Homemade Sloppy Joes

Homemade sloppy joes are the ultimate in comfort food. This recipe gives them a kick of Mexican flavor, making them the best ever! This is the perfect easy meal for busy families.

I don’t think anyone will deny the fact that cooking is more enjoyable when the recipes are quick and easy to make.

What makes these the BEST EVER homemade sloppy joes?

  • Quick to make- This dinner is ready to eat in 15 minutes!
  • Budget-friendly- Of course, prices vary depending on your location, but on average, this meal costs $2.00 per serving. You’ll never see those prices at a restaurant!
  • Easy recipe- No rocket science or special ingredients required. If you know how to brown ground beef on your stovetop, you’re all set.
  • Robust flavor- Standard sloppy joes include seasonings of salt, pepper, and ketchup. We use Mexican spices and green chiles to add some zip, without making it too spicy for kids and sensitive stomachs.
  • Homemade! While it’s technically true that homemade sloppy joes and Manwich are the same things, they do NOT taste the same! Canned sauces like Manwich have a lot of sodium and very little seasoning. I think sloppy joes from scratch always taste better.

Ingredients

You won’t need any expensive ingredients to make this recipe, but the boost in flavor is delicious! Here’s what you’ll need:
  • Lean ground beef- You want to have a little fat for flavor and juicy joes; 85 to 88 percent lean is perfect. Using this percentage of fat is great because usually, you won’t need to drain off the grease.
  • Tomato sauce
  • Diced green chiles- I use a whole 7-ounce can but feel free to use less to suit your family’s tastes.
  • Seasonings- A little kosher salt, black pepper, and a Mexican seasoning blend. I have a recipe for homemade Mexican seasoning blend in the recipe card below.
I make up a large batch of Mexican Seasoning Blend (recipe is from our cookbook, The Simple Kitchen, and use it in all of my quick fix Mexican style recipes. But, you can substitute Mrs. Dash Southwest Chipotle Seasoning Blend in a pinch!
  • Buns- Now, part of the fun of homemade sloppy joes is their messy nature. But, you want to be able to hold the sandwich, too! I recommend using buns with some structure, like brioche or sesame seed hamburger buns. Also, toasting the buns helps hold the sandwich together better.
  • Butter- For toasting the buns.

Equipment
  • Skillet- One key to cooking any type of ground meat is to use a skillet large enough to hold the meat without crowding it. I recommend using a skillet that is at least 10 inches in size.
  • Spatula or ground meat chopper
  • Baking sheet- I line a baking sheet with parchment paper and use it to lightly toast the inside of the buns.

Storing and freezing instructions

Homemade sloppy joes mixture freezes well, so this is a great make-ahead meal or meal prep idea. Store the meat (or any leftovers of it) in an airtight container in the refrigerator. It will keep well there for 4 to 5 days. To freeze for later use, first, allow the mixture to cool to room temperature. Then, portion it into zip-top freezer bags or freezer-safe food storage containers. Sloppy joes will keep well in the freezer for about 3 months.

What sides go with sloppy joes?

There are a lot of options when it comes to side dishes to serve with the sandwiches. You can keep things simple by serving a side of potato chips. Or, turn the meal into a complete Mexican fiesta! Here are a few side dish ideas:

How to accommodate special diets Gluten-free- If you need to keep the meal gluten-free, serve the sandwiches on a bed of tortilla chips. I like to top them with Mexican shredded cheese and cilantro.

Low carb- Serve homemade sloppy joes in a bowl, with thin slices of red onion, fresh jalapeno pepper slices, and cilantro leaves. You could even add some shredded cheese and sour cream on top, too!

Best Ever Homemade Sloppy Joes

Homemade sloppy joes are the ultimate in comfort food. This recipe gives them a kick of Mexican flavor, making them the best ever!
prep time: 5 Mcook time: 10 Mtotal time: 15 M

ingredients:

  • 2 pounds lean ground beef, (I use 88% lean)
  • 2 teaspoons kosher salt
  • 2 tablespoons Mexican seasoning blend (I use my homemade recipe below)
  • 1 cup tomato sauce
  • 7 ounce can diced green chiles (I use Macayo’s)
  • 1/4 cup water
  • 8 brioche or sesame seed hamburger buns
  • 2 tablespoons butter
  • 1 cup shredded Mexican cheese blend (optional garnish)
  • Handful fresh cilantro (optional garnish)
  • Fritos (optional topping)

How to cook Homemade Sloppy Joes

  1. Preheat the oven to 400°F. Split and butter the inside of the brioche buns. Place on a baking sheet lined with parchment paper or aluminum foil, buttered sides up. Set aside.
  2. Warm a large (10”) skillet over medium-high heat. Add ground beef and salt. Cook until cooked through, using a spatula to break up the ground beef as it cooks.
  3. You do not need to brown the meat, nor is it necessary to drain the beef drippings unless the beef is drowning in the drippings. Sprinkle Mexican seasoning over the beef. Stir until well combined.
  4. Bake the hamburger buns in preheated oven for 6-10 minutes until they are lightly golden brown.
  5. Add tomato sauce, diced green chiles, and water. Stir to combine and continue cooking until the sauce thickens up, about 5 minutes.
  6. Sprinkle the buns with a tablespoon or so of cheese and place under the broiler for 1-2 minutes until just melted. Don’t walk away from the oven they can go from melted to burned in a blink.
  7. Spoon a heaping portion of Sloppy Joe on the bottom cheesy buns. Top with a small handful of Fritos and cilantro leaves. Place top cheesy bun on top. Serve and enjoy!

Homemade Mexican Seasoning Blend

YIELD:  2 tablespoons

  • 2 teaspoons New Mexico chile powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano leaves
  • 1/4 tsp crushed red pepper flakes
  • 1/8-1/4 teaspoon cayenne pepper, to taste
DONNA'S NOTES
  1. I make up a large batch of the Mexican Seasoning Blend from our cookbook The Simple Kitchen and use it in all of my quick fix Mexican style recipes that my daughter loves. But, you can substitute Mrs. Dash Southwest Chipotle Seasoning Blend in a pinch!
  2. How to freeze Mexican Sloppy Joe. Bring to room temperature and portion into freezer bags or freezer safe containers.
  3. Sloppy Joes in an airtight container keep for 3-4 days.
  4. Serving tips: For a gluten-free option, serve on a bed of tortilla chips topped with Mexican shredded cheese and cilantro. Or serve in a bowl garnished with thin slices of red onion, thin sliced fresh jalapeno peppers and cilantro leaves.

10-Minute Italian Zucchini Noodle Skillet with Sausage

This amazingly simple Italian skillet recipe comes together in just 10 minutes with 5 real ingredients, all in one skillet. FINALLY, a dinner you can feel good about feeding your family and still have enough time to enjoy your evening.

I have wanted to start adding zucchini to our meals for quite some time now. But, I have not really worked with zucchini much, except adding it to meatballs and in a roasted pasta salad so, I was a little intimidated.

You know you have seen them everywhere: zoodles, voodles, zucchini noodles... whatever you call them, I wanted them. I even researched different methods of making zucchini noodles. In case you are wondering, there are several methods:

Box Grater - Lay a box grater on its side, using the largest size and carefully shred zucchini along the box grater ( the long side of the zucchini against the grater). Use a kitchen towel to hold the zucchini.

Julienne peeler or Mandoline with julienne attachment - Cut off the stem. Press the julienne peeler at the top of the zucchini and peel it from top to bottom, rotating the zucchini to peel all four sides. Stop once you get to the seeds.

After trying these methods, which are good, but just not quite spaghetti shaped. I decided to go ahead and order The Spiralizer. It makes perfectly shaped vegetable spaghetti. SCORE! It's my new favorite kitchen tool, and I literally spiralize everything (well a lot of vegetables anyway).

So spiralizer in hand, I have been keeping my eye out for something that looked delicious and simple, but nothing really piqued my attention. So, one day for lunch I decided to make a quick onion and sausage skillet, and as I was putting it together it evolved into the most magnificent creation ever!

It all starts with thinly sliced onions, juicy tomatoes and Italian sausage. I buy the fully cooked organic sweet Italian chicken sausage from Costco. It is amazing. The sausage lends so much flavor that the only seasoning you will need to add is salt and pepper. The grape tomatoes help create a magnificent sauce (look at the next photo) for this dish. The zucchini is cooked just until it is al dente and it is topped with Parmesan cheese.

I seriously ate this every day for lunch for three weeks. I made a single portion each day because I like the zucchini al dente, and it will be tender if you reheat it. I know you are going to love it! It is so amazing I even made this meal for a friend that was having a tough day last week. It took me 10 minutes, and it made her night easier. Can't ask for much more than that.

  • For a single portion, cut the recipe by 1/4, cook on medium heat and use a smaller skillet (I like my medium (10")  skillet for this recipe).
  • To make this a stress-free recipe you can prep the ingredients ahead of time. It will take an extra 5 minutes, but if you are a newer cook, it will go much smoother.

10-Minute Italian Zucchini Noodle Skillet with Sausage

This amazingly simple Italian skillet recipe comes together in just 10 minutes with 5 real ingredients, all in one skillet. FINALLY a dinner you can feel good about feeding your family and still have enough time to enjoy your evening. Italian Sausage and Zucchini Noodle Skillet is my new favorite with oodles and oodles of zoodles (zucchini noodles)!

Ingredients

  • 2 tablespoons coconut oil (or olive oil)
  • 1 medium yellow onion, thin sliced
  • 1-pint grape tomatoes, sliced in half
  • 4 fully cooked Italian sausage links, sliced into coins
  • 4 medium zucchini, (or 3 large)
  • 2 ounces fresh Parmesan cheese, shredded
  • salt and pepper (to taste)

Instructions

  1. Warm a large skillet over medium-high heat. Once you can feel the heat from 6" above the pan, add oil.
  2. Meanwhile: cut the onion in half and peel the outer layer. Slice the onion into thin strips. Toss onion slices in the pan when it's ready. Sprinkle with salt and pepper (about 1/4 teaspoon of each).
  3. Meanwhile:  Rinse tomatoes and slice in half. I recommend this tomato slicing tip to make quick work. Cut sausage into coins.
  4. Once the onions are beginning to look translucent, add tomatoes and sausage. Add salt and pepper (about 1/4 teaspoon each). Your tomatoes will begin to release their juices, and it will collect in the pan, once you see the tomato juice, you are ready to add zucchini.
  5. Meanwhile: Wash zucchini and make zucchini noodles (see above for options on making the noodles).
  6. Add zucchini noodles to skillet. Add salt (about 1/2 teaspoon). Use tongs to toss and coat zucchini. Cook until desired texture is reached. I like mine like al dente pasta, about 3 minutes.
  7. Taste. Season with salt and pepper as necessary.
  8. Shred Parmesan cheese over the skillet. Serve and enjoy!

Chad and I have really caught this travel bug. It is actually funny because we are the type of people that enjoy 'home life' so much.

We generally prefer eating at home over eating out. Entertaining at home is our favorite way to get together with friends.

But, for the last few months, we can't seem to get enough of traveling and touring the best food each city has to offer. It has been amazing.

And the bug has bitten us again so we are working extra hard so we can take a few days off to head to Sedona. Have you ever been?

We are going to catch a glimpse of what fall really looks like. We only have 2 seasons in Phoenix: hibernating season and tourist season, and neither of them offers pretty colored trees.

Of course in the hub bub of getting ready for the trip, Lazy Day cooking is king!

Easy Sloppy Joes

  • 1 pound lean ground beef
  • 1 1/4 cups ketchup 
  • 1 tablespoon tomato paste
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon coarse ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 6 hamburger buns

Instructions

  1. Cook ground beef, in a 10" skillet over medium-high heat. Drain any excess liquid. Add remaining ingredients. Add 1/4 cup water. Stir until combined. Cover and reduce temperature to simmer, for 5 minutes. Remove cover and stir.
  2. Serve sloppy Joe mixture on hamburger buns and enjoy!

Cajun Shrimp Pasta Recipe Tips

  • To quickly defrost, place the one pound frozen shrimp in a fine-mesh sieve or colander.  Place this sieve in a large bowl of cold tap water for 10 minutes.

  • After 10 minutes, replace the water in the bowl with new cold tap water and resubmerge the shrimp.  Let shrimp sit an additional 10- 20 minutes.  Now, it's time to make your Cajun Shrimp Pasta.

  • The easier way to defrost your shrimp is to remove your frozen shrimp to a covered bowl and let them defrost in the refrigerator overnight.

  • Cook your shrimp with the tails on because the tail shells contain flavor that seeps out and we get more robust shrimp flavor.  You can remove the tails from cooked and resting shrimp.

  • The spice level for this Cajun Shrimp Pasta recipe is customizable.  I find 2 tablespoons Cajun seasoning and 1/4 teaspoon cayenne pepper to be on the spicy side as you would expect from a Cajun pasta.   To customize the heat level, add 1 tablespoon Cajun seasoning to the shrimp then add 1-3 teaspoons Cajun seasoning. If you don’t like heat and want this very kid-friendly, omit the cayenne pepper. 

  • If you aren’t sure how much Cajun seasoning to use then start with less then add more to taste at the end of cooking because you can always add more heat but it is hard to take away!

  • Add reserved pasta water or heavy cream after you stir the pasta, shrimp, veggies, and sauce together until you reach the consistency you prefer.  For an extra decadent pasta, add additional heavy cream.

  • Garnishing your individual servings of pasta with freshly grated Parmesan, lime juice, and fresh parsley enhances the flavors and takes this pasta to a whole new level!

Frequently asked questions

Can you freeze a pasta recipe with shrimp? 

Yes, you can freeze your leftovers if you have them. You may notice a slight change in the texture.

But, it's possible to extend the life of your leftovers this way. Just place the leftovers in the freezer in a container with a tightly fitting lid. Use them within 6 months.

How to devein shrimp 

If you've never deveined shrimp before, you will need to for this Cajun Shrimp Pasta recipe.

Once you remove the shells, make a shallow slice at the back of the shrimp. Then, carefully pull the vein out using the point of the knife.

It's easiest to use medium uncooked shrimp that have been peeled and deveined.  Buying prepared shrimp makes your job a snap because all you have to do is defrost the shrimp.

How to prevent rubbery shrimp

If your shrimp are rubbery, they have been overcooked. Cook shrimp until they have curled into the shape of the letter C.

If they are straight, they aren't done yet. If you have cooked them until they are curled into an O, they are overcooked.

Equipment for making Cajun Shrimp Pasta
  • Wide Shallow Pan - a 4-quart braiser is one of my favorite pans. It is wide and shallow and perfect for one-pot recipes! Using a wide pan gives more surface area so your pot will heat more evenly and cook faster.
  • Garlic Press - One of my most used kitchen tools! I received mine as a gift years ago and I can't imagine why I never had one. It minces garlic with one squeeze, with the peel still on!
  • Cheese Grater - I am a huge proponent of FRESHLY grated cheese as opposed to bagged shredded cheeses.  Using freshly grated cheeses saves money, tastes better, and MELTS better.

Cajun Shrimp Pasta

Cajun Shrimp Pasta is a quick and easy recipe to make, and it is bursting with juicy shrimp and crisp-tender veggies smothered in a Parmesan Cajun sauce!

Ingredients

  • 1 pound medium uncooked peeled shrimp, deveined
  • 2 tablespoons Cajun seasoning spice mix, divided
  • 2 tablespoons fresh lime juice, divided
  • 4 garlic cloves, minced
  • 8 ounces uncooked fettuccine pasta
  • 3 tablespoon extra virgin olive oil, divided
  • 1 1/2 bell peppers (any color combo), thinly sliced, then halved
  • 1/2 large red onion, sliced, then halved
  • 2 tablespoon butter, divided
  • 1/2 teaspoon salt +salt for water
  • 1/4 teaspoon pepper
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 1/2 cups low sodium chicken broth
  • 1/2 cup heavy cream
  • 1 (14-ounce) can fire-roasted diced tomatoes, well-drained
  • 1 cup freshly grated Parmesan cheese
  • Optional Garnishes:
  • freshly grated Parmesan cheese
  • fresh parsley
  • lemon juice

Instructions

  1. Add shrimp to a medium bowl and toss with 1 tablespoon Cajun seasoning, 1 tablespoon lime juice, and 4 minced garlic cloves. Set aside.
  2. Bring a large pot of water to a boil. Add a small handful of salt and pasta. Cook until al dente, about 8-12 minutes. Reserve 1/2 cup pasta water before draining. Set aside.
  3. While the pasta cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add onions and bell peppers, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook until peppers reach desired crisp-tenderness, approximately 5 minutes. Remove to a plate.
  4. To the same skillet (don’t wipe it out), melt 1 tablespoon butter and one tablespoon olive oil over medium-high heat. Add shrimp mixture and cook 3-4 minutes, just until shrimp are opaque and cooked through. Scrape shrimp and garlic/juices into a bowl. Set aside. After shrimp is cool enough to handle, you can chop tails off if you desire.
  5. To the same skillet (don’t wipe out), melt 1 tablespoon butter with 1 tablespoon olive oil. Sprinkle in flour and 1-3 teaspoons Cajun seasoning (3 teaspoons for more heat), and optional cayenne pepper (if you want it spicy) and cook, while stirring, for 2 minutes, then turn heat to low. Slowly whisk in chicken broth and heavy cream, stirring constantly until smooth. Stir in diced tomatoes.
  6. Turn heat to medium-high and bring the sauce to a simmer. Simmer until thickened, stirring occasionally, approximately 3-5 minutes.
  7. Reduce heat to low and stir in lime juice followed by Parmesan cheese until melted. Stir in the cooked shrimp, vegetables, and pasta until well coated in sauce, adding additional reserved pasta water or heavy cream if needed to reach desired consistency. Taste and season with additional salt, pepper and/or cayenne pepper to taste.
  8. Garnish with freshly grated Parmesan cheese, fresh parsley, and lime juice (optional).
COOK'S NOTES
  1. I find 2 tablespoons Cajun seasoning and 1/4 teaspoon cayenne pepper to be on the spicy side as you would expect from a Cajun pasta.
  2. If you are sensitive to heat or want to make the dish very kid-friendly then use 1 tablespoon Cajun seasoning with the shrimp and only 1 teaspoon Cajun seasoning with the roux and omit the cayenne pepper.
  3. At the end of cooking if you want more heat you can always add more, but you can’t take it away.

I love using tortellini as the base for a quick dinner. There are so many different ways to use it that I never run out of meal ideas.

How to Make Chicken Pesto Pasta

This chicken tortellini recipe starts with frozen tortellini, leftover cooked chicken breast, cherry tomatoes, and delicious basil pesto.

In this perfect weeknight meal, nutty pesto and sweet tomatoes come together to create the most magnificent sauce. Quick, simple, and scrumptious.

Even better, it comes together in about 10 minutes! It's the perfect busy weeknight recipe.

If you want a creamy chicken pesto pasta, you can try adding a bit of heavy cream or a few tablespoons of cream cheese. The final result is a creamy pesto sauce that is a bit similar to an Alfredo sauce.

Kitchen Equipment

You only need a couple of simple kitchen tools to make this recipe.

Ingredients for the tortellini recipe

  • frozen cheese tortellini
  • cooked chicken - using leftover chicken or a rotisserie chicken would be perfect for this!
  • cherry tomatoes
  • basil pesto

Will premade pesto work?

While you can use a jarred basil pesto from the store, I really recommend using homemade pesto. It tastes better and it's easy to make.

Plus, it's the perfect flavor combination for this Chicken Pesto Pasta recipe.

What if I don't have basil for the pesto?

You can use many different things to make homemade pesto other than basil. Here are some ideas:
  • spinach
  • kale
  • arugula
  • watercress
  • seaweed 

The taste will be slightly different with each option. But, it works quite well. Experiment until you find your favorite.

Should I use fresh or frozen tortellini?

You can use either fresh or frozen tortellini. I use frozen cheese tortellini for this tortellini recipe. But, if you want to use fresh pasta, it will work just as well.

Or, if you have time, you can make it from scratch.

There are also other types of tortellini you can try. While cheese tortellini is the most common (and my favorite), you can also use spinach and cheese tortellini, or even mushroom tortellini.

If you want a slightly different shape, consider cappelletti. Just look in the frozen section at the grocery store to see what types of frozen pasta are available in your area.

Or, if you just don't want tortellini at all, you can use your favorite type of pasta. Penne would work well in this recipe.

And, while the taste will be slightly different, I am sure it will still be delicious.

About the pesto

The type of pesto that you use to make chicken tortellini will make all the difference in the taste of your meal.

Always start with fresh ingredients for the best taste. Also, use the best quality olive oil you have available.

You can tailor the taste by adding parmesan cheese and even cream depending on the recipe you're making. Garlic is also another popular addition to pesto.

Can you freeze chicken tortellini?

If you have leftovers, you can store them in a tightly covered container in the refrigerator for 3 to 5 days. If you want to store them for a longer period, you can freeze them for up to 6 months.

When you want to serve the leftovers, just transfer the container from the freezer to the refrigerator and allow it to thaw overnight.

Then, when you're ready to reheat it, place the chicken pesto in a pot with a bit of water.

Cook it on low heat until it is warmed through.

Stir it occasionally to prevent burning. You can add more pesto to the leftovers when you reheat it if you want to.

Chicken Pesto Pasta

Chicken Pesto Pasta is a quick, 10-minute dinner recipe. Chicken, tortellini, pesto and tomatoes burst with flavor in this scrumptious meal.

Prep time: 5 Minutes    Cook time: 5 Minutes   Total time: 10 Minutes

Ingredients

  • 1 (19 oz) bag frozen cheese tortellini
  • 12 oz precooked or leftover chicken
  • 2 cups cherry tomatoes
  • 1/4 cup basil pesto

Instructions

  1. Place a 4 quart pot filled ⅔ full of water on a burner over high heat. Cover and bring to a boil. Once water is boiling, add a small handful (a few Tbsp of salt to water). Add tortellini and cook until mostly cooked through (about 2-3 minutes).
  2. Meanwhile; wash tomatoes and cut each in half. Set aside. Cut chicken into bite size pieces. Drain tortellini and return to pot. Add chicken, tomatoes and pesto.
  3. Stir to combine. Serve and enjoy!
DONNA'S NOTES
