Christmas Sugar Cookies (With VIDEO)

Christmas sugar cookies (also known as cut out cookies) are a family tradition. This simple recipe for the perfect dough stays put (doesn't spread) and tastes amazing! A sweet cookie that is slightly crispy on the edges and soft and chewy throughout with the fabulous flavors of vanilla and almond. Not to mention, aren't they the prettiest cookies you have ever seen?

The days are escaping quickly which is a pretty good indication that Christmas is almost here.  Another sign would be the four batches of sugar cookie dough that are chilling in the fridge waiting to be rolled and cut. Along with the Best Ever Sugar Cookie Icing.

Cookies to ship, cookies to go into Christmas gifts and also ones to fill the gratitude baskets we give out each year (to the people who have touched our lives - mail carrier, bank teller, mechanic, neighbor, cashier at Wal-mart.  Anyone who has been special to us this year).

No basket, gift or package would be complete without my sugar cookies (so I am told).  My munchkin has started enjoying in this tradition already.

She looks adorable in her apron, holding a giant rolling pin and rolling out the dough.  Helping cut it out and the most fun has been decorating. But, we will talk more about that later.

This is one of the many popular sugar cookie recipes out there.  More than the base of the recipe, the method will really make a difference.

Chilling the dough before it is rolled and again after it is cut, gives you beautiful and crisp lines on your cookies.

If you have a hard time with sticking try a non stick silicone baking sheet liner with parchment paper on top.  It works perfectly for me.

But, if your cookies do come out of the oven a little poofy, use a flat metal spatula to gently press down on the tops while they are cooling on the baking sheet.

Dough keeps in the fridge for 2 weeks and in the freezer for at least 2 months (from my personal experience).

  • Our favorite baker told us years ago that the trick to cut-out cookies keeping their shape was to skip the leavening. Now they are perfect every time.
  • We got this brilliant tip for shipping cookies from our friend who owns a cookie shop, and it works so well. Package the cookies individually and tape them to a piece of cardboard. Wrap the cardboard in bubble wrap. You can stack multiple layers of cookies.
  • If you are sensitive to almond, you can use all vanilla extract.

Christmas Sugar Cookies (Cut Out Cookies)

Christmas sugar cookies (also known as cut out cookies) are a family tradition. This simple recipe for the perfect dough stays put (doesn't spread) and tastes amazing! A sweet cookie that is slightly crispy on the edges and soft and chewy throughout with the fabulous flavors of vanilla and almond. Not to mention, aren't they the prettiest cookies you have ever seen?

Ingredients

  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon almond extract
  • 3-4 cups all purpose flour
  • 1/2 teaspoon salt
  • Best Ever Sugar Cookie Icing
  • Pearl Sugar Balls (dragees)

Instructions

  1. In the bowl of your electric mixer (or with a hand mixer), cream the butter and sugar, on medium speed until light and fluffy (about 3 minutes).
  2. Add the eggs, vanilla and almond.  Beat until combined. Add the salt and 3 cups of flour; beat until you have a smooth dough. If the dough is sticky (meaning when you touch it and pull your fingers away the dough sticks to you), add more flour a tablespoon at a time until it comes together. Divide the dough in half and wrap each half in plastic wrap. Refrigerate for about one hour or until firm enough to roll.
  3. Preheat oven to 375°F. Line two baking sheets with parchment paper or silpat mats.
  4. Remove half of the chilled dough from the refrigerator and, on a lightly floured surface, roll out the dough to a thickness of 1/4 inch. (Keep turning the dough as you roll, making sure the dough does not stick to the counter.)  Cut out desired shapes using a lightly floured cookie cutter and transfer cookies to baking sheet.
  5. Place the baking sheets with the unbaked cookies in the refrigerator for about 15 minutes to chill the dough which prevents the cookies from spreading and losing their shape while baking. Note: If you are not going to frost the baked cookies, you can sprinkle the unbaked cookies with sparkling sugar at this point.
  6. Bake the cookies for about 9-11 minutes (depending on size) or until the edges are just starting to brown. Remove from oven and let cookies cool on baking sheet for 5 minutes before transferring to a wire rack to finish cooling. Decorate the cookies with Best Ever Sugar Cookie Icing if desired. Be sure to let the icing dry completely before storing. (This may take several hours or overnight.)

Frosty fans unite… I’ve come up with the most perfect copycat recipe EVER!  This dessert tastes like the real deal, and it is so simple to make.

Growing up, I was a HUGE fan of their super thick chocolate shake.  Okay, who am I kidding… I still am!  

Now they make them with vanilla flavor, but my heart still belongs to the original chocolate flavor.

  • Soften the ice cream. Be sure to soften the vanilla ice cream.  Just leaving it out on the counter for 5 to 10 minutes should do the trick.
  • How to make a thicker shake. This copycat recipe makes a Wendy's frosty with a classic, semi-melted consistency.  
If you prefer a thicker consistency shake, use slightly less milk.

Ingredients

  • 4 cups vanilla ice cream (softened slightly)
  • 1 cup milk (I usually use whole)
  • 3 tablespoons Nesquik powder

Instructions

  1. Add all ingredients to blender, cover, and blend until smooth and creamy (you may have to scrape the sides of the blender once, then blend again).
  2. Pour into serving glasses and serve with a straw or spoon.

It's the ultimate treat. A creamy, fudgy, crunchy, peanut buttery treat that has the right touch of chocolate and is perfectly sweet! Hurry, you probably have everything you need to make this in your pantry!

It all starts with a divine peanut butter and white chocolate base. It is stirred into rice krispies and then combined with fluffy mini-marshmallows and chocolate chips.

I first discovered  Rocky Mountain Chocolate Factory during a visit to Sedona. The aroma from the store was wafting down the sidewalk and it just about lifted me up by the nose and escorted me inside. My head was swirling. There was case after case of delicious treats to enjoy.

I was with Chad and my then 5-year-old daughter. I couldn't make a decision, everything looks soooo good. We each ordered 2 things to try and all shared. We pretty much declared their Avalanche Bark the best thing on the planet.

Well after a few more run-ins with Rocky Mountain Chocolate Factory and many more treats, I decided to work on a copycat make a home version. If you got a gift basket from me this Christmas, it certainly had a few of these fabulous cookies in a treat bag.


After Chad's spectacular review of our No-Bake Avalanche Cookies: "they taste like magic" I couldn't help but share them.  If you have never had the opportunity to sample this heavenly confection, let me tell you all about it and then you can run (don't walk) to you kitchen and prepare this easy 5 ingredient recipe.

No-Bake Avalanche Cookies

No-Bake Avalanche Cookies are a simple make-at-home copycat recipe with just 5 ingredients. Have you ever had the pleasure of enjoying the Avalanche Bark at Rocky Mountain Chocolate Factory? Imagine creamy peanut butter fudge speckled with Rice Krispies, fluffy marshmallows and chocolate chips. It's the ultimate treat. A creamy, fudgy, crunchy, peanut buttery treat that has the right touch of chocolate and is perfectly sweet! Hurry, you probably have everything you need to make this in your pantry!

Ingredients

  • 1/2 cup mini chocolate chips 
  • 16 ounces vanilla flavored candy coating ( Almond Bark or CandiQuik)
  • 1 (15 ounce) jar creamy peanut butter 
  • 2 cups Rice Krispies cereal
  • 1 1/2 cups mini marshmallows

Instructions

  1. Prepare 2 cookie sheets with a silpat mat or parchment paper. Set aside.
  2. Place chocolate chips in the freezer, until ready to use.
  3. Melt Almond Bark in a heat safe bowl, microwave at half power for 30 seconds at a time until melted and smooth. 
  4. Meanwhile: Add rice krispies to a large bowl. Set aside.
  5. Add peanut butter to Almond Bark. Stir to combine.
  6. Pour vanilla candy mixture over rice krispies. Stir until combined. Allow mixture to cool to room temperature (or until barely warm).
  7. Add marshmallows. Mix until combined. Add frozen chocolate chips. Stir to combine. 
  8. Use a 2 tablespoon scoop to portion treats onto prepared cookie sheet.
  9. Allow to set in a cool place, until firm. You can pop them in the fridge if your kitchen is too warm.
  10. Serve and enjoy!

2-Ingredient Salsa Chicken Crockpot

Salsa Chicken Crockpot is so easy it just about cooks itself. Chunks of tomato, onion, and chiles are speckled through the perfectly tender and juicy chicken. We have included tips for substitutions and using what is in your pantry to create your own version along with serving suggestions to make one meal and repurpose it into several future meals.

As well as serving suggestions and ideas for the leftovers. This is a go-to in my "what's for dinner?" arsenal, and it will be in yours too.

One day I was talking to my friend and she told that I can make the easiest dinner ever by tossing in a jar of salsa with some chicken. I said, what? Just salsa and chicken? So I gave it a try.

Well, after several tests I came up with the most amazing simple dinner and it is a go-to in my house. When you are working with 2 ingredients you really want them to be the best ingredients you can find. Whether that means homemade salsa or store-bought is up to you. But, I have a few tips for add-ins and using what you have on hand to stretch this meal.

Cooking from your pantry can add some creative twists to this Salsa Chicken Crockpot.

  • Add a can of rinsed and drained black beans or kidney beans to the bottom of the slow cooker.
  • Add a can of drained niblet corn or 2 cups of frozen corn to the bottom of the slow cooker.
  • Add in a couple tablespoons of your favorite taco seasoning to really make the flavor pop. 
  • Add Colby Jack cheese.
  • If you are short on salsa, use a can of diced tomatoes with peppers or a can of diced tomatoes and a can of jalapenos or green chilis. This recipe is really forgiving. Get creative and see what you can come up with.
  • Add a couple tablespoons of cream cheese for a creamy version. 

What to Serve with Salsa Chicken Crockpot

  • Salsa Chicken Crockpot is amazing served on a flour or corn tortilla.
  • Serve it over a rice and veggies for a scrumptious rice bowl.
  • This is delish on a bed of lettuce for an amazing salad.
  • Try on crunchy taco shells with lettuce and cheese on top.
  • Are you a nacho lover? This could be a new favorite. Lay down tortilla chips, then salsa chicken, then top with cheese, black olives, sour cream and guacamole. YUM!
  • My family loves flautas (flour taquitos). So, I took the leftover salsa chicken and mixed it with cream cheese and Colby Jack cheese and rolled it up in flour tortillas. I froze them and when I am ready to make them, I pop them in a preheated 425°F oven for 20 minutes, until tortilla is crisp and the ends are beginning to brown and cooked through and my family goes crazy over them!
Whatever you choose, go with whatever works for you. Because honestly this salsa chicken is absolutely amazing!!!

  • To freeze for later use:  Prepare taquitos as described.  Place taquitos in a resealable freezer bag (1 gallon works great) and store until ready to use.  They keep well for 6 months.
  • I prefer my Lazy Day Salsa (recipe on TheSlowRoastedItalian) and Rojo's Fire Roasted Medium Salsa.

What you will need to make 2-Ingredient Crockpot Salsa Chicken:

  • Slow Cooker - the slow cooker is almost my most used kitchen appliance, especially during fall/winter! It's just so convenient, and let's face it, it makes comfort food taste even better!

2-Ingredient Crockpot Salsa Chicken

2-Ingredient Slow Cooker Salsa Chicken is so easy it just about cooks itself. This fantastic simple recipe is officially part of our Lazy Day collection. Chunks of tomato, onion, and chiles are speckled through the perfectly tender and juicy chicken. And, just like every easy recipe, there are tips and tricks to make this a simple dish, a fabulous dinner!
prep time: 2 MINScook time: 4 hourtotal time: 4 hours and 2 mins

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 16 ounces your favorite salsa
  • salt and pepper to taste

Instructions

  1. Place chicken breasts on the bottom of the slow cooker. Pour salsa over top.
    Cover and cook for 3-4 hours on high or 6-8 hours on low.  Once cooked through, use 2 forks or meat claws to shred chicken. Season with salt and pepper to taste. Mine usually needs just a pinch.
  2. Serve and enjoy!

DONNA'S TIPS

  1. My family loves flautas (flour taquitos). So, I took the leftover salsa chicken and mixed it with cream cheese and Colby Jack and rolled it up.  Froze it and when I am ready to make it, I pop it in a preheated 425°F oven for 20 minutes, until tortilla is crisp and the ends are beginning to brown and cooked through and my family goes crazy over them!

Munchkin and I made these together.  It was so much fun.  Once they went into the oven the whole family gathered in the kitchen anticipating the incredible magic that was going on in the oven.

Helpful Tips to make Jalapeño Popper Cheesy Pretzel Bombs:

  • You can mix the dough by hand if you do not have a stand mixer.  Add water (or beer), yeast and sugar to a large bowl.  Once the yeast blooms stir in the salt and the flour.  Mix with a spoon.  Turn dough out onto floured counter top and knead for 3-5 minutes until dough is no longer sticky.  Proceed with remaining instructions.
  • You can substitute milk or water for the beer.

    Jalapeño Popper Cheesy Pretzel Bombs

    Soft and chewy pretzel poppers are stuffed with ooey gooey cheese, crispy bacon and spicy jalapeños. This scrumptious recipe is like nothing you have ever eaten before. Game day, girls night or a Tuesday night with the family these Jalapeño Popper Cheesy Pretzel Bombs will rock your world!

    Ingredients

    • 12 ounces warm beer (110°-120°), I used Blue Moon *see cooks note
    • 2¼ teaspoons active dry yeast (1 packet)
    • 2 tablespoons granulated sugar
    • 12 ounces bacon, cooked and chopped into bite size pieces
    • 8 ounces cream cheese
    • 8 ounces shredded Mexican cheese blend (or cheddar cheese)
    • 1 (4 ounce) can diced jalapeños
    • 1 large egg
    • 3 1/2 cups all-purpose flour + more for dusting counter
    • 1 teaspoon kosher salt + more for pretzel tops
    • 2 tablespoons baking soda
    • 2 cups water

    Instructions

    1. Preheat oven to 450°F.
    2. Pour beer into the bowl of a stand mixer fitted with a dough hook (see cooks note if you do not have a stand mixer), sprinkle yeast over top, add sugar and stir.  Allow yeast to bloom for 5-10 minutes.  Once it is nice and foamy, it is ready. *It should look like the 'head' of a beer poured too quickly and smell yeasty.
    3. Meanwhile in a medium mixing bowl combine cheeses, bacon and jalapeños.  Mix together.  You may need to use a wood spoon to get it well mixed.
    4. In a small bowl beat egg, set aside.  Sprinkle clean counter top with ¼ cup flour.  Line a baking sheet with parchment paper or spray with cooking spray.  Set aside.
    5. Add flour and salt to stand mixer.  Knead for 3- 5 minutes until the dough comes together in one ball.  Add more flour a tablespoon at a time as needed, if bread is too sticky to come together.  Dough should be tacky when you pull it out of the mixer, not sticky.
    6. Place dough on floured counter top and knead in flour until it is no longer tacky, just a minute or two.  Form dough into a ball.  We are going to cut this ball into 36 (somewhat) even pieces.  First quarter the ball of dough. *I used a bench scraper, but a butter knife would work too.  Roll each quarter into a fat log.  Cut that into 3 pieces.  Roll each piece into a log and cut into 3 pieces.  When you are done you will have 36 pieces.
    7. Fill a medium (4 cup) bowl with 2 cups of hot water and add baking soda.  Place baking sheet, baking soda water and cheese mixture on the counter that you are working on.
    8. Roll each dough piece (one at a time) into a ball and then flatten it into a circle.  Add 1 tablespoon of cheese mixture in the center *I used a tablespoon scooper.  Carefully pull each side over the cheese to create a ‘cheese package’, pinching the edges closed.  Roll the dough into a ball.  Be careful to make sure you can not see the cheese through the dough.  Tap fingers in flour, pinch any tears and roll again.  Set aside and repeat until you have 3 stuffed dough balls.  Transfer 3 stuffed dough balls to hot water mixture and allow to set while you prepare the next 3.  Prepare the next 3 dough balls.  Remove dough balls from water with a slotted spoon and place on prepared baking sheet.  Place 3 newly prepared balls into the water and prepare 3 more.  Repeat until all dough balls are on the cookie sheet.
    9. Arrange all pretzel balls on parchment so they are not touching.  Brush egg wash onto each one and sprinkle with course salt.
    10. Bake for 8-10 minutes until the tops are browned.
    11. The ooey gooey cheese may escape some of your pretzel bombs.  That is a beautiful thing!  Scoop all that cheesy goodness up onto the plate and serve.  Your guests will go crazy over them.
    12. Enjoy!

    1.     2. I microwaved the beer in a glass microwave safe measuring cup, 15 seconds at a time until it was 110-120 degrees.
    3. You can substitute milk or water for the beer.
    4. SHORTCUT: You can use 36 frozen dinner rolls (I use Rhodes) in place of the dough recipe.

    One of my favorite cooking methods is working with what I have on hand and finding inspiration in my pantry.

    Actually pantry cooking has resulted in some of the most delicious recipes I have ever created and this was one of them.

    I injured my knee at the beginning of January and I was laid up on the couch for a week. I only had Chad running to the store for staples (like milk and bread).

    After about a week of fast food and dry cereal, I decided I had enough and I was going to cook something, so I grabbed some cooked ground beef out of the freezer and headed for the pantry to find some dinner inspiration.

    I keep my pantry pretty well stocked for occasions exactly like this.

    After surveying the pantry the beans caught my eye and I decided I would whip up a chili.

    Beef, beans, tomatoes, jalapenos and some crushed red pepper. Just a few minutes later I had the most scrumptious chili.

    I still can't believe how delicious it was. So, I tried the recipe again and again. Feeding it to friends and family.

    Everyone raved about it and no one believed it was so quick to make.

    Eventually, I settled on fresh ground beef because you don't always have cooked ground beef on hand, but if you have it cooked already you can whip this up this fabulous recipe in just about 7 minutes.

    Good pantry cooking really comes down to choosing your ingredients well.

    Fire-roasted tomatoes and chili beans give this chili an incredible slow-cooked flavor and the peppers give it a little kick (not too much). Your friends and family will never believe you whipped this up in just 15 minutes.

    5-Ingredient Easy Chili

    This thick and hearty chili comes together in just 15 minutes, using only 5 ingredients. Truly one of our favorite chili recipes ever it is perfect for winter or fall, spring or even summer barbecuing. Any recipe that tastes this good and can be put together on a lazy day is a keeper in my book!

    Ingredients

    • 1 1/2 pounds lean ground beef
    • 2 (14.5-ounce) cans fire Roasted Diced Tomatoes with Garlic
    • 2 (15.5-ounce) cans chili beans (I used S&W)
    • 1 (7-ounce) can diced green chiles or 1/2 can (4-ounce) diced jalapenos
    • 1 teaspoon crushed red pepper (to taste)

    Instructions

    1. In a large (4 quart) saucepan over medium-high heat, cook beef.  Break beef up with a wooden spoon.  Cook until cooked through, stirring occasionally.  Add tomatoes, beans, jalapenos and crushed red pepper flakes (to taste - use less for mild, more for hot).  Stir.  Simmer 5 minutes.
    2. Serve and enjoy!
