Soup season is finally here. I cannot tell you how excited I am to see the temperatures fall below 100. I hear we will also see lows of 60's all week, which is pretty incredible for this time of year in Arizona. What I usually do is turn the air up and put on a sweater so I can pretend it's cold. Then I make soup. Lots and lots of scrumptious soup.

Baked Potato Soup is an old family favorite. I have made several different versions and today I am sharing a stovetop method using baked potatoes and all my favorite baked potato fixings.

Of course, this is an excellent soup to use leftover mashed potatoes too. You know, Thanksgiving comes, and we make 20 pounds of mashed potatoes and have a truckload left over. This recipe is the ultimate leftover soup! Check out 'Donna's Notes' below the recipe for details on using leftover mashed potatoes.

This amazing recipe all starts with a pound of bacon, cooked and removed from the pot. Then the entire soup is built on the bacon drippings. Needless to say, it is glorious!

Helpful Tips to make Baked Potato Soup:

  • Half and half is a dairy product found in the US. It is made up of half cream and half milk. You can substitute accordingly or substitute with one of the other. All cream will make the soup richer, and all milk will make it lighter.
  • You can substitute 5-6 cups of smashed/mashed potatoes for the five baked potatoes.

What you will need to make Baked Potato Soup:

  • Dutch oven - I love this set and use it all the time. It is perfect for roasts and I especially love it for my one-pot meals.

Baked Potato Soup

Baked Potato Soup is rich and creamy and has all your favorite potato fixin's cooked right inside this luscious soup. It comes fully loaded with cheese, bacon, and sour cream! This dinner is utterly life changing. This simple recipe is incredibly popular and you are going to love it!

Ingredients

  • 8 slices thick cut bacon 
  • 1 onion, diced 
  • 1/2 cup all-purpose flour 
  • 5 cups chicken stock 
  • 5 russet potatoes, baked, peeled and smashed 
  • 1 teaspoon dried parsley flakes
  • 2 cups half & half 
  • 1 cup sharp cheddar cheese, grated 
  • 1 cup sour cream 
  • salt & pepper to taste 

Instructions

  1. In a large heavy bottom pot (or Dutch oven), cook bacon until crisp; remove bacon from pan with a slotted spoon and place on a plate. Crumble bacon and set aside. 
  2. Cook the onion in the bacon drippings until translucent; sprinkle in flour, stir and cook for one minute, stirring constantly. 
  3. Gradually add chicken stock. Cook the soup, occasionally stirring until thickened and bubbly. Add in the smashed potatoes and bacon. Stir to combine. 
  4. Add parsley and half & half; cook for 10 minutes. 
  5. Add about a cup of hot soup to a small 4 cup bowl. Add sour cream stir to combine. This step will help the sour cream incorporate into the soup without getting lumpy (a great tip from one of our readers). Pour sour cream soup into the pot. Stir in cheese and taste. Add salt and pepper as desired.
  6. Serve and enjoy!

I can prep breakfast the night before and toss it in the oven in the morning. I get to kick back while it is in the oven and the family gets to eat pretty soon after they wake up.

Hearty breakfasts really rock my world! This one is loaded with bacon, sausage and eggs with potatoes and veggies. It is amazing and stress-free, which is right up my alley.That is one of the many reasons I absolutely love love love make ahead breakfasts!

Ingredients

  • 1 pound Jones Dairy Farm Cherrywood Smoked Bacon, cooked and chopped
  • 12 ouncesJones Dairy Farm Breakfast Sausage Rolls
  • 1 (28 ounce) package frozen cubed hash browns with peppers and onions, thawed
  • 2 cups (8-ounces) shredded medium cheddar cheese
  • 12 large eggs
  • 1/2 cup whole milk
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon fresh ground black pepper
  • 1 teaspoon garlic powder

Instructions

  1. Preheat oven to 375°F. Butter a 9x13-inch baking pan.
  2. In a large skillet over medium heat, cook the sausage until browned, crumbling it with a spatula as it cooks.
  3. Add hash browns, sausage, bacon and cheese to the casserole dish. Toss to combine.
  4. In a large bowl combine eggs, milk, garlic, salt and pepper. Whisk until completely combined. Pour the egg mixture over the hash brown mixture.
  5. Bake for 35-40 minutes until a knife inserted in the center comes out clean.

Growing up in Florida I was exposed to a lot of southern food. Of course my Italian family was from New York originally so we had a lot of what I call Brooklyn Italian dishes in my house. My mom made the best sauces, meatballs and all sorts of American-Italian dishes that we all loved and looked forward to.

Being a busy family of 7, our weeknight dinners were the original semi-homemade style that were doctored up to be better than anything you can imagine. But, when it came to the holidays everything was from scratch. That included my favorite part of Thanksgiving dinner: stuffing. My mom always started with fresh sliced bread. Her trick was to toast it in the toaster to make it nice and dry.

That is still my way today, I start with a loaf of bakery bread and cut it up and toast it in the oven. Sourdough is my favorite, but there are so many amazing breads available. Mom never added meat to her stuffing, but I am a huge fan of sausage and bacon. It gives it more dimension and flavor, not to mention I feel better about having a bowl of stuffing for dinner because it has protein and veggies in it.

Knowing that we had such an incredible response to our Sausage, Cranberry and Apple Stuffing last year I knew we really had to knock this recipe out of the park.

The overwhelming response was Cornbread Stuffing and Traditional Herb and Sausage Stuffing. Well, let's say you asked and we answered. We are starting with our traditional stuffing kicked up a notch

It all starts with Jones Dairy Farm amazing all natural pork sausage roll cooked with fresh sage. I love the flavor that fresh herbs bring to this stuffing. The sausage is incredible in this stuffing, but I really couldn't help myself, I had to add some Dry Aged Cherrywood Smoked Bacon and fresh veggies which gave it a fabulous flavor.

You know, I really loved the stuffing we shared with you last year. I mean I ate it for a week, it was so good!

But traditional stuffing is a true comfort food times 10! When stuffing is THIS good, you shouldn't have to wait for a holiday. Let's just call this Sunday stuffing.  Maybe we should start a new trend.

Helpful Tips to make Grandma's Traditional Sausage Herb Stuffing:

  • You can substitute 3 tablespoons chicken base and 3 cups water for the chicken stock.
  • For an extra flavor boost, drizzle drippings from the turkey roasting pan over the top of the stuffing before baking.

What you will need to make Grandma's Traditional Sausage Herb Stuffing:

  • A large skillet with a lid – To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.
  • Jelly Roll Pans (baking sheets with sides) - used for everything from cookies to roasting, a good baking pan will last for years.
  • 9x13 Baking Dish - I have my favorites and this set is one of them. The 9x13 is perfect for casseroles and the smaller size is awesome for making 1/2 a casserole recipe.

Grandma's Traditional Sausage Herb Stuffing

Grandma's Traditional Sausage Herb Stuffing is loaded with with an amazing blend of herbs with sausage, bacon and veggies. It really takes me back to that good ole' down home cookin' that I remember from my childhood. This is THE recipe that you want on your table this Thanksgiving.

Ingredients

  • 1 (16 oz) package Jones Dairy Farm Dry Aged Bacon
  • 1 loaf sourdough bread, cubed (about 10 cups)
  • 1 (12 oz) Jones Dairy Farm All Natural Pork Sausage Roll
  • 4 tablespoons unsalted butter, divided
  • 1 medium yellow onion, diced
  • 1 red bell pepper, cut into 1/2-inch pieces
  • 6 garlic cloves, minced
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons finely chopped fresh sage, divided
  • 1 tablespoon finely chopped fresh rosemary
  • 2 teaspoons chopped fresh thyme
  • 3 cups chicken stock
  • 2 eggs, lightly beaten

Instructions

How to cook Grandma's Traditional Sausage Herb Stuffing

  1. Cook bacon according to package directions. Place cooked bacon on paper towels to drain and cool. Set aside.
  2. Preheat oven to 350°F. Place cubed sourdough on 2 baking sheets. Bake 10-15 minutes, stirring bread occasionally until toasted, but not browned. Place toasted bread cubes into extra large bowl. Set aside.
  3. Butter 9x13-inch casserole dish. Set aside.
  4. In large skillet over medium heat, cook sausage using spatula to break it up as it cooks. Add 2 tablespoons sage. Cook through, but do not brown. Remove sausage from skillet using slotted spoon and add to bowl with bread cubes.
  5. Leave 2 tablespoons of sausage drippings in pan (drain any extra) and add 2 tablespoons butter and garlic to skillet. Cook garlic, stirring frequently, about 2 minutes. Add onion and peppers. Cook until onions are translucent; add remaining herbs, including remaining sage, to skillet. Cook 2 minutes stirring frequently. Add onion herb mixture to the bowl with bread cubes.
  6. Add chicken stock and remaining butter to skillet and scrape browned bits from bottom of pan as it cooks. Bring to a bubble (once you see the first bubbles), remove from heat and pour over bread cubes. Add eggs. Toss gently until combined and pour into prepared baking dish.
  7. Cover with foil and bake 40 minutes. Remove foil and bake 15 minutes more.

Homemade sloppy joes are the ultimate in comfort food. This recipe gives them a kick of Mexican flavor, making them the best ever! This is the perfect easy meal for busy families.

I don’t think anyone will deny the fact that cooking is more enjoyable when the recipes are quick and easy to make.

Being able to get dinner on the table in under 20 minutes is a win for everyone!

This is exactly why I think you’ll love making this homemade sloppy Joe recipe so much.

What makes these the BEST EVER homemade sloppy joes?

  • Quick to make- This dinner is ready to eat in 15 minutes!
  • Budget-friendly- Of course, prices vary depending on your location, but on average, this meal costs $2.00 per serving. You’ll never see those prices at a restaurant!
  • Easy recipe- No rocket science or special ingredients required. If you know how to brown ground beef on your stovetop, you’re all set.
  • Robust flavor- Standard sloppy joes include seasonings of salt, pepper, and ketchup. We use Mexican spices and green chiles to add some zip, without making it too spicy for kids and sensitive stomachs.
  • Homemade! While it’s technically true that homemade sloppy joes and Manwich are the same things, they do NOT taste the same! Canned sauces like Manwich have a lot of sodium and very little seasoning. I think sloppy joes from scratch always taste better.

Ingredients

You won’t need any expensive ingredients to make this recipe, but the boost in flavor is delicious! Here’s what you’ll need:
  • Lean ground beef- You want to have a little fat for flavor and juicy joes; 85 to 88 percent lean is perfect. Using this percentage of fat is great because usually, you won’t need to drain off the grease.
  • Tomato sauce
  • Diced green chiles- I use a whole 7-ounce can but feel free to use less to suit your family’s tastes.
  • Seasonings- A little kosher salt, black pepper, and a Mexican seasoning blend. I have a recipe for homemade Mexican seasoning blend in the recipe card below.
I make up a large batch of Mexican Seasoning Blend (recipe is from our cookbook, The Simple Kitchen, and use it in all of my quick fix Mexican style recipes. But, you can substitute Mrs. Dash Southwest Chipotle Seasoning Blend in a pinch!
  • Buns- Now, part of the fun of homemade sloppy joes is their messy nature. But, you want to be able to hold the sandwich, too! I recommend using buns with some structure, like brioche or sesame seed hamburger buns. Also, toasting the buns helps hold the sandwich together better.
  • Butter- For toasting the buns.

Equipment
  • Skillet- One key to cooking any type of ground meat is to use a skillet large enough to hold the meat without crowding it. I recommend using a skillet that is at least 10 inches in size.
  • Spatula or ground meat chopper
  • Baking sheet- I line a baking sheet with parchment paper and use it to lightly toast the inside of the buns.

Storing and freezing instructions

Homemade sloppy joes mixture freezes well, so this is a great make-ahead meal or meal prep idea. Store the meat (or any leftovers of it) in an airtight container in the refrigerator. It will keep well there for 4 to 5 days. To freeze for later use, first, allow the mixture to cool to room temperature. Then, portion it into zip-top freezer bags or freezer-safe food storage containers. Sloppy joes will keep well in the freezer for about 3 months.

What sides go with sloppy joes?

There are a lot of options when it comes to side dishes to serve with the sandwiches. You can keep things simple by serving a side of potato chips. Or, turn the meal into a complete Mexican fiesta! Here are a few side dish ideas:

How to accommodate special diets Gluten-free- If you need to keep the meal gluten-free, serve the sandwiches on a bed of tortilla chips. I like to top them with Mexican shredded cheese and cilantro.

Low carb- Serve homemade sloppy joes in a bowl, with thin slices of red onion, fresh jalapeno pepper slices, and cilantro leaves. You could even add some shredded cheese and sour cream on top, too!

Best Ever Homemade Sloppy Joes

Homemade sloppy joes are the ultimate in comfort food. This recipe gives them a kick of Mexican flavor, making them the best ever!

ingredients:

  • 2 pounds lean ground beef, (I use 88% lean)
  • 2 teaspoons kosher salt
  • 2 tablespoons Mexican seasoning blend (I use my homemade recipe below)
  • 1 cup tomato sauce
  • 7 ounce can diced green chiles (I use Macayo’s)
  • 1/4 cup water
  • 8 brioche or sesame seed hamburger buns
  • 2 tablespoons butter
  • 1 cup shredded Mexican cheese blend (optional garnish)
  • Handful fresh cilantro (optional garnish)
  • Fritos (optional topping)

instructions:

How to cook Homemade Sloppy Joes

  1. Preheat the oven to 400°F. Split and butter the inside of the brioche buns. Place on a baking sheet lined with parchment paper or aluminum foil, buttered sides up. Set aside.
  2. Warm a large (10”) skillet over medium-high heat. Add ground beef and salt. Cook until cooked through, using a spatula to break up the ground beef as it cooks.
  3. You do not need to brown the meat, nor is it necessary to drain the beef drippings unless the beef is drowning in the drippings. Sprinkle Mexican seasoning over the beef. Stir until well combined.
  4. Bake the hamburger buns in preheated oven for 6-10 minutes until they are lightly golden brown.
  5. Add tomato sauce, diced green chiles, and water. Stir to combine and continue cooking until the sauce thickens up, about 5 minutes.
  6. Sprinkle the buns with a tablespoon or so of cheese and place under the broiler for 1-2 minutes until just melted. Don’t walk away from the oven they can go from melted to burned in a blink.
  7. Spoon a heaping portion of Sloppy Joe on the bottom cheesy buns. Top with a small handful of Fritos and cilantro leaves. Place top cheesy bun on top. Serve and enjoy!

Homemade Mexican Seasoning Blend

YIELD:  2 tablespoons

  • 2 teaspoons New Mexico chile powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano leaves
  • 1/4 tsp crushed red pepper flakes
  • 1/8-1/4 teaspoon cayenne pepper, to taste
DONNA'S NOTES
  1. I make up a large batch of the Mexican Seasoning Blend from our cookbook The Simple Kitchen and use it in all of my quick fix Mexican style recipes that my daughter loves. But, you can substitute Mrs. Dash Southwest Chipotle Seasoning Blend in a pinch!

How do you make bunny bait?

Not only is this recipe great for any spring holiday or event, but it’s also easy to make. However, you do need to be quick, so make sure you have all of your ingredients ready.

To make bunny bait, all you need to do is:
  • Prepare the ingredients, such as popping the popcorn and breaking apart the pretzels.
  • Heat the candy melts and pour them over popcorn, M&M’s, and pretzels.
  • Quickly transfer the coated popcorn to a baking sheet, then decorate with sprinkles.
  • If you’d like, drizzle with more colorful candy melts.
  • Let cool.
  • Break apart and enjoy!

Bunny Bait Funfetti Popcorn

Bunny Bait Funfetti Popcorn is a fun and festive recipe that comes together in 15 minutes. It is perfect for Easter and the kids are going to love it! And the adults too.
prep time: 15 MINScook time: total time: 15 mins

Ingredients

  • 2 cups vanilla candy melts (Wilton, Almond Bark or CandiQuik are great)
  • 8 cups popped popcorn (about 1/2 cup unpopped)
  • 12 ounces pastel M&M's
  • 1 1/2 cups pretzels, each piece broken in half
  • 1/2 cup sprinkles, any festive style
  • 1 cup colorful candy melts, optional

Instructions

  1. Line a large baking sheet (18 x 13 or similar) with parchment paper, then set nearby.
  2. Place popped popcorn in a large mixing bowl, then add M&M’s and pretzels on top.
  3. In a medium bowl, heat vanilla candy melts per package instructions until smooth.
  4. Pour melted vanilla candy over the popcorn mixture, then use a spatula to quickly (but gently!) toss and stir until the candy melts have coated all of the ingredients. Be careful not to stir too long; you don’t want the candy to harden yet.
  5. Transfer coated popcorn mixture to the prepared baking sheet and spread out into an even layer.
  6. While candy melts are still wet, sprinkle with festive sprinkles as desired.
  7. If you’d like to add more color, heat some colorful candy melts and drizzle them on top of the bunny bait.
  8. Let bunny bait dry completely (about 1 hour), then use your hands to gently break it apart into snack-sized pieces.
  9. Bunny bait can be stored at room temperature in sealed bags or a container for up to 5 days.

I made this cake for Christmas last year and my nieces literally picked the pan clean. It is sooo good.

All of my social media networks have been flooded with fall flavors and I tell you cranberries have been screaming at me.  After seeing this cranberry cake on my friend Mary's blog and Taste of Home I had finally had enough.  I had to try it!

I was so excited, at long last Munchkin and I stepped into the kitchen to make this cake.  Just a few ingredients and it came together so fast. Cranberry and almond flavors are bursting out of this moist simple buttery cake that will whisk you away to a winter wonderland.

  • If the almonds start getting too browned, you can tent a piece of aluminum over the pan for the remaining cooking time.

Cranberry Almond Christmas Cake Recipe

Cranberry Christmas Cake has only a handful of ingredients and comes together in a snap! A moist butter cake bursting with flavor it is is bursting out of this moist simple buttery cake it is truly the most perfect holiday cake.
prep time: 10 minscook time: 40 minstotal time: 50 mins

Ingredients

  • 2 cups granulated sugar
  • 3 large eggs, room temperature
  • 3/4 cups unsalted butter, room temperature
  • 1 teaspoon pure almond extract
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 1 (12-ounce) bag fresh cranberries (or frozen and thawed)
  • 1 cup sliced almonds

Instructions

  1. Preheat oven to 350°F.  Butter a 9x13 baking pan.  Set aside.
  2. In a large mixing bowl, beat sugar and eggs for 5 minutes with an electric mixer on medium.  The volume of the mixture will increase by almost half and will be thickened. Do not skip this step. The eggs will work as the leavening the cake needs to rise.
  3. Add butter and extracts and beat for 2 more minutes.  Slowly add flour and beat until combined.  Fold in cranberries.
  4. Using a spatula, pour and smooth into prepared pan.  Sprinkle almonds over top.
  5. Bake for 40-45 minutes until a toothpick comes out clean. Let cool completely before cutting.
  6. Serve and enjoy!
