sweet Blueberry Banana Milk Shake / Smoothie - Packed with antioxidants and immune system boosters and only 3 grams of fat per serving, this is a very healthy milk shake!

Ingredients

  • 3 large bananas, frozen
  • 2 cups blueberries, frozen
  • 2 cups milk, divided
  • 2 tablespoons good honey

Instructions

  1. In a blender process bananas until they break down to pea size pieces of frozen banana, add 1 cup milk and blend until combined.  You may need to scrape down a few times. 
  2. Add blueberries and remaining 1 cup of milk and process until thick and creamy.
  3. Add honey and spin it a few times to combine.
  4. Serve and enjoy!

I remember my mom making rice pudding for us. Of course, as my mom was a penny pincher it was always with left over white rice from dinner a few nights earlier. If we didn't have leftover rice there was no rice pudding. Which kinda stinks when you love rice pudding.

So what if you want a quick and easy rice pudding and you don't have any left over rice? Well, that is exactly where I started. Have you ever had risotto? It is rich and creamy. It is made with an Italian short grain rice called Arborio.

The rice has a high starch content which leads to the creaminess of the risotto. So, I started thinking... What if I use Arborio rice in my rice pudding?

Helpful Tips to make 2-Ingredient Creamy Vanilla Rice Pudding:

  • Do not bring to a full rolling boil and then cover. It will boil over and you will be left with a nasty stove to clean. Don't ask me how I know, just trust me on this one.
  •  Slow cooker method: Combine ingredients in a slow cooker (I used a 3 quart). Stir, cover and cook on high for 1 1/2 - 3 hours. It took 3 hours in my 3 quart round. Rice should be soft and pudding thick when it is ready.
  • The first time you prepare this in a slow cooker I recommend tasting a piece of rice after 1 hour 30 minutes. If it is not chewy yet cover it and let it cook 30 more minutes and check again. The more you stir the more the pudding will thicken. That said, about 15 minutes before the pudding is done remove cover and stir until pudding is thickened. 
  • If you don't have coffee creamer you can substitute (in place of the creamer and water) 4-1/2 cups whole milk, 1/2 cup granulated sugar, 1/4 teaspoon kosher salt, and 1 tablespoon vanilla extract.

Creamy Vanilla Rice Pudding

Creamy Vanilla Rice Pudding is the epitome of comfort food. This simple dessert made with just 2 ingredients is rich, silky and utterly delicious! This recipe is so simple it just about cooks itself!
prep time: 10 minscook time: 20 minstotal time: 30 mins

Ingredients

  • 1 cup uncooked Arborio rice
  • 2 cups water
  • 2 cups International Delight French Vanilla Creamer (liquid)
  • 1/4 teaspoon kosher salt
  • Optional Toppings: cinnamon or fruit 

Instructions

  1. Combine ingredients in a large (8 quart) saucepan over high heat. Stir to combine. Bring to 'medium' boil. *SEE NOTE. Reduce to simmer (on medium-low temperature) for 20 minutes. Cover.
  2. Remove cover, increase temperature to medium-high and stir constantly until rice is tender and pudding is thick and creamy, about 3-5 minutes.
  3. Remove from heat. Pour into serving dishes. Serve warm immediately or chill in the refrigerator until ready to serve. 
  4. If desired add optional toppings right before serving.
  5. Enjoy!

DONNA'S NOTES

Do I have to make St Patrick's Day Crockpot Candy in a slow cooker?

You can prepare this on the stovetop if desired. But, the slow cooker gives you a no-fuss recipe and keeps the melted chocolate melty and easy to work with while you are scooping it out.

Can I substitute chocolate chips for the vanilla candy coating?

You can use white chocolate chips or Wilton Candy Melts in place of the vanilla candy coating. I generally use almond bark that you can buy at Wal-Mart. It is what my mom used for peanut clusters and I keep it on hand.

What is vanilla candy coating?

Vanilla candy coating (commonly known as almond bark) is a chocolate-like candy made with vegetable fats instead of cocoa butter. It melts evenly without tempering and is great for candy making.

Can I freeze St Patrick's Day Crockpot Candy?

Allow candy to cool completely. You can toss it in the fridge to speed the process up. Place candy in an airtight container, or in a zip-top freezer bag with the air pressed out. Candy will keep in the freezer for 6 months. Be sure to defrost before serving.

How to Make St. Patrick's Day Crockpot Candy

  • Combine peanuts and candy coating in the slow cooker on low.
  • Cook, covered for 1 hour.
  • Stir.
  • Cook for another hour.
  • Stir in all but 1/2 cup of M&M's.
  • Scoop candy, decorate and allow to set up.

  • Crockpot Liners - I never use them because I wash the crock when it is still a little warm and the candy comes right out, but if you are worried about the cleanup, these are foolproof.
  • Parchment Paper-I get lazy having to wash the Silpat liners. I love that I can toss this when I am done.

St Patrick's Day Crockpot Candy

Crock Pot Candy is the easiest and most impressive homemade candy ever. A rich chocolaty, peanutty 4 ingredient recipe that you simply toss in the slow cooker, stir a few times and scoop it out. It doesn't get much easier than that!
prep time: 30 minscook time: 2 hourtotal time: 2 hours and 30 mins

Ingredients

  • 34.5 ounces honey roasted dry roasted peanuts (I used planters)
  • 48 ounces vanilla-flavored candy coating (Almond Bark or CandiQuik)
  • 11.4 ounces Dark Chocolate Mint M&Ms
  • Garnishes: seasonal sprinkles (I used shamrocks, gold coins, and green & white jimmies)

Instructions

    1. Layer peanuts and then vanilla candy coating into the crockpot (I used a 5-quart). Cover. Cook for 1 hour on low temperature without lifting the lid. After 1 hour, stir the mixture and continue to cook, stirring every 15-20 minutes for another hour (a total of 2 hours).
    2. Meanwhile, line 3 cookie sheets with Silpat mats or line countertop or table with a long piece of parchment paper.
    3. Turn off the crockpot. Reserve 1/2 cup M&M's.
    4. When you are ready to scoop, pour remaining M&M's into the crockpot and fold in.
    5. Working quickly, use a 1-tablespoon scooper to portion out candy from crockpot and onto parchment paper. Make sure candy is not touching. Once the entire cookie sheet is scooped (before candy dries) top with 1 M&M and sprinkles.
    6. Allow the candy to cool completely.

    DONNA'S NOTES

    1. Crockpot Candy will keep in the freezer in an airtight container or a ziptop freezer bag for 6 months. Be sure to defrost before serving.
    2. If you wish to have flatter (easier to bite into) candies, use the back of the scooper to press down the candy a bit before it is garnished.
    3. If your kitchen is cool your candy may set up faster. Keep an eye on it and add garnishes after the first dozen or so have been scooped so they do not dry before you can decorate them.

      Mint Chocolate Homemade Fudge is minty and creamy with the crunch of your favorite minty candies and Oreo cookies. It's the perfect bite. And it is so versatile. Change out a few ingredients and you have a whole new recipe.

      How Do You Make Fudge?

      • Line a 9×9 pan with parchment paper.
      • Combine sweetened condensed milk and butter in a large microwave-safe bowl.
      • Heat in the microwave for 2 to 3 minutes until the butter has melted and the mixture is hot, stir after each minute and continue melting.
      • Add the chocolate to the hot condensed milk and butter mixture, and press it down a little bit with a spoon, then just let it sit for 3 to 4 minutes in the hot liquid.
      • Stir the chocolate mixture, the chocolate should combine very easily with the liquid. It will thicken as it cools.
      • Pour your chocolate mixture into the prepared pan and smooth it out with your spatula.
      • Add crushed Oreos, M&Ms and Kit Kat pieces, mix well. Save 1/4 of each for topping the fudge.
      • Pour into prepared pan and put it in the fridge for 2 to 3 hours until it sets up completely.
      • Cut into small pieces or big if you like and enjoy!
