I have found this to be an amazing convenient ingredient in cooking and baking sweets. So, of course when I started thinking about rice pudding I thought of International Delight.

I remember my mom making rice pudding for us. Of course, as my mom was a penny pincher it was always with left over white rice from dinner a few nights earlier. If we didn't have leftover rice there was no rice pudding. Which kinda stinks when you love rice pudding.

So what if you want a quick and easy rice pudding and you don't have any left over rice? Well, that is exactly where I started. Have you ever had risotto? It is rich and creamy. It is made with an Italian short grain rice called Arborio.

The rice has a high starch content which leads to the creaminess of the risotto. So, I started thinking... What if I use Arborio rice in my rice pudding?

Well, the result is an amazing thick, rich and creamy flavorful rice pudding made with just 2 ingredients (and water and salt)!

It is a so easy to make, you literally dump it in a pot, let it cook and then stir for a few minutes.It is perfectly rich, creamy and delicious.

My husband, Chad, has been refusing to try the store bought rice pudding for years. But this recipe, he devoured!

Helpful Tips to make 2-Ingredient Creamy Vanilla Rice Pudding:

  • Do not bring to a full rolling boil and then cover. It will boil over and you will be left with a nasty stove to clean. Don't ask me how I know, just trust me on this one.
  •  Slow cooker method: Combine ingredients in a slow cooker (I used a 3 quart). Stir, cover and cook on high for 1 1/2 - 3 hours. It took 3 hours in my 3 quart round. Rice should be soft and pudding thick when it is ready.
  • The first time you prepare this in a slow cooker I recommend tasting a piece of rice after 1 hour 30 minutes. If it is not chewy yet cover it and let it cook 30 more minutes and check again. The more you stir the more the pudding will thicken. That said, about 15 minutes before the pudding is done remove cover and stir until pudding is thickened. 
  • If you don't have coffee creamer you can substitute (in place of the creamer and water) 4-1/2 cups whole milk, 1/2 cup granulated sugar, 1/4 teaspoon kosher salt, and 1 tablespoon vanilla extract.

Creamy Vanilla Rice Pudding

Creamy Vanilla Rice Pudding is the epitome of comfort food. This simple dessert made with just 2 ingredients is rich, silky and utterly delicious! This recipe is so simple it just about cooks itself!
prep time: 10 minscook time: 20 minstotal time: 30 mins

Ingredients

  • 1 cup uncooked Arborio rice
  • 2 cups water
  • 2 cups International Delight French Vanilla Creamer (liquid)
  • 1/4 teaspoon kosher salt
  • Optional Toppings: cinnamon or fruit 

Instructions

  1. Combine ingredients in a large (8 quart) saucepan over high heat. Stir to combine. Bring to 'medium' boil. *SEE NOTE. Reduce to simmer (on medium-low temperature) for 20 minutes. Cover.
  2. Remove cover, increase temperature to medium-high and stir constantly until rice is tender and pudding is thick and creamy, about 3-5 minutes.
  3. Remove from heat. Pour into serving dishes. Serve warm immediately or chill in the refrigerator until ready to serve. 
  4. If desired add optional toppings right before serving.
  5. Enjoy!

DONNA'S NOTES

As well as serving suggestions and ideas for the leftovers. This is a go-to in my "what's for dinner?" arsenal, and it will be in yours too.

One day I was talking to my friend and she told that I can make the easiest dinner ever by tossing in a jar of salsa with some chicken. I said, what? Just salsa and chicken? So I gave it a try.

Well, after several tests I came up with the most amazing simple dinner and it is a go-to in my house. When you are working with 2 ingredients you really want them to be the best ingredients you can find. Whether that means homemade salsa or store-bought is up to you. But, I have a few tips for add-ins and using what you have on hand to stretch this meal.

Cooking from your pantry can add some creative twists to this Salsa Chicken Crockpot.

  • Add a can of rinsed and drained black beans or kidney beans to the bottom of the slow cooker.
  • Add a can of drained niblet corn or 2 cups of frozen corn to the bottom of the slow cooker.
  • Add in a couple tablespoons of your favorite taco seasoning to really make the flavor pop. 
  • Add Colby Jack cheese.
  • If you are short on salsa, use a can of diced tomatoes with peppers or a can of diced tomatoes and a can of jalapenos or green chilis. This recipe is really forgiving. Get creative and see what you can come up with.
  • Add a couple tablespoons of cream cheese for a creamy version. 

What to Serve with Salsa Chicken Crockpot

  • Salsa Chicken Crockpot is amazing served on a flour or corn tortilla.
  • Serve it over a rice and veggies for a scrumptious rice bowl.
  • This is delish on a bed of lettuce for an amazing salad.
  • Try on crunchy taco shells with lettuce and cheese on top.
  • Are you a nacho lover? This could be a new favorite. Lay down tortilla chips, then salsa chicken, then top with cheese, black olives, sour cream and guacamole. YUM!
  • My family loves flautas (flour taquitos). So, I took the leftover salsa chicken and mixed it with cream cheese and Colby Jack cheese and rolled it up in flour tortillas. I froze them and when I am ready to make them, I pop them in a preheated 425°F oven for 20 minutes, until tortilla is crisp and the ends are beginning to brown and cooked through and my family goes crazy over them!
Whatever you choose, go with whatever works for you. Because honestly this salsa chicken is absolutely amazing!!!

Helpful Tips to make 2-Ingredient Crockpot Salsa Chicken:

  • To freeze for later use:  Prepare taquitos as described.  Place taquitos in a resealable freezer bag (1 gallon works great) and store until ready to use.  They keep well for 6 months.
  • I prefer my Lazy Day Salsa (recipe on TheSlowRoastedItalian) and Rojo's Fire Roasted Medium Salsa.

What you will need to make 2-Ingredient Crockpot Salsa Chicken:

  • Slow Cooker - the slow cooker is almost my most used kitchen appliance, especially during fall/winter! It's just so convenient, and let's face it, it makes comfort food taste even better!

2-Ingredient Crockpot Salsa Chicken

2-Ingredient Slow Cooker Salsa Chicken is so easy it just about cooks itself. This fantastic simple recipe is officially part of our Lazy Day collection. Chunks of tomato, onion, and chiles are speckled through the perfectly tender and juicy chicken. And, just like every easy recipe, there are tips and tricks to make this a simple dish, a fabulous dinner!
prep time: 2 MINScook time: 4 hourtotal time: 4 hours and 2 mins

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 16 ounces your favorite salsa
  • salt and pepper to taste

Instructions

  1. Place chicken breasts on the bottom of the slow cooker. Pour salsa over top.
    Cover and cook for 3-4 hours on high or 6-8 hours on low.  Once cooked through, use 2 forks or meat claws to shred chicken. Season with salt and pepper to taste. Mine usually needs just a pinch.
  2. Serve and enjoy!

DONNA'S TIPS

  1. My family loves flautas (flour taquitos). Lately things seem to be so much busier, even though we are taking more time to spend with our family. Maybe that is why work time seems busier. LOL.

Needless to say I have been turning to a lot more quick and easy recipes. 5 ingredients or less is a pretty happy recipe for me these days.

When Chad told me he loves coconut desserts, I decided to whip up these 2-ingredient Coconut Macaroons that I had seen all over social media a few years ago.

All I could remember was that it was coconut and sweetened condensed milk. The rest I played with until I found what worked for us.

This is really one of the easiest cookie recipes I have ever made. Not to mention these cookies are down right addictive (see prior comment about eating 20 of them).

Helpful Tips to make Coconut Macaroons:

  • This recipe can be doubled. Simply use double the ingredients and 2 sheet pans. I bake one while I scoop the other, so the cooking time remains the same for each pan.
  •  If your macaroons will not stay together check to see if you used sweetened condensed milk. Evaporated milk can NOT be used in this recipe.
  •  Store in a resealable plastic bag or container, in the refrigerator.
  • These are fabulous with melted chocolate drizzled over top or even try dipping the bottom in chocolate after baking.

What you will need to make Coconut Macaroons:

  • Jelly Roll Pans (baking sheets with sides) - used for everything from cookies to roasting, a good baking pan will last for years.
  • Silpat Baking Mat is perfect for everything. We use them for rolling out doughs, baking cookies, biscuits and other desserts. They are also great for transporting pans. Just line a baking sheet and place your baking dishes on the mat. It provides a non-slip surface for traveling.
  • 1 1/2 tablespoon scoopperfect for meatballs, cookies, ice cream for portioning out leftovers! I have had this set for years and use them all the time.

Lazy Day Coconut Macaroons

2-Ingredient Coconut Macaroons are perfectly sweet, beautifully toasted on the outside and moist and chewy on the inside. With this lazy day recipe, I must have eaten about 20 and made another batch to take on our road trip. They are absolutely perfect for the coconut lover!
prep time: 10 minscook time: 15 minstotal time: 25 mins

Ingredients

  • 1 (14 ounce) bag sweetened coconut flakes
  • 7 ounces sweetened condensed milk (about 1/2 of a 14 ounce can)
  • semi-sweet chocolate, optional

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper or a Silpat Mat.
  2. In a medium bowl combine add coconut. Then pour condensed milk over top. Mix with a spoon until the coconut and milk are completely mixed and all of the milk combines with the coconut.
  3. Use a 1 tablespoon scooper. Scoop and then press the mixture into the scooper to make sure you get a well packed scoop. Place them on the baking pan about a finger apart. They will not spread so you can place them pretty close together.
  4. Bake until the tops are golden brown, about 14-16 minutes. If the tops are not perfectly browned but the bottoms are, you can turn the broiler on and broil until the tops are perfectly browned, about 1-3 minutes.
  5. *Do not walk away when broiling, you can go from golden brown to crispy in a flash.
  6. Remove from oven and allow to cool for 5 minutes, if you can wait that long.
  7. Serve and enjoy!
  8. If you would like the chocolate dipped version, just melt some chocolate chips in the microwave and then dip the macaroons after they are cooled. Allow them to sit on the baking sheet until the chocolate is set.

Can I use low-fat ice cream?

No. You cannot substitute low-fat or reduced-sugar ice cream in this ice cream bread recipe. 

This is because the fat and sugar in the ice cream are needed for the recipe to turn out properly. The results just won't be the same if you make substitutions.

Can I use regular all-purpose flour?

No, all-purpose flour will not work in this recipe. You need to have self-rising flour so that it rises properly. However if you do not have self-rising flour, there is an an easy substitute!

Substitute for Self-Rising Flour

You can substitute all-purpose flour in this quick bread recipe by making a few adjustments. 
Self-rising flour is a blend of all-purpose flour, baking powder, and salt.

If you plan to use all-purpose flour, you’ll need to add 1 tablespoon of baking powder and 3/4 teaspoon salt to it. Then, use all-purpose in place of the self-rising.

Best add-ins for ice cream bread

Half the fun of making this ice cream bread recipe is using different types of ice cream to change the flavor.

But, if what you have on hand is vanilla ice cream and you really want strawberry ice cream bread, you can add sliced strawberries to your batter.

If you want chocolate ice cream bread, you can use chocolate ice cream along with chopped nuts and a handful of chocolate chips.

Just make sure that you do not add things that increase the amount of liquid in the recipe or it may not turn out the same.

So, while chopped apples should work, applesauce will not. Experiment until you find the quick bread flavors your family likes the best.

Making ice cream bread

Making this recipe doesn't get much easier. 

  1. Preheat your oven. 
  2. Mix the two ingredients in a large bowl. Don't over mix it. Just mix to combine. 
  3. Pour it into the bread pan.Smooth the top with a spatula. 
  4. Bake. After baking, allow it to cool completely. Then, remove it from the pan and enjoy.

  • Adjust the baking time based on the size of the pan you use.

  •  Chocolate Chip Ice Cream Bread - Add 1 cup chocolate chips to the batter.
  • Strawberry Ice Cream Bread - Use strawberry ice cream and mix in 1 cup chopped fresh strawberries.
  • Cookies & Cream Ice Cream Bread - Use cookies and cream ice cream, add 10-15 Oreo cookies, chopped.

Storing and freezing the bread

If you have leftover ice cream bread, you can wrap the leftovers tightly in plastic wrap or aluminum foil and store it in the refrigerator for three to five days.

Or, you can slice it and freeze individual pieces of bread in the freezer for up to six months. 

Just make sure to place freezer paper between each slice so that they don't stick together.

2-Ingredient Ice Cream Bread

This Ice Cream Bread Recipe makes a simple dessert that your family will ask for over and over again. It only requires 2 ingredients; softened ice cream in your favorite flavor, and optional multi-colored sprinkles.

prep time: 5 minutes    cook time: 40 minutes    total time: 45 minutes

Ingredients:
  • 2 cups full-fat ice cream, softened (we used vanilla bean)
  • 1 1/2 cups self-rising flour *see notes about using all-purpose flour
  • Rainbow sprinkles, optional
Instructions:
  1. Preheat oven to 350°F. Spray a 9x5 loaf pan with non-stick spray, set aside.
  2. Combine ice cream and flour in a large bowl. Stir until just combined. 
  3. Pour the mixture into the prepared pan. Smooth with a spatula and top with rainbow sprinkles if desired.
  4. Place on the center rack in the oven and bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  5. Place Ice Cream Bread on a cooling rack for 5-10 minutes, then flip it out of the pan and let the bread cool completely on the cooling rack.
  6. Slice and serve.
DONNA'S NOTES
  1. Ice cream bread will keep for 3-5 days in an airtight container at room temperature. You can also keep in a freezer bag in the freezer for up to 6 months.
  2. If you have no self-rising flour, you can use 1 1/2 cups all-purpose, 1 tablespoon baking powder and 3/4 teaspoon salt.
