  • You can use any milk you prefer depending on your dietary preferences.
  • You can omit the honey if you are watching the carbs. The bananas are sweet enough on their own to make this shake incredibly decadent.

Yield: 4 (makes approximately 72 ounces)

Sweet Blueberry Banana Milk Shake / Smoothie

Sweet Blueberry Banana Milk Shake / Smoothie - Packed with antioxidants and immune system boosters and only 3 grams of fat per serving, this is a very healthy milk shake!

Ingredients

  • 3 large bananas, frozen
  • 2 cups blueberries, frozen
  • 2 cups milk, divided
  • 2 tablespoons good honey

Instructions

  1. In a blender process bananas until they break down to pea size pieces of frozen banana, add 1 cup milk and blend until combined.  You may need to scrape down a few times. 
  2. Add blueberries and remaining 1 cup of milk and process until thick and creamy.
  3. Add honey and spin it a few times to combine.
  4. Serve and enjoy!

Italian Meatball Soup

Italian Meatball Soup is hearty feel-good soup loaded with pasta, veggies and scrumptious meatballs cooked in a tomato broth. This is a simple recipe prepared in one pot that is ready in just 30 minutes. It doesn't get much easier than that!
Meatballs have been a favorite of mine as long as I can remember. With over 20 meatball recipes on the site, I am sure you can tell how infatuated I am with them. And luckily I have a whole list of meatball recipes that are coming soon.

Honestly, I love them everywhere: in my pasta, in pasta bakes, as an appetizer, in the oven, in the slow cooker and of course I love them in soup! I wanted to make a meatball soup with homemade meatballs that cooked right in the broth.

Boy, did this recipe ever beat my expectations! It is rich and flavorful without being too heavy. Cooking the meatballs in the soup not only infused a deep flavor into the broth, it also gave the meatballs and amazing flavor.

As fall begins they weather starts to change and it cools off, even here in Arizona. Soups are on my mind. This Italian Meatball Soup is on my menu this week. Wish my luck with my daughter though.

I have a confession...  My picky 6-year-old does not like meatballs. I mean she doesn't really like Italian food. All she ever wants is Mexican food. I mean I get it, we live in Arizona and I can make some amazing Mexican food. But, I jokingly tell my husband that my Italian relatives must roll over in their graves every time they hear her say "I don't like Italian food".

It is like a shot to the heart. So, I have started fusing the two together. I add red pepper flakes to my meatballs and sauces and even jalapenos or hot sausage sometimes. I was thinking of sharing my Pasta Arabiatta with you all. Pasta Arabiatta means "angry pasta". It is hot and spicy and hits on all of our favorite flavors.

I have it on my list to make for dinner soon. Let me know if you would like to see it on the blog and I will work on getting it on for you.

Packed with flavorful meatballs and veggies in a light tomatoey broth with a sprinkling of pasta.  Perfect to satisfy those pasta cravings without over indulging.  You NEED to make this! I am adding a sprinkle of red pepper flakes to bump up the flavor for my daughter. If you like spicy, give that a try too.

  • You can substitute this Italian Seasoning recipe: 3/4 teaspoon dried oregano, 3/4 teaspoon dried basil, 3/4 teaspoon dried rosemary, 1/2 teaspoon dried thyme, 1/4 teaspoon dried sage.

    What you will need to make Italian Meatball Soup:

    • Dutch oven - I love this set and use it all the time. It is perfect for roasts and I especially love it for my one-pot meals.

    Italian Meatball Soup

    Italian Meatball Soup is hearty feel-good soup loaded with pasta, veggies and scrumptious meatballs cooked in a tomato broth. This is a simple recipe prepared in one pot that is ready in just 30 minutes. It doesn't get much easier than that!
    prep time: 20 minscook time: 10 minstotal time: 30 mins

    Ingredients

    • 1 tablespoon extra virgin olive oil
    • 4 carrots, peeled and diced
    • 2 celery ribs, washed and diced
    • 8 cups low sodium beef broth
    • 2 cups water
    • 1 (14.5-oz) can fire-roasted diced tomatoes with garlic
    • 4 tablespoons tomato paste
    • 1/2 pound dry Ditalini pasta (or your favorite pasta)
    • 2 Tbsp fresh chopped Italian parsley
    • 2 Tbsp fresh chopped basil
    Meatballs
    • 1 pound lean ground beef (80-90% lean)
    • 1/2 cup Panko breadcrumbs
    • 1/4 cup fresh shredded Parmesan cheese
    • 1 tablespoon Italian seasoning*
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon kosher salt
    • 1/4 teaspoon fresh cracked black pepper
    • 1 large egg
    • pinch crushed red pepper flakes (optional)

    Instructions

    1. In a large 8 quart pot over medium-high heat, warm olive oil.
    2. Meanwhile, chop the carrots and celery. Add them to the warm pot. Cook vegetables for 1-2 minutes.
    3. Add the beef broth, water, tomatoes and tomato paste. Stir to combine. Cover and bring to a boil.
    4. Meanwhile, combine all meatball ingredients in a large bowl. Mix with hands to combine. Be careful not to over mix or your meatballs will not be tender.
    5. Use a 1 tablespoon scoop to portion, then lightly shape the scoops into meatballs using your hands to roll them. Drop them into the broth, distributing them evenly around the pot. Cover. Allow soup to boil for 5 minutes. Stir meatballs gently, so they do not break apart.
    6. Add pasta. Stir. Cook 10 minutes or until pasta is done. Sprinkle basil and parsley over top, stir and serve.

    Nothing completes a spring/summer meal like a fabulous fruit salad.  I can remember growing up, every summer party had a big ole bowl of fruit salad on the table.

    Picnics, park parties, barbeques, cookouts, and pot lucks: burger, dogs, salads and fruit really make the perfect menu.

    Our fruit salads are always spectacular.  You have to start with a rainbow to fruit.  Start with all my favorite berries; strawberry, blueberry, raspberry, blackberry.

    Then add kiwi, mandarin oranges, cantaloupe... You really can change it out to add your favorites.

    The magic of this fruit salad is the dressing.  I combined the juice of several Mandarin oranges, good honey, lemon juice and a special ingredient: fresh mint (in a mason jar).

    I sealed it up and then shook the living tar out of the jar, which helps bruise the mint and release all of its loveliness into the dressing.

    Shortly before serving, drizzle the dressing over the salad and toss to coat.  OH.MY.GOSH!  The combination of flavors is utterly spectacular.

    The sweet, tart, and coolness from the mint really drive this salad over the top.  This orange honey rainbow fruit salad is like a party for your senses.

    It is the perfect fruit salad to take with you too.  Simply layer it in a bowl with the firmest fruit at the bottom and work your way up.  Carry your dressing separately.

    When you are ready to serve, drizzle the dressing over top and toss to coat. Happy summer and enjoy!

    Orange Honey Rainbow Fruit Salad

    Orange honey rainbow fruit salad recipe is like a party for your senses. The orange honey dressing includes a secret ingredient that brings this salad to life.
    prep time: 30 MINScook time: total time: 30 mins

    Ingredients

    • 1 pound strawberries, quartered
    • 1 (6-ounce) package raspberries
    • 1/2 (6-ounce) package blackberries
    • 1 (6-ounce) package blueberries
    • 1/4 fresh pineapple, cut into bite-size pieces
    • 2 kiwi, sliced
    • 1/4 cantaloupe, cut into bite-size pieces
    • 4 ounces green grapes, halved
    • 1 medium banana, sliced and dipped in lemon juice
    • 4-5 Mandarin oranges, divided
    Sweet Dressing
    • 1/4 cup fresh orange juice (I juiced several Mandarin oranges)
    • 2 tablespoons fresh lemon juice
    • 2 tablespoons good honey
    • 4-10 mint leaves, rough chopped

    Instructions

    1. Combine fruit in a large serving bowl (except bananas).  Set aside.  Combine dressing ingredients in a mason jar.  Shake vigorously to combine (shaking helps get the best flavor out of the mint).
    2. Pour the dressing over the salad shortly before serving.  Gently toss fruit to coat in dressing. Garnish with bananas. Serve and enjoy!

    Or pop them in the microwave.  Packed with sausage & wing flavors these are addictively poppable!  Made with chicken they are light, flavorful and delicious. 

    I have a 'thing' for meatballs, you could even call it love.  I adore them for so many reasons.  Meatballs are limitless, any meat, or no meat.  Any flavor, any style.  Serve them for dinner, game day appetizer, fancy them up for a cocktail party.  There are absolutely no boundaries or rules with meatballs, okay perhaps one rule...

    They should be somewhat round.

    I got the coolest gift from Chad (my amazing husband) for Christmas.  Mind you, all I 'asked for' was a rosemary plant.  He knocked this one out of the park.  He bought me a manual food grinder.  I kind of looked at it funny at first (it had pictures of pasta on it).  I guess it makes pasta too.  Who knew?

    I have been grinding my own meat for about a month and I am addicted.

    I had to try some new meatball recipes with my new found love.  These buffalo chicken meatball poppers are crazy good!!  The flavors are built to taste like chicken sausage and buffalo wings.  The sauce is a must, it really takes these over the top.  You are going to love them. Made with my favorite 1 tablespoon scooper, making them the perfect size and the ultimate appetizer for your Super Bowl Party.  We also love them served for dinner served over a bed of rice.  No matter how you eat them you are going to be crazy for them!!!

    • If you lightly wet your hands the meatballs will form better and crack less.

    What you will need to make Buffalo Chicken Meatball Poppers:

    • Mixing BowlI like a variety of mixing bowls and prep bowls and this set has them all.
    • 1 1/2 tablespoon scoop- Scooper perfect for meatballs, cookies, ice cream for portioning out leftovers! I have had this set for years and use them all the time.
    • Jelly Roll Pans (baking sheets with sides) - used for everything from cookies to roasting, a good baking pan will last for years.

    Yield: makes 90 (1 tablespoon) meatball poppers

    Buffalo Chicken Meatball Poppers

    Buffalo Chicken Meatball Poppers! Seriously. Does your family and friends devour wings? You are going to love this recipe that is perfect for game day AND dinner. I love an easy appetizer and this one is great to make ahead, freeze, defrost and reheat.

    Ingredients

    • 1 pound ground chicken breast
    • 1/2 cups Italian breadcrumbs
    • 1 teaspoon crushed red pepper flakes
    • 1/2 teaspoon cayenne pepper
    • 1 teaspoon poultry seasoning
    • 1/2 teaspoon ground coriander
    • 1 teaspoon garlic powder
    • 1/2 teaspoon ground fennel seed
    • 1 teaspoon kosher salt
    • 1/2 teaspoon fresh cracked black pepper (fine grind)
    • 1 large egg, lightly beaten
    • 2 tablespoons milk
    • 2 tablespoons buffalo hot sauce
    Wing Sauce
    • 1 cup Frank’s buffalo sauce
    • 8 tablespoons (1 stick) unsalted butter
    • 6 tablespoons honey

    Instructions

    1. Preheat oven to 350°F.  Prepare 2 baking sheets by lining with parchment paper.
    2. In a large mixing bowl, combine all ingredients. Mix well, do not over mix or you will have tough meatballs.    Using a 1 tablespoon scoop, scoop out meat and place on baking sheet.  After all meatballs have been scooped onto tray, roll into balls.  TIP:  If you lightly wet your hands the meatballs will form better and crack less.  Bake for 20-25 minutes (for 2 trays).
    3. While meatballs are baking, prepare wing sauce.  In a medium saucepan over medium heat combine all ingredients.  Stir to combine cook until ingredient come together.  About 5 minutes.
    4. Remove meatballs from oven and transfer to sauce and serve.

    Just about three years ago I came across a Dr. Oz show talking about a 7-Day Crash Diet that really piqued my interest.  Dr. Joel Furhman was his guest.

    Helpful Tips to make Skinny Shake:

    • Be sure to layer the ingredients in the blender.
    • Scrape the sides down as often as necessary.
    • Use a high powered blender for best results.
    • If you have a standard blender try using 1/4 fresh strawberries and 3/4 frozen to make blending easier.

    Skinny Shake

    Detox with Skinny Shakes! A tasty smoothie that will knock your socks off. Skinny Shake is a simple recipe for a scrumtious strawberry pomegranate smoothie enjoyed once a day mid morning. I love smoothies and the flavors here are insanely delicious. The entire family loves it and it kick starts fat burning to boot. Sign me up!

    Ingredients

    • 4 cups frozen strawberries
    • 1 cup pomegranate juice
    • 1 cup water
    • juice of 1/2 fresh lemon

    Instructions

    1. Layer ingredients into blender in the order listed.  Blend until smooth.  Scrape down the sides as necessary or use food pusher to help blend.
    2. Serve and enjoy.

    Zucchini is a jack-of-all trades in the food world. Not only is it good for you, but it can fill almost any role, from zucchini noodles to soup to desserts and appetizers.

    My favorite way is probably as an appetizer, as baked zucchini chips are one of my best solutions for easy entertaining.

    Plus, I absolutely love how customizable they are.

    Zucchini Chips


    In fact, the base recipe is how I usually prepare zucchini chips, whether I’m by myself or entertaining the neighbors.

    However, if you’d like a little more kick of flavor, check out some of the common add-ons in the list below. Feel free to add as many (or as little) as you like!

    Flavor options for baked zucchini chips:

    If you love fresh herbs, try adding 1/4 cup fresh chopped basil or oregano to the panko mixture.
    For the garlic fans out there, you can substitute the salt for 1-2 teaspoons of garlic salt.
    If you like a tangy flavor, try drizzling the baked chips with some white vinegar or balsamic  vinegar.
    If you love a little spice, you can dust the top of the chips with paprika or a few red pepper flakes.

    Plus, you can customize this easy appetizer with a variety of dipping sauces.

    Dipping sauces for veggie chips:

    All flavors of ranch (classic, spicy, buttermilk, etc)
    Honey mustard sauce
    BBQ sauce (try my Kansas City BBQ sauce recipe!)
    Cocktail sauce
    Aioli
    Ketchup
    Tzatziki

    I also like that the chips are baked, making them a healthier option than their deep-fried brethren.

    Lately I’ve been whipping up a batch of these veggie chips for our evening TV time. It’s been great to wind down the day with a little entertainment and some guilt-free snacking.

    Recipe Tips for Baked Zucchini:

    • This recipe is written to use 3-4 medium-sized zucchini. If you’re shopping by weight, this should be 1 to 2 pounds of zucchini.
    • If you’d like the panko breading to be dark and crispy, be generous when you spray the baking sheet with cooking spray. 
    Also, before baking, spray the tops of the chips with another dose of cooking spray. This will give them a rich golden color like the one pictured.
    • These are called "chips”, but this is only due to the round shape. The panko breading will add a crispy texture, but the zucchini rounds will be soft once baked. 
    If you’re looking for crispy vegetable chips, search for a recipe where the zucchini is dried in a food dehydrator or cooked in an air fryer.

    Baked Zucchini Chips

    Baked Zucchini Chips are a delicious healthy snack or appetizer. They're perfect for dipping! Make this recipe using your favorite spice blend.

    prep time: 15 mins   cook time: 20 mins   total time: 35 mins

    Ingredients

    • 4 medium zucchini, sliced into 1/4" to 1/2" pieces
    • 3 tablespoons olive oil
    • 1 cup panko bread crumbs
    • 1/3 cup grated Parmesan cheese
    • 1 pinch salt, to taste
    • 1 pinch black pepper, to taste
    • Dipping sauce of your choice

    Instructions

    1. Preheat oven to 450°F. Line two baking sheets with aluminum foil and spray with non-stick cooking spray, then set aside.
    2. Add sliced zucchini to a large bowl and drizzle with olive oil, then toss to coat. Set bowl aside.
    3. In another medium bowl, add panko, Parmesan cheese, salt, and pepper to taste, then mix well.
    4. Add a slice of zucchini to the bowl with panko mix. Use a fork or spatula to gently press the breading on the top side of the zucchini, then flip zucchini and press more panko on the other side. Transfer coated zucchini to prepared baking sheet. Repeat this step until all zucchini are coated, spacing zucchini so that no pieces are touching. If desired, spray breaded zucchini with more cooking spray for a crispier finish.
    5. Bake coated zucchini for 20 to 25 minutes or until zucchini is tender and the panko coating is golden brown in color.
    6. Serve baked zucchini chips immediately with dipping sauce of your choice.
