Literally Zuppa Toscana is "Tuscan soup" or "soup in the style of Tuscany". Seasoned sausage, potatoes and fresh baby kale in a perfectly seasoned rich and creamy broth made this Tuscan-inspired soup a hit from the first bite. I love stick-to-your-ribs kind of soups.

I mean, if I am going to have soup as a meal it needs to feel like a meal. So I upped the fixin’s with big chunks of russet potatoes and lots of tasty Jones sausage!

How to Make Zuppa Toscana

This classic soup can be made on the stovetop, in a crockpot and now we have the easiest version yet, Zuppa Toscana in the Instant Pot.

With this soup, the Zuppa Toscana is built on the sausage. You start out by cooking the sausage, and then build the soup on top of it so it is an incredibly important component. It really makes a difference to start with great sausage!

It comes together in just 20 minutes and starts by sauteing the sausage right in the Instant Pot. Add your seasonings, potatoes and chicken stock. Cook for 8 minutes. Add the cream and kale. Cook for 2 minutes. Serve and enjoy!

Can I freeze Zuppa Toscana Soup

You can freeze this Zuppa Toscana. Make sure you let the soup come to room temperature and pack it up into portion size containers or one large container. Make sure you remember to leave about 1" at the top for expansion.

It is important to note that chunks of potatoes tend to break apart and have a grainy texture when reheated. If you are sensitive to texture you may want to skip freezing this soup.

Can I substitute spinach for the kale?

You can substitute traditional lacinato kale or spinach in this recipe. I love the tenderness of baby kale, so it is my favorite.

Can you make Zuppa Toscana in the Slow Cooker?

You can absolutely make this Zuppa Toscana in the Slow Cooker. Simply cook the sausage on the stovetop. Add the seasonings and stir. Then add the chicken stock to the pot and scrape the bits on the bottom of the pan.

Transfer sausage and broth to your slow cooker and add potatoes. Cover and cook on high for 3-4 hours or low for 6-8 hours. Remove 2 cups of potatoes and mash them. Return mashed potatoes to the slow cooker, add the cream and the baby kale. Stir until kale is wilted.

Helpful Tips to make Instant Pot Zuppa Toscana:

  • You can substitute traditional lacinato kale or spinach in this recipe. I love the tenderness of baby kale, so it is my favorite.
  • We love to serve with shredded Parmesan cheese.

  • Wooden Spatula- I find the best tool for breaking up ground meat is a wooden spatula. Whether I am cooking in a slow cooker, stovetop or in the Instant pot it is my top choice.

Instant Pot Zuppa Toscana (Sausage & Potato Soup)

Instant Pot Zuppa Toscana is the ultimate copycat recipe of the classic Olive Garden soup made quick and easy in a pressure cooker. Sausage, potatoes and fresh kale in a perfectly seasoned rich and creamy broth make this Tuscan Italian-inspired soup a hit from the first bite.

Ingredients:

  • 1 tablespoon extra virgin olive oil
  • 2 (12 ounce) packages No-Sugar All Natural Pork Sausage Roll
  • 1 tablespoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon kosher salt
  • 6 cups chicken stock
  • 6-8 medium russet potatoes, cut into 1/2" cubes
  • 1 cup heavy cream
  • 5 ounces baby kale

Instructions:

  1. Turn the 6-quart Instant Pot to "Saute". Once you can feel the heat when you hold your hand above it, add olive oil and crumble in the sausage.
  2. Cook, stirring occasionally and breaking up the sausage as desired (I like bigger chunks), until the sausage is cooked through, about 3-5 minutes. Drain excess the sausage drippings from the pan (if necessary).
  3. Add the Italian seasoning, onion powder, garlic powder, red pepper flakes and salt. Stir to combine.
  4. Add the potatoes and pour in the chicken stock. Stir to combine and scrape the bits from the bottom of the pot.
  5. Close the lid on the Instant Pot. Select "Manual" setting on the Instant Pot. Turn the pressure to high. Set timer for 8 minutes. Make sure the vent is closed.
  6. When cook time is complete, quick-release pressure according to manufacturer's directions.
  7. Use a slotted spoon to remove 2 cups of potatoes from the pot and place them in a bowl. Mash the potatoes and pour them back into the pot; this will help thicken the soup.
  8. Add the cream and kale to the soup, and stir to combine. Continue cooking the soup until the kale is wilted and tender, about 3 more minutes.
  9. Serve and enjoy!

How to make Cheeseburger Soup

It is the cool season around here.  We are dipping in the 80's in Arizona and that means SOUP!   I have to tell you we have made a ton of soup already and I do not see any stopping in the near future.

So keep your eyes peeled we have a new soup planned each week throughout the cool season and they will knock your socks off.

One of our soups from last year has kind of gone crazy around here. Bacon Cheddar Beer Cheese Soup with Chicken has over 113,000 Pins and is our #2 all time recipe on the site. 

We have had such a fantastic response to the recipe with rave reviews all over Facebook and our site.  We have even eaten it a gazillion times so I decided to mix it up a bit.

I created a soup inspired by one of Chad's favorites.  Chad loves burgers.  No really.  HE LOVES BURGERS.  So this soup was just for him (and all of you of course).

The Bacon Double Cheeseburger Beer Cheese Soup oh my word.  It is a grand slam home run (that means 'flippin' spectacularly fabulously' awesome for you non-baseball fans).  I think if we could eat it breakfast, lunch and dinner we would.

Its loaded with thick cut bacon and seasoned ground beef in the most scrumptious beer cheese soup.  One pot, 30 minutes and you have dinner.  For fun we have been adding croutons, bacon, chopped pickles and other favorite toppings as a garnish.

I have to say the croutons are a must! 30 minutes from prep to plate for this rich creamy delicious soup and I am sure it will be on your menu all winter long.

Bacon Double Cheeseburger Beer Cheese Soup

BACON DOUBLE CHEESEBURGER BEER CHEESE SOUP - Its loaded with thick cut bacon and seasoned ground beef in the most scrumptious beer cheese soup. A one pot 30 minute simple recipe and you have dinner.

Ingredients

  • 12 ounces thick cut bacon, uncooked
  • 1 pound lean ground beef
  • ¼ cup all-purpose flour
  • 1 tablespoon Montreal steak seasoning
  • 2 teaspoons smoked paprika
  • 1 (12 ounce) beer (I used Blue Moon)
  • 4 cups half and half 
  • 16 ounces mild cheddar cheese, shredded
  • croutons, pickles, bacon bits (optional garnishes)

Instructions

  1. Warm an 8 quart pot over high heat.  Using clean scissors; cut bacon into pot.  Cook bacon until lightly crisp, stirring occasionally.
  2. Add beef into pot.  Break beef up with a wooden spoon.  Cook until cooked through, stirring occasionally.  Drain bacon/beef drippings as necessary; only leave about 2 tablespoons of drippings in the pan.  Tip for checking drippings:  Scrape all meat to one side, tip pan.  Drippings will pool on the side.  Use a spoon to remove drippings as necessary.
  3. Stir in flour, seasoning and paprika.  Stir until flour is coated.  Add beer and scrape the bottom of the pot with a spoon to deglaze the pan, allow to cook for 3 minutes. Add half & half.  Stir to combine and bring to a bubble.  Add cheese and stir until cheese is melted.   Allow to simmer until ready to serve, stirring occasionally.
  4. Garnish with croutons, bacon, pickles, whatever you like on your burger.
  5. Enjoy!

Our annual Christmas party is such a blast.  After years of spending all day making the perfect little appetizers and finger foods, I decided last year I was going to simplify.

A crockpot meal is exactly what we needed.  With temperatures in Phoenix dipping into the frigid 60's in December {insert sarcasm}, I thought a warm and hearty chili would be perfect!

This recipe starts with 4 pounds of meat!  That is some hearty chili.  Hot Italian sausage and ground beef create a flavorful chili with kidney and pinto beans cooked in a smoky tomato base.

Add the perfect amount of heat and you have the best ever crockpot chili!

We served this at our Christmas party and our guests devoured it.  We served it with some easy cheese bread and it made the perfect party meal.

No muss, no fuss. An excellent meal to serve at any occasion, prep and step away.  Serve when ready.  This chili will keep on a warm setting for hours.

Freezing:  Cool chili to room temp and fill a freezer safe container 2/3 full with chili.  It freezes for several months.  To serve:  defrost and add water to thin it out as needed.  Reheat and enjoy!

  • Why New Mexico Chile Powder? It has a deep dark reddish brown color and features an earthy, sweet flavor and subtle, spicy heat. It is mildly hot and absolutely perfect in this sauce. It creates a truly authentic flavor! New Mexico Chili Powder can be found in the international aisle in the bulk bags or on Amazon. if you are afraid the heat will be too much you can use half New Mexico Chili Powder and 1/2 regular chili powder.

What you will need to make Simple Crock Pot Chili:

  • Slow Cooker- the slow cooker is almost my most used kitchen appliance, especially during fall/winter! It's just so convenient, and lets face it, it makes comfort food taste even better!
  • New Mexico Chile Powder- This is one of my favorite spices.

Simple Crock Pot Chili

This simple and easy recipe is perfect to feed a crowd! Our HEARTY slow cooker chili is fully loaded; packed with meat, beans and just the right amount of heat to make your tongue tingle. Cooked in your crock pot all day or in just 4 hours. It's up to you, it doesn't get much easier than that!
prep time: 20 minscook time: 4 hour and 10 minstotal time: 4 hours and 30 mins

Ingredients

  • 2 pounds hot Italian sausage, bulk (we used chicken sausage)
  • 2 pounds 93% lean ground beef
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh ground black pepper
  • 3 (14.5 ounce) cans kidney beans, drained and rinsed
  • 3 (14.5 ounce) cans pinto beans, drained and rinsed
  • 3 (28 ounces) cans crushed tomatoes with garlic
  • 1 (4 ounce) can diced jalapenos
  • 2 tablespoons smoked paprika
  • 2 tablespoons New Mexico chili powder
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon ground cinnamon
  • 2 teaspoons ground cumin
  • 1/2-2 teaspoons red pepper flakes (to taste depending on heat preference)
Adapt this recipe for a 5 quart crock pot
  • 1 1/4 pounds hot Italian sausage, bulk (we used chicken sausage)
  • 1 1/4 pounds 93% lean ground beef
  • 3/4 teaspoon kosher salt
  • 3/4 teaspoon fresh ground black pepper
  • 2 (14.5 ounce) cans kidney beans, drained and rinsed
  • 2 (14.5 ounce) cans pinto beans, drained and rinsed
  • 2 (28 ounces) cans crushed tomatoes with garlic
  • 1 (4 ounce) can diced jalapenos

  1. Cook hot sausage in a large skillet over medium heat until cooked through.  Drain drippings and add to a 6 quart crock pot.  Cook beef with salt and pepper in a large skillet over medium heat until cooked through.  Drain drippings and add to a 6 quart crock pot.
  2. Add remaining ingredients.  Stir to combine.  Cook on high 4-5 hours or low 6-8 hours.
  3. Serve and enjoy!

Chicken Alfredo Tortellini Soup

Chicken Alfredo Tortellini Soup is like your favorite chicken Alfredo recipe with vegetables in a rich and velvety soup. It is warm and comforting and utterly happy-dance inducing!

Ingredients

  • 2 tablespoons unsalted butter
  • 1/2 medium yellow onion, diced
  • 4 ounces baby carrots, halved lengthwise and sliced into half-moons
  • 2 cloves garlic, minced
  • 1 pound boneless skinless chicken breasts, cut into bite-size cubes
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup all-purpose flour
  • 4 cups reduced-sodium chicken stock
  • 1 cup half-and-half
  • 1 teaspoon crushed red pepper flakes
  • 9 ounces cheese tortellini, frozen or fresh
  • 2 cups freshly shredded Parmesan cheese
  • 2 ounces fresh baby spinach

Instructions

  1. Warm a large pot over medium-high heat. Once you can feel the heat when you hold your hand 6 inches above the pot, add the butter and let it melt. Add the onion and carrots. Cook the vegetables until the onions are translucent, about 3 minutes. Add the garlic and cook for 30 seconds.
  2. Then add the chicken, salt and pepper. Stir to combine. Cook for 3 minutes, just to get a little color on the chicken, stirring occasionally. Don’t worry about the chicken being cooked through, because we are going to continue cooking it.
  3. Sprinkle the flour over the chicken and veggies. Stir to coat everything and continue cooking for 2 to 3 minutes to cook out the floury taste. Stir in the chicken stock, half-and-half and red pepper flakes. Continue cooking until the soup thickens, 5 to 10 minutes.
  4. Add the tortellini to the pot and cook until al dente (has a bite to it), 5 to 7 minutes (frozen takes longer). Remove the pot from the heat. Sprinkle a handful of cheese over the soup and stir. Once it has melted into the soup, add another handful. Slowly melting the cheese will give the soup a smooth consistency. Taste for seasoning and add salt and pepper as necessary. Pour into
    bowls and garnish with the spinach.

DONNA'S NOTES

  1. To reheat cream or cheese soup, warm it in a pot on the stove top over low heat, stirring frequently. Add milk to loosen the soup. Cheese- or milk-based soups need to be warmed slowly to prevent them from separating or having a grainy texture.

Broccoli-cheese soup takes me back to my childhood. The thought of broccoli florets covered in a thick, rich, cheesy soup still brings a smile to my face.

Honestly, that soup was the only way I would ever voluntarily eat broccoli as a kid.

Looking back I am sure it was the ‘bowl of cheese’ that lured me in, but as an adult, broccoli is my favorite vegetable and cheese is of course still my favorite food. They are a match made in heaven!

The night I developed this dish I realized I had just bought frozen broccoli florets and cheddar cheese and needed a delicious dinner that would be ready in a snap.

I knew right away this was going to turn into the most delicious creation. This incredible one pot soup is packed with chicken, nutty jasmine rice, broccoli and cheese.

Can’t you just smell it? It is so delicious; thick, rich and flavorful. I couldn’t stop eating it. I eventually put the left over bowl in the freezer. It will make a scrumptious lunch!

Ingredients

  • 1 Tbsp extra virgin olive oil
  • 1 lb boneless skinless chicken breast
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon smoked paprika
  • 6 cup chicken stock
  • 1 cup jasmine rice
  • 1 (14-oz) bag broccoli florets, frozen
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 8-oz shredded cheddar cheese (or your favorite cheese)

Instructions

  1. Heat an 8 quart pot over medium high heat. Dice chicken into bite size pieces.
  2. Add olive oil and chicken to pot. Sprinkle pepper and paprika on chicken. Stir. Cook chicken until golden brown, about 5 minutes. Add chicken stock and cover. Bring to a boil.
  3. Add rice and broccoli. Replace cover. Cook until rice is almost tender (al dente), about 8-10 minutes.
  4. Meanwhile, combine butter and flour in a small bowl. Mash with fork until completely combined. Add flour mixture to soup. Stir to combine. Add cheese. Stir and reduce to simmer. Let soup warm while you set the table, about 5 minutes. Soup will thicken while it sits.
