I love desserts that I can justify calling a salad and this Strawberry Pineapple Ambrosia salad is no exception! When I’m at a potluck I always wonder if I should leave the fruity salads off my plate until I’m ready for dessert, but I usually can’t wait. I mean it is called a salad, after all. I guess I can just be grateful that I live in a world where dessert salads exist.

This Strawberry Pineapple Ambrosia Salad is studded with fresh strawberries and pineapple that takes this vintage salad to a whole new level. I absolutely love the contrast that the fresh fruit adds!


It also has mandarin oranges, crushed pineapple, shredded coconut, cool whip, sour cream and marshmallows! If you think marshmallows don’t belong in salads, think again! They add a texture you can’t find anywhere else and I think you’ll love it. Some of my favorite marshmallow salads (outside of this Ambrosia salad) are Raspberry Oreo Fluff and Cranberry Fluff Salad.

Helpful Tips to make Strawberry Pineapple Ambrosia Salad:

  • Make sure to drain the mandarin oranges and crushed pineapple really well. I like to place them in a colander first thing and let them drain over a bowl until I’m ready.  Getting as much juice drained off of them as you can will ensure a nice, fluffy salad that isn’t bogged down with extra juice. 
  • Use full-fat Cool Whip and Sour Cream. Fresh pineapple has an enzyme in it that breaks down certain foods like fat free cool whip and sour cream. If used, these fat free products will curdle and not have the same texture as their full-fat friends. 
  • Mix gently. Mandarin oranges are particularly fragile and while still tasty, the salad won’t look as pretty if the oranges are broken up.
  • You can substitute homemade whipped cream for the cool whip. Combine heavy cream, 1/4 cup powdered sugar and 1 teaspoon vanilla extract. Beat with an electric mixer until stiff peaks form.

  • Mesh Colander - Draining the canned fruit well is essential to a nice, fluffy salad and a good colander will make short work of that.
  • Silicone Spatula - A sturdy silicone spatula will make mixing this salad thoroughly and gently a breeze.
  • Pineapple Corer/Peeler- We eat a lot of fresh pineapple in my house and I love this little gadget! It makes cutting a pineapple so quick and easy!

Strawberry Pineapple Ambrosia Salad

Strawberry Pineapple Ambrosia Salad is a vintage recipe made modern with the addition of fresh strawberries and pineapple. It’s cool, creamy, tangy, and the perfect addition to the summer potluck table!

Ingredients

  • 8 ounces full fat cool whip
  • 1/2 cup full fat sour cream
  • 1 tablespoon vanilla extract
  • 1 tablespoon lemon juice
  • 20 ounces crushed pineapple, well drained
  • ½ cup sweetened shredded coconut
  • 2 cups fresh strawberries, quartered
  • 1 tablespoon sugar
  • 2 cups fresh pineapple, peeled, cored and cut into bite-sized pieces
  • 11 ounces mandarin oranges, well drained
  • 10 ounces mini marshmallows

Instructions

  1. In a large bowl whisk together cool whip, sour cream, vanilla extract and lemon juice. Fold in crushed pineapple and coconut until well combined.
  2. In a small bowl combine strawberries with sugar and allow to sit for 5 minutes. Drain off excess liquid and add strawberries to the salad.
  3. Add and fold fresh pineapple, mandarin oranges and marshmallows into the bowl, mixing until all ingredients are combined.
  4. Cover and refrigerate for at least 1 hour before serving.

  • Make it ahead of time! This pasta salad tastes best after sitting in the fridge overnight. It really allows the flavors to meddle well, and is also a great way to grab and go with it when you need it!
  • Add a sprinkle of salt to the water when cooking your pasta to give it a little more flavor!
  • Bleu cheese would be a great substitute for the cheddar cheese in this chicken bacon ranch pasta salad.
  • Cook your bacon in the oven to keep your stove top clean of all those splatters and to get it perfectly crispy.
  • Use leftover rotisserie chicken instead of cooking your own chicken to save yourself some dishes, and some time!

  • Strainer- You can't make pasta without a good strainer. Use it to drain the water from your pasta before mixing it with the other ingredients.
  • Mixing bowl with a lid- Since this pasta salad is best if made in advanced, store it a way in your fridge with a bowl and lid combo that keeps it tightly fastened and perfect for traveling to your party.

Chicken Bacon Ranch Pasta Salad

Chicken Bacon Ranch Pasta Salad is the consummate pasta salad, loaded with fresh ingredients and it's bursting with flavor. It’s perfect for a summer BBQ or Potluck!
prep time: 15 MINScook time: 15 MINStotal time: 30 mins

Ingredients

  • 16 ounces medium shell pasta
  • 2 large chicken breasts (or about 2 cups previously cooked chicken)
  • salt and pepper, to taste
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup milk
  • 3 tablespoons Ranch dressing mix (or 1 1oz ranch dressing mix packet)
  • 1/4 teaspoon garlic powder
  • 1 cup chopped Roma tomatoes
  • 2 cups cubed cheddar cheese
  • 1/3 cup sliced green onions (about 4 stalks)
  • 1 (2.25-ounce) can sliced olives, drained
  • 8 slices of bacon, cooked and crumbled

Instructions

  1. Bring a large pot of water to boil and cook your pasta according to package directions. Drain and rinse the pasta with cold water when done.
  2. Meanwhile; saute chicken breasts in a pan over medium-high heat, seasoned with salt and pepper, flipping after about 5 minutes. Cook until internal temperature of the chicken reaches 165 degrees. Allow to rest for 10 minutes before dicing.
  3. In a medium bowl (or mason jar), combine sour cream, mayonnaise, milk, ranch dressing mix and garlic powder. Stir together till smooth. Set aside.
  4. In a large bowl, combine cooked pasta, chicken, diced tomato, cheese cubes, green onions, olives and bacon. Stir together to combine.
  5. Cover and place in the fridge for 2 hours (or more) before serving.

No barbecue is complete without a side of potato salad, but to be honest, I have never been a huge fan of the classic potato salad that has eggs and mayonnaise. There had to be a potato salad that wasn't coated in mayonnaise and there is- German Potato Salad!

What is German Potato Salad?

German Potato Salad is a side dish consisting of diced red potatoes, bacon, and onions.

Rather than being tossed in eggs and mayonnaise like the classic American version, the potatoes are tossed in a warm sauce made up of bacon grease, red onion, and vinegar.

This German Potato Salad can be served cold but unlike the classic potato salad, this potato salad is very good warm and often served that way.

This is the perfect side dish for your bacon loving friends and those who detest mayonnaise.

Helpful Tips to make German Potato Salad:

  • Cook the bacon over medium heat. You want to render the fat so you need to cook it slowly. Once the bacon is nice and crisp, spoon it out with a slotted spoon onto a paper towel lined plate. You want to leave all the grease in the pan for cooking the onions.
  • Dice your potatoes before cooking. Trying to cut scorching hot cooked potatoes is not very fun.
  • Pour the dressing over the potatoes while they are still warm. Warm potatoes are able to absorb the dressing so that they take on all the flavors. When the potatoes are cold they somewhat repel the dressing.
  • For a more beautiful presentation, reserve a couple tablespoons cooked bacon, and tablespoon of onion and parsley each to sprinkle on top after mixing everything together.
  • If transporting this to a party, I suggest mixing the bacon in right before serving so that it doesn't lose all its crispiness. That is half of what makes bacon so delicious, am I right?

What you will need to make German Potato Salad:

  • 12 inch Non-Stick Skillet-I use this pan every single day. It's great for cooking eggs, sandwiches, sauces, pancakes, bacon... everything! If you only have one pan in your house, this should be it!
  • Glass Mixing Bowls with Lids- I love these bowls because they're great for food preparation and also for storing and transporting food. I love that they are microwave and dishwasher safe and that I can stack things on top of them in the fridge.
  • 4-Quart Sauce Pan- This is the perfect size pot for boiling potatoes, pasta, sauces... Every kitchen needs a good quality sauce pan.

German Potato Salad

German Potato Salad is a must have barbecue side dish that comes together quickly and can be eaten hot or cold. This bacon loaded salad has NO mayonnaise but instead is tossed in a vinegar oil dressing.

Ingredients

  • 2 pounds red potatoes diced
  • 1/2 pound bacon diced
  • 1 red onion chopped
  • 1/2 cup apple cider vinegar
  • 1 tablespoon dijon mustard
  • 2 tablespoons olive oil
  • salt & pepper
  • 6 green onions sliced
  • 1/4 cup flat leaf parsley chopped

Instructions

  1. Place potatoes in a medium size pot and cover with cold water and bring to a boil. Cook for about 10 minutes until tender. Drain and place in a large bowl.
  2. Meanwhile, cook the bacon in a fry pan until crispy. Remove with a slotted spoon onto a paper towel lined plate. Add the onions to the bacon grease and cook for 3 minutes. Add the vinegar and mustard and cook for another 2 minutes. Remove from heat, mix in the oil, and pour over the warm potatoes. 
  3. Season with salt and pepper. Add the green onions, parsley, and cooked bacon. Toss it all together and serve. This dish can be serve hot, room temperature, or cold.

Its a very simple salad, but completely full of fresh summer flavor.

While I was never sure what they used in their dressing, I opted to make a light, tangy dressing of basil, vinegar and a touch of dijon mustard.

Helpful Tips to make Summer Vegetable Salad:

  • This recipe is good for almost anything you have around. In this version, I used grape tomatoes, corn, red onion and cucumber, but yellow squash, zucchini, etc also work.
  • To make the corn, my favorite trick is to microwave the ears still in the husk for six minutes. Use a sharp kitchen knife to slice off the end of the cob- close to the base. Carefully slide the corn out of the husk- no shucking required and NO stray corn silk!

Summer Vegetable Salad

Garden overflowing? Go a little crazy at the farmer’s market? Use up summer’s bounty to create this fresh, crunchy summer salad in no time at all!

Ingredients

  • 1 pint grape tomatoes, halved
  • 2 cucumbers, quartered lengthwise 
  • 1 red onion, halved and thinly sliced
  • 2 ears sweet corn, steamed (see note above) and removed from cob
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoon red wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon dijon mustard
  • Salt and pepper

Instructions

  1. In a large bowl, add the tomatoes, cucumbers, onion and corn.
  2. In a separate small bowl, add the vinegar, oil, mustard and basil. Season with salt and pepper, then whisk together with a fork until emulsified.
  3. Pour the dressing over the vegetables and gently toss until evenly coated.

Are you looking for the perfect side dish?  I have been dreaming of a side dish so insanely divine that I would need to build a meal around it.  

Loaded with bacon, beer and cheese I am pretty sure this is it!!!  Even though I am not a big beer drinker (I would much rather sip on a glass of merlot) I really love the flavor beer gives to a dish when cooked with it.

We have had many bacon cheese loves in our food experience.  But, none have come so close to perfection. 

These potatoes are rich, creamy, tender, bacony, cheesy and boast a lovely flavor from the beer.  You are printing this recipe out...  Right?  You have to try this.

So, back to this story... I thought I was just about to the point of side dish perfection with the Bacon Cheddar Hasselback Potatoes

It was so close, but just a tiny bit short of being the consummate side.  (I think if it had beer in it, I would have flipped though).

So here we are, a traditional potatoes au gratin turned into a heavenly Bacon Cheddar Beer Potatoes Au Gratin.  Did you flinch?  Bacon, cheddar and beer with potatoes?

Oh yes there is nothing light about this dish.  It is intentionally rich and decadent.  Lighten the guilt, serve it with a side salad.

  • 1/4 cup butter

  • 1/2 cup beer, Belgian style wheat beer (Blue Moon)
  • 1/2 cup reduced sodium chicken broth*
  • 8 ounces mild cheddar cheese, shredded
  • 3/4 cup half-and-half
  • 1 cup whole milk
  • 1 teaspoon Worcestershire sauce
  • 24 ounces bacon, cooked, drained and chopped
  • 3 pounds red potatoes, sliced thin

Instructions

  1. Move rack to center of oven and preheat oven to 350°F.
  2. In a medium saucepan over medium-low heat, melt butter.  Add flour and whisk; allow flour to cook for 2-3 minutes to cook out the ‘floury’ taste.  Add garlic, chile, paprika, salt, and pepper.  Whisk to combine.
  3. Slowly add beer, chicken, and, half-and-half.  Whisk until there are no lumps.  Add cheese and whisk constantly until you have a smooth mixture.  Add milk and Worcestershire.  Reduce heat to low.
  4. Butter a 3 quart casserole dish.  Layer potatoes in casserole dish, topping each layer with about ½ cup of cheese sauce.  Halfway through add half of chopped bacon on top of cheese layer.  Continue layering cheese sauce and potatoes.  Reserve the remaining bacon.
  5. Bake for 70-90 minutes, until potatoes are tender.  Top with remaining bacon for the last 10 minutes of cook time.  Allow potatoes to rest for 20 minutes before serving to thicken up. 
  6. Serve and enjoy!

DONNA'S NOTES

  1. *If you do not have chicken broth, you can heat ½ cup water and 1/2 teaspoon chicken bouillon to substitute.
