Ingredients
4 slice bacon, chopped
2 Tbsp unsalted butter
1/4 cup all purpose flour
1 cup chicken broth
1 cup half & half
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
pinch ground cayenne pepper
1/2 tsp fresh ground black pepper
8-oz shredded Italian cheese blend
5-oz shredded Parmesan cheese, divided
8-oz pre-cooked chicken, diced
2 cup frozen peas
16-oz box frozen cheese pierogies
1 Tbsp chopped fresh parsley
Instructions
Preheat oven to 400°F.
In a medium sauce pan over medium high heat, cook bacon until crisp. Drain bacon and remove and place on a paper towel to drain. Leave bacon drippings in the pan.
Meanwhile evenly lay pierogies in a baking dish.
Add butter and flour. Whisk to combine. Cook for about 3 minutes to cook out the flour-y taste. Add chicken broth, half & half, garlic, onion, Italian seasoning, cayenne, and pepper. Whisk until combined. Add Italian cheese and about half of Parmesan cheese. Stir to combine. Add frozen peas and chicken. Stir to combine. Bring to a bubble, about 3 minutes.
Pour chicken and cheese mixture over pierogies. Sprinkle remaining parmesan cheese over top.
Bake for 15 minutes until top is bubbly and golden brown.
Remove from oven sprinkle with bacon and parsley. Serve and enjoy!

We tested these at Easter dinner and they completely disappeared. Next year I better make double.
What is the best sausage to use in Cheesy Sausage Scalloped Potatoes?

What is the best potato to use for scalloped potatoes?
When making traditional scalloped potatoes or potatoes au gratin, you really want a starchy potato that will hold up well during baking and such as a Russets or Yukon Golds.
This recipe made with a rich cheese sauce we found that the buttery and slightly sweet atributes of the Yukon Golds make it the perfect potato for this recipe. Not to mention if you want a light and fluffy mashed potato or scrumptious hasselback potato you can't go wrong with Yukon golds!
How do you make Scalloped Potatoes ahead?
Make ahead or freezer scalloped potatoes are easy to prepare. Simply undercook the potatoes by 10-15 minutes. Allow to come to room temperature and freeze. Allow the potatoes to come to room temperature and bake at 350°F for 30 minutes.
How long are scalloped potatoes good for in the fridge?
Properly wrapped in foil, plastic wrap or air tight plastic containers scalloped potatoes will be stay fresh in the fridge for about 3-5 days.
Helpful Tips to make Cheesy Sausage Scalloped Potatoes:
Jones Dairy Farm All Natural Little Pork Sausages add tremendous flavor to this recipe but you can use substitute any of their breakfast sausages by cooking them in a skillet according to the package directions and then continuing with the recipe. You can make this recipe in one 9x13 or split it up into 2 (8-inch x8-inch) or similarly sized pans. I used two 7-inchx10-inch here.

Quality Knives- Quality knives make prep time much quicker and are important for safety as well. If you make one kitchen investment, I believe it should be in quality knives.

ingredients:
1 (12 ounce) package Jones Dairy Farm All Natural Little Pork Sausages
Preheat oven to 400°F. Butter a 9x13 baking dish. Set aside.
In a large (10 inch) skillet cook pork sausage links uncovered over medium-high heat with 5 tablespoons of water for 6 minutes. Uncover and continue cooking for 2 minutes, until golden brown, turning frequently. Transfer sausage to a small cutting board and allow to cool. Once cool, slice sausage into coins.
Meanwhile: add butter to the skillet and cook until completely melted. Add garlic and cook for 1 minute. Add flour and whisk for about 2 minutes to cook out the 'flour-y' taste.
Slowly pour milk into the skillet while whisking constantly. Use the whisk to scrape up the browned bits on the bottom of the skillet. Continue to whisk occasionally until bubble start to break on the top, allowing the mixture to start to thicken, about 2-3 minutes.
Reduce heat to low and slowly sprinkle in Parmesan cheese, salt and pepper. Whisk until completely melted and smooth, about 1 minute. Set aside.
Arrange a layer of potatoes in the baking dish (use about half of your slices). Then pour half of the cheese sauce over the potatoes. Sprinkle half of the remaining cheese over top of the sauce. Sprinkle 1/2 of the sausage coins over the cheese.
Spread the remaining potato slices over the cheese. Add the remaining cheese sauce. Sprinkle the remaining sausage coins over top of the cheese sauce. Top the sausage coins with the remaining cheese.
Cover the baking dish with aluminium foil and bake for 30 minutes. Remove foil and continue baking for another 30 minutes, or until potatoes are cooked through and tender. Total cook time is 60 minutes.
Garnish with chives. Serve and enjoy!

Ingredients
8 Tbsp cold unsalted butter, divided
4 Tbsp all-purpose flour, divided
1/4 tsp poultry seasoning
1/4 tsp onion powder
1/4 tsp garlic powder
1/2 tsp kosher salt
1/2 tsp fresh ground black pepper
1/2 cup milk
1 cup low-sodium chicken broth, divided
1/2 cup chopped onions
1 (26 oz) package frozen shredded hash browns
1 (8 oz) package shredded colby cheese
Instructions
How to cook Cracker Barrel Copycat Hash Brown Casserole
Preheat oven to 375 °F.
In medium sized saucepan, over medium heat, melt 2 tablespoons butter. Once butter is melted add 2 tablespoons flour and all seasonings. Whisk to create a paste. Add milk, whisking as you pour. Whisk until completely combined.
In a quart sized mason jar combine 2 tablespoons flour and chicken broth. Seal tightly and shake the living tar out of your mixture. You will create a smooth flour mixture for thickening your sauce called a slurry.
Slowly pour slurry into mixture, whisking constantly. Bring to a boil and cook 2 minutes, stirring constantly.
Pour soup into 9x13 casserole dish. Add remaining 6 tablespoons butter and onions. Stir until butter is melted. This will also start to cool your soup. Add cheese and frozen hash browns. Mix well with a spoon.
Bake 25 minutes or until the top is golden brown.
Serve and enjoy!
DONNA'S NOTES
If desired you can sprinkle the top of the casserole with additional cheese for the last 10 minutes of cook time.
You can also divide this recipe into 2 8×8 casserole dishes.

Layer upon layer of corn tortillas, bacon, and gooey cheese are all inside of this scrumptious breakfast lasagna.
To save time, you can make it ahead. Then, just pop it in the oven when you wake up in the morning!
Another delicious egg and sausage casserole recipe that you should try is an Overnight Cheesy Breakfast Casserole. It combines all your favorite morning flavors over a layer of buttery biscuits.
Assemble everything, then cover and refrigerate overnight. Then, allow the casserole to sit on the counter for about 30 minutes before baking as directed.
Handling peppers safely
It’s always a good idea to wear gloves when handling jalapeños, especially when deveining and chopping.
The oils in the peppers can cause irritations to the eyes and skin, and soap and water don’t always remove them all.

1 (16 oz) package Jones Dairy Farm Dry Aged Bacon, cooked and cut into bite-sized pieces
8 ounces pepper jack cheese, shredded
8 ounces medium cheddar cheese, shredded
1/4 cup fresh cilantro, chopped
Instructions
Preheat oven to 350°F. Spray 9x13-inch baking pan with non-stick spray.
In large bowl combine eggs and milk. Sprinkle chili powder, cumin and salt over the bowl while whisking to prevent large clumps from forming. Whisk until completely combined.
In medium bowl combine tomatoes, onion, jalapeno and garlic. Toss to combine.
Line bottom of prepared baking pan with 4 corn tortillas, overlapping if necessary. Top tortillas with 1/4 of tomato mixture, 1/4 of bacon and 1/4 of each cheese. Repeat layers 2 more times beginning with 4 tortillas and ending with cheeses.
Pour egg mixture over casserole.
Bake uncovered for 40-50 minutes, or until a knife inserted in center comes out clean. Top with remaining cheese and broil until melted, about 2 minutes.
Sprinkle remaining tomato salsa and bacon over top and garnish with cilantro. Serve and enjoy!
To Make Ahead:
Refrigerate overnight. Allow casserole to sit on counter for about 30 minutes before baking.
