The Extreme Reese's Peanut Butter No-Bake Pie

Extreme Reese's Peanut Butter No-Bake Pie has an extraordinary pie crust recipe with a special ingredient that will blow your mind, a light and fluffy peanut butter filling and a fully loaded mix of toppings to really make this pie sing it is topped with homemade whipped cream and a generous amount of peanut butter cups, peanuts and chocolate. This no-bake pie goes from prep to plate in 30 minutes; this is one for the permanent recipe file!

Ingredients

  • 24 whole chocolate sandwich cookies
  • 40 mini Reese’s Peanut Butter Cups, (wrappers removed, divided)
  • 1/4 cup unsalted butter, melted
  • 1 (8-oz) package cream cheese, softened
  • 1 3/4 cups powdered sugar, divided
  • 1 (16.3-oz) jar chunky peanut butter, (approximately 1¾ cups)
  • 2 cups heavy cream
  • 1 tsp pure vanilla extract
  • 1/4 cup dry roasted peanuts, chopped
  • 2 oz milk chocolate, broken into pieces

Instructions

  1. In a tall bowl whip heavy cream with an electric mixer until you can start to see a defined trail through the cream. Add vanilla and slowly add 3/4 cup powdered sugar. Whip until stiff peaks form. (In other words when you turn off the blender and lift the beaters out of the cream, the cream stand up on the end of the beater). Place in the refrigerator while you prepare the remaining ingredients.
  2. In a food processor combine cookies and 20 peanut butter cups. Pulse until your mixture is crumbs. Slowly pour butter in through the feed tube. Pulse until combined and crumbs are moistened.
  3. Pour crumbs into a 9” pie plate and press mixture on the bottom and around the sides to form pie crust. Place in the freezer while you prepare the filling.
  4. To prepare the filling: Combine cream cheese and 1 cup powdered sugar in a large mixing bowl. Beat with an electric mixer until light and fluffy (about 3 minutes). Add peanut butter. Beat until well combined. Fold in ½ of the whipped cream until it is completely incorporated. Pour into chilled pie crust. Smooth with a spatula. Pour remaining whipped cream over top. Place in the refrigerator while you prepare toppings.
  5. Place the milk chocolate in a microwave safe mixing bowl. Heat for 30 seconds at a time, stirring each time, until chocolate is melted. Set aside.
  6. Quarter the remaining 20 mini peanut butter cups.
  7. Sprinkle peanut butter cups over pie. Sprinkle chopped peanuts over pie. Use a spoon to drizzle chocolate over pie (or transfer chocolate to a plastic sandwich bag and cut a very small hole in the corner, then drizzle over pie).
  8. Refrigerate until ready to serve or serve immediately. Enjoy!

It's the ultimate treat. A creamy, fudgy, crunchy, peanut buttery treat that has the right touch of chocolate and is perfectly sweet! Hurry, you probably have everything you need to make this in your pantry!

It all starts with a divine peanut butter and white chocolate base. It is stirred into rice krispies and then combined with fluffy mini-marshmallows and chocolate chips.

I first discovered  Rocky Mountain Chocolate Factory during a visit to Sedona. The aroma from the store was wafting down the sidewalk and it just about lifted me up by the nose and escorted me inside. My head was swirling. There was case after case of delicious treats to enjoy.

I was with Chad and my then 5-year-old daughter. I couldn't make a decision, everything looks soooo good. We each ordered 2 things to try and all shared. We pretty much declared their Avalanche Bark the best thing on the planet.

Well after a few more run-ins with Rocky Mountain Chocolate Factory and many more treats, I decided to work on a copycat make a home version. If you got a gift basket from me this Christmas, it certainly had a few of these fabulous cookies in a treat bag.

No-Bake Avalanche Cookies

No-Bake Avalanche Cookies are a simple make-at-home copycat recipe with just 5 ingredients. Have you ever had the pleasure of enjoying the Avalanche Bark at Rocky Mountain Chocolate Factory? Imagine creamy peanut butter fudge speckled with Rice Krispies, fluffy marshmallows and chocolate chips. It's the ultimate treat. A creamy, fudgy, crunchy, peanut buttery treat that has the right touch of chocolate and is perfectly sweet! Hurry, you probably have everything you need to make this in your pantry!

Ingredients

  • 1/2 cup mini chocolate chips 
  • 16 ounces vanilla flavored candy coating ( Almond Bark or CandiQuik)
  • 1 (15 ounce) jar creamy peanut butter 
  • 2 cups Rice Krispies cereal
  • 1 1/2 cups mini marshmallows

Instructions

  1. Prepare 2 cookie sheets with a silpat mat or parchment paper. Set aside.
  2. Place chocolate chips in the freezer, until ready to use.
  3. Melt Almond Bark in a heat safe bowl, microwave at half power for 30 seconds at a time until melted and smooth. 
  4. Meanwhile: Add rice krispies to a large bowl. Set aside.
  5. Add peanut butter to Almond Bark. Stir to combine.
  6. Pour vanilla candy mixture over rice krispies. Stir until combined. Allow mixture to cool to room temperature (or until barely warm).
  7. Add marshmallows. Mix until combined. Add frozen chocolate chips. Stir to combine. 
  8. Use a 2 tablespoon scoop to portion treats onto prepared cookie sheet.
  9. Allow to set in a cool place, until firm. You can pop them in the fridge if your kitchen is too warm.
  10. Serve and enjoy!

I have been making it over and over again to give for gifts, and you better believe this is on my holiday gift giving list! Fudge for everyone.

Everyone I know loves peanut butter and chocolate, and I am pretty sure that Reese's Peanut Butter Cups are America's favorite candy.

That said, I have never met anyone that loves peanut butter and chocolate like my mother-in-law Gigi.

Gigi and Pop Pop are a huge part of our lives, and we spend a lot of time together. They are the only family we have here in Arizona, and I like to share homemade gifts to show my appreciation once in a while.

Well, last week Munchkin's cousin came to visit from Denver, and she got to go hang out with her at Gigi and Pop Pop's house for the entire day (can you say hallelujah!).

Naturally, I had to make a thank you treat, and Reese's Peanut Butter Cups were on the top of my mind. I thought that topping this simple peanut butter fudge with a truckload of peanut butter cups and milk chocolate would really put them over the top and believe you me; I was right!

They were absolutely incredible, and everyone went nuts over them. I have made these 4 times in the last week, and I have to say everyone has raved about them, and I know you will too.

Reese's Peanut Butter Fudge

Reese's Peanut Butter Fudge is luscious and creamy, made with chunks of peanuts throughout the fudge to give it the perfect crunch. This Reese's Peanut Butter Fudge is a simple recipe with just 4-ingredients! It comes together in just 10 minutes.

Ingredients

  • 16 ounces vanilla-flavored candy coating (Almond Bark or white chocolate chips)*
  • 2 cups super crunchy peanut butter (about 18 ounces)
  • 8 Reese's Peanut Butter Cups (chopped)
  • 1/4 cup milk chocolate chips (melted)

Instructions

  1. Line an 8"x8" baking pan with aluminum foil. Set aside.
  2. Melt candy coating in a heat safe bowl. Microwave at half power for 30 seconds at a time until melted and smooth.
  3. Add peanut butter. Stir until completely combined and smooth.
  4. Pour into prepared baking pan. Sprinkle with Reese's Peanut Butter Cups. Gently press Reese's into peanut butter fudge, so they are about 1/2 submerged in the fudge. This will help keep them from falling off when you cut the fudge.
  5. Drizzle melted milk chocolate over top.
  6. Freeze 30 minutes (or refrigerate 1 hour) or until fudge is firm. Lift the fudge out of the pan using the aluminum foil edges. Unwrap the foil. Check to make sure all the foil is off. Cut into bite size pieces.
  7. Store in the refrigerator. 
  8. Enjoy!

Since she’s a lover of all things chocolate and peanut butter, I put the two together to create the dreamiest dessert you can imagine.

Helpful Tips to make Reese’s Peanut Butter Fudge Brownies:

  • These brownies freeze very well. Be sure to wrap well and defrost for 30 minutes before eating.
  • If you do not prefer peanut butter cups, you can substitute 1 cup of milk chocolate chips in the batter and omit the frosting. They are fabulous that way!

Reese’s Peanut Butter Fudge Brownies

A simple brownie recipe loaded with Reese’s Peanut Butter Cups is the base for the out-of-this-world treat. The brownie is topped with a peanut butter frosting that is second only to your grandma’s peanut butter fudge. Then it’s sprinkled with Reese’s Peanut Butter Cups and drizzled with milk chocolate.

Ingredients

Brownie
  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 1 Tbsp vanilla extract
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 (12 oz) bag mini Reese’s Peanut Butter Cups, cut into quarters (divided)
Peanut Butter Fudge Frosting
  • 1 (8 oz) block cream cheese, softened
  • 1 cup unsalted butter, room temperature
  • 4 cups powdered sugar, sifted
  • 1 (15 oz) jar natural peanut butter
  • 1 Tbsp vanilla extract
  • 1/2 tsp salt
  • 6 oz milk chocolate chips, melted

Instructions:

  1. Preheat oven to 350°F. Line a 9x13 baking dish with parchment paper, set aside.
  2. Place butter in a large microwave-safe mixing bowl, melt completely. Add sugar, cocoa, vanilla, and eggs. Whisk to combine well. Add remaining ingredients. Whisk until completely combined, but do not over mix.
  3. Pour into prepared baking dish. Sprinkle 10-15 mini Reese’s Peanut Butter Cups cut into quarters over batter, press into the batter with a spatula until they are covered. Bake for 20 minutes or until a toothpick comes out clean. Place in the freezer to cool, about 15 minutes.
  4. Meanwhile: Combine cream cheese and butter in the bowl of a stand mixer fitted with a paddle attachment. Beat on medium speed until smooth and creamy, about 3 minutes. Add sugar. Beat on low until combined, then switch to medium speed and beat until light and creamy. Add peanut butter, vanilla, and salt. Beat mixture until well combined.
  5. Spread frosting over top of the cooled brownie. Sprinkle remaining peanut butter cups over the top of the frosting.
  6. Drizzle melted chocolate over the top of brownies. Serve and enjoy.

A simple recipe that is sure to be a favorite in your house too. The hot summer weather is perfect for a big bowl of my frozen banana ice cream.

I've been putting together a few different variations of this healthy ice cream recipe. Have you tried my Pecan Banana Ice Cream yet? It's one of my favorites.

One of the best things about this chocolate peanut butter ice cream is that it requires only 3 simple ingredients.

But, I know that it's hard to resist a bowl of chunky peanut butter ice cream loaded with your favorite candies.

So, you can certainly add chunks of chocolate-covered peanut butter, chopped nuts, and chocolate chips if you prefer.

Or, for a more adult version, you can add some instant espresso to the ingredients for a coffee taste. There are lots of different chocolate peanut butter ice cream brands you can buy at the store.

But, this homemade ice cream recipe will soon become your favorite. It's rich and creamy and because it doesn't have added sugar or dairy, it's much lower in fat and calories.

What do I need to make chocolate peanut butter ice cream?

All you need to make this creamy homemade ice cream is a high powered blender or a food processor. You don't need an ice cream maker.

And, you don't need to cook it on the stove. It really doesn't get much easier than that. All you need is:
  • Blender - You can use any blender, but I absolutely love this one! I use it for ice cream, smoothies, soups, my tomato sauce, and naturally this ice cream.

Is this ice cream allergy-friendly?

Yes, because this chocolate peanut butter ice cream uses only 3 simple ingredients, it's allergy-friendly. It does not contain dairy, eggs, soy, or gluten.

You can substitute other nut butter for people with peanut allergies.

Just be careful what types of extras you add if you're concerned about allergies. One of the best add-ins, if you're concerned about food intolerances, is 70% dark chocolate.

How should I serve chocolate peanut butter ice cream?

I usually just enjoy this ice cream as is in a bowl. But, if you want a few more ideas, you can use my No Fail Caramel Sauce or my Crockpot Caramel Sauce.

Helpful Tips to make Simple 3 Ingredient Peanut Butter and Chocolate "Ice Cream"

  • If you do not have a high powered blender, you may use 2 frozen and one fresh banana to encourage easier blending.
  • There are no preservatives in your ice cream, so it will freeze solid. Simply remove from the freezer 10 minutes before serving to allow it to soften slightly. If it freezes and keeps beautifully!
  • You can transfer to a freezer-safe container and allow the ice cream to firm up in the freezer for 2 to 3 hours.
  • If you don't have any semi-sweet chocolate chips, you can substitute 1/3 cup of cocoa powder.

How can I store homemade ice cream?

You will want to store this in the coldest part of your refrigerator. Never store ice cream in the freezer door.

If you find the ice cream is getting soft while you're eating it, just put it back in the freezer for a few more minutes.

Homemade ice cream will stay good in the freezer for about two weeks. But, I think it's best when you eat it as soon as you make it.

Chocolate Peanut Butter Ice Cream (3-Ingredients)

Chocolate Peanut Butter Ice Cream is the perfect amount of peanut butter flavor, speckled chocolate pieces in this delicious frozen treat.

Ingredients

        • 3 frozen ripe bananas
        • 4 tablespoons peanut butter
        • 1/4 cup semi-sweet chocolate chips

              Instructions

                  1. Place bananas and peanut butter in a blender. Blend until mixture starts to get creamy, scraping down the sides as necessary. Add chocolate chips and pulse until chocolate has speckled your ice cream.
                  2. Transfer to a resealable container and place in the freezer for 2-3 hours.
                  3. Scoop and serve or scoop and place the scoops into a container for later use. If you decide to leave it in the freezer, just allow it to sit at room temperature for 10 minutes or so, to soften before serving.
                  4. Enjoy!

                  Tips for Making No Bake Peanut Butter Bars

                  • Graham cracker crumbs - Graham crackers really have to be crumbs to work properly in this recipe. Process them in your food processor to be sure they are fine enough.
                  • Butter - You can use unsalted butter if you like. Just add 1/4 teaspoon of salt with the peanut butter.
                  • Peanut butter - If you use natural peanut butter, the bars will need to be refrigerated to stay firm.
                  • Chilling - These bars will need to be refrigerated for one to two hours so make sure that you plan ahead when making them.
                  • Freezing - These bars freeze great! Just be sure not to stack them or they'll stick together.

                  Can no bake bars be frozen? 

                  Whether or not you can freeze desserts like this really depends on the recipe. But this one is very freezer friendly.

                  Just cut them into individual serving sizes. Then, place the bars (not touching) in a freezer container that's been lined with foil.

                  Freeze the bars for up to 6 months. Then, just thaw them in the refrigerator when you're ready to eat them.

                  Can I use creamy peanut butter instead? 

                  Yes, you can use creamy or crunchy peanut butter.

                  If you love chopped nuts in your peanut butter bars, then using chunky peanut butter is a great idea.

                  If you don't have honey roasted peanut butter, you can use plain peanut butter instead as well.

                  What types of chocolate chips are best? 

                  I use milk chocolate chips for this recipe because the final taste really reminds me of Reese's Peanut Butter Cups.

                  But, if you want to, you can use semi-sweet chocolate chips or even dark chocolate chips instead. Or, kick it up a notch and try white chocolate chips instead.

                  What about healthy peanut butter bars? 

                  If you want to make the no bake peanut butter bars a little bit healthier, you can use a one to one stevia blend instead of the powdered sugar.

                  That will help cut the sugar content. And, you can use PB2 made into peanut butter to cut the calories and the fat. It's still a delicious treat!

                  Can I make a bar dessert without graham crackers?

                  You will need to have some type of cracker or cookie crumb for the base of these bars.

                  If you prefer not to use graham crackers, you can try any of the following instead:
                  • Nilla Wafers
                  • Oreo Cookies
                  • Gingersnaps
                  • Chocolate wafer cookies
                  • Nutter Butter cookies (for the REAL peanut butter lover!)

                  And, you can make gluten free peanut butter bars by using gluten-free graham crackers.

                  Or, for a slightly different taste, you can try crushed pretzels for a pretzel crust.

                  • Mixing Bowl- I like a variety of mixing bowls and prep bowls and this set has them all. 
                  • Food processor - This is helpful to process the graham cracker crumbs.

                  Storage

                  You will want to keep this dessert in the refrigerator. The peanut butter and the chocolate will melt or become soft if they are exposed to warm temperatures.

                  They can stay out for a few hours while you plate and serve them, but for longer periods, store them in the refrigerator.

                  No Bake Peanut Butter Bars

                  A delicious treat for peanut butter lovers! Make this easy no bake recipe for your next picnic or potluck.

                  Ingredients

                  • 1 cup (8 oz) butter
                  • 2 1/2 cups honey roasted crunchy peanut butter, divided
                  • 2 cups graham cracker crumbs
                  • 2 cups powdered sugar
                  • 2 cups milk chocolate chips

                  Instructions

                  1. Add butter to a large microwave-safe mixing bowl. Heat in the microwave until the butter is completely melted. Stir in the peanut butter. Once combined add the graham cracker crumbs and powdered sugar. Stir until everything is completely incorporated.
                  2. Pour mixture into a 9x13 baking pan and spread evenly. Place in the refrigerator while you prepare the ganache topping.
                  3. Heat the chocolate chips and remaining 1/2 cup peanut butter in a microwave safe bowl. Heat 30 seconds at a time and stir between intervals.
                  4. Pour the ganache over the peanut butter layer. Smooth into an even layer.
                  5. Refrigerate 1-2 hours. Cut and serve. Store bars in the refrigerator.
