Tomato basil soup recipe notes

  • Seasoning is important

Because ingredients range in flavor, always taste and adjust seasonings before serving.

You may find that the soup needs more sweetness or acidity for balance, or maybe the flavor from the herbs isn’t strong enough.

  • Adjusting the texture

Pureeing the soup makes for a smooth, creamy finish. But, if you don’t mind little pieces of onion in the soup, you can skip this step entirely.

Ingredient notes and substitutions

  • Chicken broth - If you use low-sodium or unsalted chicken broth, you may need to add more salt at the end. You can also substitute vegetable broth to make this recipe vegetarian.
  • Heavy cream - Replace with half-and-half if needed.
  • Sugar - Adjust the amount of sugar based on how sweet you like your soup. Some brands of canned tomatoes have higher acidity than others, so you may need a little more sugar to balance the flavor as well.
  • Basil - While using fresh basil will give you the best flavor, you can also use the kind that comes in a squeeze tube from the produce section. Or use dried basil, but reduce the amount by at least half.
  • Parmesan - Buy a fresh wedge and grate it yourself. The texture found in packaged shreds is much different, and it won’t melt into the soup the same way that fresh will.
Kitchen tools needed for this recipe
  • Immersion Blender - This is the perfect tool to blend soups and sauces right in the pot, which makes cooking so much easier! If you don’t have one, work in batches to blend the soup in a food processor or high-speed blender.
  • Chef’s Knife - Quality knives make prep time much quicker and are important for safety as well. If you make one kitchen investment, I believe it should be in a good quality chef's knife.
  • Cutting Boards - I love these cutting boards because they’re easy to clean, keep your knives in great shape, and are gorgeous to look at too.

Serving suggestions

Garnish your homemade tomato basil soup with croutons, fresh basil, and grated Parmesan cheese.

Serve it with a grilled cheese sandwich, some mac and cheese bombs, or slices of thick, crusty bread.

It would also be delicious with a side of Texas Roadhouse rolls!

FAQ: Recipe Questions

Can I use fresh tomatoes instead of canned?

You can use fresh Roma tomatoes if you prefer them. However, it will require a bit of prep work first.

One 28-ounce can of crushed tomatoes equals 8 to 10 Roma tomatoes, or about 2 pounds. For this tomato basil soup recipe, you will need twice that amount.

  1. First, blanch the tomatoes - find instructions on how to do that here.
  2. Peel, core, and dice the tomatoes. Then, use a potato masher to crush them.
Alternatively, you can pulse them in a food processor or high speed blender, just until they are chunky.

Can the soup be frozen?

Freezing soups that have milk or cream in them isn't a good idea. Thawing and reheating the soup changes the consistency, causing the cream to separate from the.rest of the soup.

Although it's possible to recombine them as they warm up, the texture of the soup changes and is usually unpleasant.

However, if you want to make the tomato basil soup recipe ahead and freeze it to serve later, you can simply leave out the heavy cream. Then, stir it in after reheating the soup.

Before freezing the soup, allow it to cool before transferring it to jars or airtight containers. It may be kept in the freezer for up to 6 months.

Reheating leftover tomato soup:

When you are ready to enjoy it, transfer the container of soup to the refrigerator so that it can thaw overnight.

Reheat it in a pan over medium heat on the stove. After it warms up, stir in the heavy cream and continue to cook on medium heat for another 5 minutes.

Enjoy!

Lazy Day Mac and Cheese

3-Ingredient Mac and Cheese is the ultimate comfort food made simple. This Lazy Day recipe is so easy to cook, you will be making it all the time. It is utterly creamy and loaded with ooey gooey cheese. Perfect any night. This one pot meal makes for less dish washing and that my friends makes it a home run.
is the ultimate comfort food made simple Lazy Day Mac and Cheese
Ever since I first shared our One-Skillet 20-Minute Mac and Cheese with Broccoli, 2 years ago I have been enjoying this quick and easy method of mac and cheese making more nights than not.

Now don't get me wrong, Super Simple Mac & Cheese Italian Style is still a family favorite. As a matter of fact. I made it the night I was working on this post. I was so inspired by all the mac and cheese recipes.

I have a culinary confession to make. I have been playing with a lot of different variations of mac and cheese this last year and Munchkin says "Mommy, I don't mean to hurt your feelings. But, I don't like your mac and cheese.

Can we have the one in the box?" Ugh!  True confession; I have been battling the box mac and cheese with my 5 year old. It's like a dagger in the heart.

Well, after some playing around I realized she did not like the flavor and texture of the mac and cheese she was associating with 'homemade'. You know the thick and yummy cheese that you think of when it is potluck time.

So, I went back to basics. I stick with familiar cheeses, like mozzarella, Parmesan and cheddar. I also add more milk so the cheese sauce is creamier. SCORE! I got my mac and cheese lover back.

This 3-Ingredient recipe is so easy and creamy. As with any recipe that relies on a few ingredients, make sure those ingredients are the best. For this recipe I picked out my favorite good quality cheese and it really kicks the flavor up a notch!

It's funny but I absolutely love homemade mac and cheese and while we were working on our new cookbook, we developed our new favorite.

Helpful Tips to make Lazy Day Mac and Cheese:

  • Use full fat milk in this recipe. If you choose to go with a low-fat (2% or skim milk) you will want to cook more slowly and add in a little corn starch.
  • Do NOT add salt until the end, adding it too soon will result in a grainy mac and cheese (caused by the milk curdling, which is fine to eat but not as pleasant). For an über rich mac and cheese you can use heavy cream or half and half.
  • Feel free to add spices as desired at the end. A sprinkle of parsley goes a long way for added freshness.
  • Add your favorite cheeses, I have used sharp cheddar, mild cheddar and extra sharp. I usually use about half sharp and half mild for my perfect flavor. Also note, the pre-shredded cheese you can buy at the store has a corn starch like coating on it that may cause your cheese sauce to be super thick. You can add an extra splash of milk to thin it out a little.

It gets even better than that; you can make these ahead. That's right! Prep them the night before and pop them in the oven in the morning.

Nothing says 'holiday' like starting the day with a special breakfast.

Whether it is Thanksgiving, Christmas, New Years or a Father's Day I love starting the day off with a scrumptious homemade hot breakfast.

As I have shared many times, I am not much of a morning person. Which kind of throws a wrench in those morning breakfast plans.

I would love to get up at 5 AM and start making breakfast from scratch. But let's be honest, that's not happening!

This scrumptious recipe is the pull apart egg breakfast of your dreams Cheesy Bacon and Egg Breakfast Bombs (VIDEO)Most days my crew will usually eat cereal, and I will grab a protein shake.

The only hot breakfast my family and friends are going to be eating is one that I prepared the night before, and I can toss in the oven in the morning.

That is one of the many reasons I absolutely love love love make-ahead breakfasts!

They are awesome for less stress and more time to spend with your family and friends.

A make-ahead breakfast with ooey-gooey cheese and Cherrywood Smoked Sliced Bacon; it doesn't get much better than that!

These Cheesy Bacon and Egg Breakfast Bombs start with frozen dinner rolls (yes that simple).

The bread roll is rolled out and loaded up with cheese, bacon, eggs, jalapeno and roasted red peppers.

Then you wrap it up like a little package and bake it in the oven (or pop it in the fridge until morning).

And you can customize these to make them whatever you like.

They are your favorite breakfast items rolled into one scrumptious, portable taste sensation!

Starting the day with an amazing breakfast inspired by our traditional cheesy bombs is the perfect way to get the day going!

Literally on November 1st, I am in holiday mode.

I am ready for the Christmas tree to go up and I am planning for Thanksgiving, Christmas and New Year.

By November 2nd I already have a plan. There is no time to waste.

It's the holiday season, the most wonderful time of the year and I want to enjoy every microsecond of it!

Helpful Tips to make Cheesy Bacon and Egg Breakfast Bombs:

  • If you would like these to be round (more like our traditional bomb series) and less like a pull-apart bread you can bake them on a cookie sheet about 2-3 inches away from each other.
  •  If you prefer, you can use a pastry roller or small rolling pin to roll these bombs out.

What you will need to make Cheesy Bacon and Egg Breakfast Bombs:

  • Jelly Roll Pans (baking sheets with sides) - used for everything from cookies to roasting, a good baking pan will last for years.
  • Mixing bowlsCombine all of the ingredients for this salad in a large mixing bowl.
  • Whisk - I have had this set for over 10 years and it is still as good as the day I bought it. With 3 sizes there is a whisk for every job.
  • Cheese Grater- As much as I love buying shredded cheese because I'm lazy, freshly grated cheese melts down so much better and creates a smoother recipe.

Enjoy!

Yield: 8

Cheesy Bacon and Egg Breakfast Bombs

Cheesy Bacon and Egg Breakfast Bombs are soft and tender portable poppers, stuffed with smoky bacon, scrambled eggs and ooey-gooey cheese! This scrumptious recipe is the pull-apart breakfast of your dreams!

Ingredients

  • 1 pound Applewood smoked bacon
  • 4 large eggs
  • 2 tablespoons whole milk
  • 1/8 teaspoon kosher salt
  • pinch black pepper
  • 16 frozen dinner yeast roll dough balls
  • flour (to dust counter)
  • 8 ounces shredded mild cheddar cheese
  • 1 medium jalapeno, diced
  • 1/4 cup roasted red peppers, diced
Garlic Herb Butter
  • 4 tablespoons unsalted butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon kosher salt

Instructions

  1. Prepare bacon. I love my bacon in the oven. Bake at 400ºF on a baking sheet. Cook 15-25 minutes or until desired crispness is reached. Remove from the oven. Allow to cool and chop into bite-size pieces.
  2. Meanwhile: Prepare the eggs. In a medium bowl combine eggs, milk, salt, and pepper. Whisk until completely combined. Spray a small skillet with non-stick cooking spray. Heat skillet over medium heat. Add the egg mixture and stir occasionally until the eggs are scrambled, and no liquid is left in the pan, about 3-4 minutes. Do not cook until they are completely dry, or they will be very dry in the breakfast bomb. Set aside to cool.
  3. Place dinner rolls on a microwave-safe plate and microwave on defrost for about 3-4 minutes (or until dough is no longer frozen, but not cooked). Butter a 9" pie plate or a 9"x9" baking pan and set aside.
  4. Lightly flour your countertop. Toss 1 piece of dough in flour and flatten and stretch like you are making a mini pizza. Stretch dough to about 3-4” across.
  5. Sprinkle a tablespoon of cheese over the dough and press into the dough with the palm of your hand. Top with one tablespoon eggs, one tablespoon bacon, 1/2 teaspoon jalapenos, and 1/2 teaspoon red peppers onto the center of the dough round. Pull the top and bottom edges of the dough together and then add the left and right edges. Pinch the dough together to create a ball. If the ball won’t seal, tap your fingertips into the flour and then crimp the seal together. Place dough ball in prepared dish. Repeat until all breakfast bombs are in the dish.
  6. Spray a piece of plastic wrap with non-stick spray, place the wrap sprayed side down on the breakfast bombs. Refrigerate until morning or proceed with instructions immediately (cook time will be about 30-35 minutes if not refrigerated).
  7. Preheat oven to 350°F.
  8. Remove baking dish from the refrigerator, remove plastic wrap. Bake for 40-45  minutes until the tops are golden brown and the breakfast bombs are no longer doughy. You can pull one of the edge pieces out and if it is still doughy cook it for another 5 minutes. Cover with foil if the tops start getting too brown (I covered mine at 25 minutes).

  9. Meanwhile: In a small bowl melt butter in the microwave, about 30 seconds or until butter is melted. Add garlic, parsley, and salt.  Stir with a pastry brush. Remove breakfast bombs from the oven. Brush them with melted butter mixture.
  10. Serve and enjoy!

DONNA'S NOTES

Beer Mac and Cheese with Bacon

I looooooove mac and cheese so much! I am constantly trying new ideas and turning some of my favorite dishes into mac and cheese.

One of our most favorite soups is our Beer Cheese Soup and I just had to turn that into a creamy, cheesy, ooey gooey mac and cheese!

This super cheesy mac and cheese starts with thick cut bacon cooked in a skillet and a magical cheese sauce is created out of the bacon drippings.

Your favorite beer is cooked right into the mixture and a mixture of smoky spices are added in.  The cooked beer imparts a very distinctive taste that you can not get with any other ingredient.

These flavors result in a restaurant quality mac and cheese unlike anything that you have had before.  It's ready in less than half an hour.

Trust me, you NEED this in your life!

What you will need to make Beer Bacon Mac and Cheese:

    • A large skillet with a lid – To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.
    • Mesh Strainer – Normally you don’t need to drain the grease when cooking with lean ground beef, but if you do, a mesh strainer will help ensure you don’t lose any of the cooked meat.

Applebee's and I go way back.  The small town I grew up in had an Applebee's in the town mall and it was THE place to go.

Lunch meeting, after work happy hour, and shopping dinner breaks were all enjoyed at Applebee's.  These days you can't think about Applebee's without the Spicy Queso Dip popping in your mind.

Spicy Queso Dip is insane!  A southwestern inspired creamy white cheese dip to please the palate and leave your taste buds begging for more.

The recipe serves 4, but really I could eat the whole thing myself.  Do you see that dollop of pico in the center?  Oh that is mine.  It just adds even more texture to this fabulous dip.

Chad and I absolutely devoured the queso blanco.  We are planning to serve this at our next game day party along with our favorite pico de gallo and guacamole recipes (scroll down to see those).

Game day or any day we love tortilla chips and dip.

It is so funny that growing up in Florida buying chips and dips for a party literally consisted of potato chips and onion dips and such.  When I first moved out to Arizona it was culture shock.

But, these days it has a whole different meaning.  Every party our here has salsa, guacamole and some cheese dip.  This Spicy Queso Blanco Dip will be on our permanent party menu for sure!

    Applebee's Copycat Spicy Queso Blanco

Now you can enjoy your favorite Spicy Queso Blanco Dip at home. Our Applebee's copycat recipe couldn't taste better. This creamy cheesy dip with a little kick is loaded with 2 cheeses, fresh herbs and just enough heat to make your tongue tingle.

    Ingredients

    • 1 tablespoon refined coconut oil (or other neutral oil)
    • 1 small onion, divided
    • 2 - 4  jalapeno peppers, seeded, deveined, and minced (divided)
    • 1/2 cup heavy cream
    • 8 ounces Monterey Jack cheese, cut into chunks
    • 4 ounces white American cheese, cut into chunks
    • 1 1/2 tablespoons fresh chopped cilantro, divided
    • 1 Roma tomato, de-seeded and diced

    Instructions

    1. Cut onion in half and mince one half.  Set aside.
    2. Warm oil in a small saucepan over medium heat.  Add 2/3 of minced jalapeno and grate 1/2 onion into pan.  Stir to coat and cook for 3-5 minutes until tender.  Add cream and bring to a bubble.  Add cheese a little at a time, stir until cheese is melted.  Stir in 1 tablespoon cilantro.
    3. To create a simple pico de gallo:  Combine chopped onion, tomato, 1/2 tablespoon cilantro, and remaining jalapeno in a bowl.
    4. Pour queso blanco into a medium size serving bowl (2 ½ cup or larger).  Top with pico de gallo.  Serve and enjoy!

    DONNA'S NOTES

    1. Adjust jalapenos according to the heat you would like.  For mild heat, add less.  For a spicier dip add more.

Updated: 7/26/14 Several readers have had trouble combining the cheese into the cream. After retesting with several brands there was only one brand that worked with the white cheddar (obviously the brand I was using in the initial testing).   Therefore the recipe has been updated with the next best choice, white American cheese.  Thank you for all your feedback!
