This chicken bacon ranch pasta salad might be my new favorite side dish! I'll be making it all summer long because I love it and my whole family loves it. It’s perfect for taking with you to a picnic at the park, or potluck dinner with friends.

This pasta salad is packed full of bacon, chicken, diced tomatoes, green onions, and cheddar cheese, all covered in a creamy ranch dressing! It’s a delicious cold pasta salad and so easy to throw together. All the flavors come together deliciously and this is bound to be a favorite anywhere you serve it!

  • Make it ahead of time! This pasta salad tastes best after sitting in the fridge overnight. It really allows the flavors to meddle well, and is also a great way to grab and go with it when you need it!
  • Add a sprinkle of salt to the water when cooking your pasta to give it a little more flavor!

  • Strainer- You can't make pasta without a good strainer. Use it to drain the water from your pasta before mixing it with the other ingredients.
  • Mixing bowl with a lid- Since this pasta salad is best if made in advanced, store it a way in your fridge with a bowl and lid combo that keeps it tightly fastened and perfect for traveling to your party.

Chicken Bacon Ranch Pasta Salad

Chicken Bacon Ranch Pasta Salad is the consummate pasta salad, loaded with fresh ingredients and it's bursting with flavor. It’s perfect for a summer BBQ or Potluck!
prep time: 15 MINScook time: 15 MINStotal time: 30 mins

Ingredients

  • 16 ounces medium shell pasta
  • 2 large chicken breasts (or about 2 cups previously cooked chicken)
  • salt and pepper, to taste
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup milk
  • 3 tablespoons Ranch dressing mix (or 1 1oz ranch dressing mix packet)
  • 1/4 teaspoon garlic powder
  • 1 cup chopped Roma tomatoes
  • 2 cups cubed cheddar cheese
  • 1/3 cup sliced green onions (about 4 stalks)
  • 1 (2.25-ounce) can sliced olives, drained
  • 8 slices of bacon, cooked and crumbled

Instructions

  1. Bring a large pot of water to boil and cook your pasta according to package directions. Drain and rinse the pasta with cold water when done.
  2. Meanwhile; saute chicken breasts in a pan over medium-high heat, seasoned with salt and pepper, flipping after about 5 minutes. Cook until internal temperature of the chicken reaches 165 degrees. Allow to rest for 10 minutes before dicing.
  3. In a medium bowl (or mason jar), combine sour cream, mayonnaise, milk, ranch dressing mix and garlic powder. Stir together till smooth. Set aside.
  4. In a large bowl, combine cooked pasta, chicken, diced tomato, cheese cubes, green onions, olives and bacon. Stir together to combine.
  5. Cover and place in the fridge for 2 hours (or more) before serving.

How To Make A Cobb Salad Pasta Salad

One of the wonderful things about this pasta salad recipe is that you can kinda customize it to your liking.

I often use bow tie pasta because it has a little personality, but you can use any medium-sized pasta for the recipe.

It’s Erin from Suburban Simplicity bringing you a perfect anytime salad, but especially this time of year.

This Cobb Pasta Salad is an easy weeknight dinner for us, but it’s also the perfect take-along to potlucks for picnics!  We do love our salads!  This Shrimp Salad is a tasty winner too!

Once it’s cooked al dente (which means cooked firm to the bite), I run it under cold water to cool it down and make sure it doesn’t stick together.

Next, comes the fresh ingredients that really make this pasta sing.

While your bacon is frying, cut up your tomatoes and avocados, chop your cooked chicken and hard-boiled eggs, slice the green onions, and crumble your blue cheese.

When bacon is done and cooled, chop or crumble it. This is such as easy pasta salad to assemble.

Place the cooked and cooled pasta in a large bowl.  Reserve a few of the add-in ingredients to place on top if you wish.

Add all remaining ingredients and pour dressing over the salad and toss lightly to coat.  Top with reserved add-in ingredients.

Your salad will look so super appetizing at this point! Try to resist eating a bite or two until it gets to the table - if you can!

Helpful Tips to make Cobb Salad Pasta Salad:

  • I like using farfalle pasta (the bow-ties are so cute), but any type of medium-sized pasta could be substituted like penne or fusilli.
  • The ranch dressing is a perfect match for this salad, but feel free to use blue cheese or other dressing of your choice.
  • This salad can be made up to a day ahead of time, however, I recommend adding the avocado just before serving. 
  • If your pasta salad is being made ahead of time, add a little extra dressing because it soaks in and will become a little dry.

Cobb Pasta Salad

Cobb Salad Pasta Salad always makes my mouth water! There’s something about the combination of flavors in a Cobb Salad. The perfectly cooked pasta, crisp bacon, ripe tomatoes, cubed chicken, chopped eggs, creamy avocado and blue cheese, come together to make a hearty and delicious meal.
prep time: 15 minscook time: 10 minstotal time: 25 mins

Ingredients

  • 1 pound farfalle pasta (or other medium-sized pasta)
  • 1 1/2 cups cherry tomatoes, halved
  • 2 cups cooked, chopped chicken
  • 8 slices bacon, cooked & crumbled
  • 4 hard-boiled eggs, peeled & chopped
  • 1 large avocado, peeled & chopped
  • 3 medium green onions, sliced
  • 1/3 cup crumbled blue cheese
  • 1 cup ranch dressing or blue cheese dressing

Instructions

  1. Cook pasta al dente per the package instructions.  Run under cold water to cool and rinse starch off.
  2. Cook bacon and prepare all other ingredients. If desired, reserve a few of each add-in ingredient to place on top of pasta salad for garnish.
  3. Place cooked and cooled pasta in a large bowl.  Add all remaining ingredients and pour dressing over the salad and toss lightly to coat. Garnish with reserved ingredients. 
  4. Serve immediately or refrigerate for up to a day.

Helpful Tips to make Cuban Pasta Salad:

  • The deli counter is your best friend for this Cuban Pasta Salad recipe. You can give them a list of exactly what you need (including the Swiss Cheese) then continue to shop and come back to pick up everything at the end of shopping. They won’t cube the meat/cheese for you, but they can slice it to your specified thickness.or.
  • If your deli doesn’t have pork roast (some do, some don’t), then you can purchase sliced pork top loin.  To cook, heat 1 tablespoon olive oil in a skillet over medium high heat.  Season pork with salt and pepper and cook for about 3 minutes per side.  Let rest 5-10 minutes before chopping into cubes.
  • It is important to not overcook your tortellini otherwise it will fall apart when tossed.
  • To stop your pasta from cooking after it’s removed from the heat, rinse and drain it in cold water.
  • Discard the very top flimsy part of the Romaine because it doesn’t have as much crunch then use the lettuce closest to the bottom stem for maximum crunch.
  • You can make the dressing up to 24 hours in advance and store in an airtight container in the refrigerator.  I think the dressing is far superior when made in advance because the flavors have time to develop. 
  • As written, the dressing is infused with garlic and citrus but not overpowering.  If you want even a more sour taste characteristic of Mojo sauce, then add 1-2 tablespoons cider vinegar – but be sure you to taste the dressing first!

What you will need to make Cuban Pasta Salad:

  • Colander this kitchen essential makes life so much easier!  You can use it to drain pasta or wash veggies and fruit.
  • Cutting Board- A big good solid cutting board so you can prep all your veggies on one surface.  I use my cutting board daily so it’s worth the investment. 
  • Quality Knives- Quality knives make prep time much quicker and are important for safety as well.  If you make one kitchen investment, I believe it should be in quality knives.

Cuban Pasta Salad with Mojo Dressing

Your favorite Cubano Sandwich turned into mouthwatering Cuban Salad with Mojo Dressing! This flavor bursting salad is loaded with fixings but is super simple to prepare. It will be the in-demand pasta salad recipe at all your summer potlucks!

Ingredients

Pasta Salad
  • 20 oz. cheese tortellini 
  • 8 oz.  1/2-3/4" cubes pork roast (or cooked pork top loin)
  • 8 oz.  cubes honey glazed ham
  • 4 oz.  1/2-3/4" cubes salami or chopped sliced salami
  • 6 oz.  1/2-3/4" cubes Swiss cheese 
  • 1 pint cherry tomatoes, halved
  • 2/3 cup chopped dill pickles
  • 3 tablespoons chopped pickled jalapenos (or more to taste)
  • 1/4 of a small red onion, thinly sliced 
  • 2 cups packed roughly chopped romaine lettuce
  • 2 tablespoons chopped cilantro
Mojo Dressing
  • 6 garlic cloves, minced
  • 3 tablespoons orange juice
  • 1 tablespoon orange zest
  • Juice and zest of one lime
  • Juice and zest of one lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon pepper
  • 2/3 cup canola oil

Instructions

  1. Bring a large pot of water to a boil. Cook tortellini according to directions on the package.  Drain and add to a large serving bowl. 
  2. Combine dressing ingredients in a pint size mason jar. Seal and shake vigorously. Pour half of the dressing over the warm pasta and toss to combine.
  3. Add the remaining salad ingredients to the bowl EXCEPT romaine lettuce and toss until well coated.  Chill in the refrigerator at least one hour.  When ready to serve, add romaine and remaining dressing and toss to combine.

Helpful Tips to make Taco Pasta Salad:

  • Make sure to cook the tortellini just until tender. Overcooked tortellini will be more likely to turn soggy and fall apart in your salad.
  • Add the Doritos to the salad just before serving so they stay crunchy. If you’re taking this salad to a potluck, crush the chips in a big layer on the top so every serving gets a good helping. If keeping in your fridge for individual servings, take a handful of chips and crush them over the top of your plate before eating.
  • Drain your cooked ground beef well. Make sure to remove any excess fat from your cooked ground beef before seasoning. Since this is a cold salad, ground beef that has not been drained can taste gritty and undesirable. 

What you will need to make Taco Pasta Salad:

  • Large slotted spoon- Use this to remove the cooked tortellini from the cooking water to avoid broken pasta and uneven draining. 
  • Wooden SpoonYou’ll want a nice, sturdy spoon to help you stir this hearty salad together
  • Mixing Bowl- This tortellini salad is perfect for a crowd and will need a large bowl to mix and store it in.

Taco Pasta Salad

Taco Pasta Salad takes south-of-the-border ingredients and wraps them up with tender cheese tortellini for a fusion of flavors, sure to be your next potluck favorite!

Ingredients

  • 1/2 pound ground beef
  • 1/2 packed taco seasoning
  • 16 ounces frozen cheese tortellini
  • 1/2 cup sliced black olives
  • 1 orange bell pepper, chopped
  • 1 cup cherry tomatoes, quartered
  • 3 green onions, chopped
  • 1 bottle catalina dressing
  • 1/2 bag Nacho Cheese Doritos, Crushed 

Instructions

  1. Cook Cheese tortellini according to packaged directions. Remove from cooking water with a slotted spoon and transfer to a large mixing bowl.
  2. Meanwhile, in a medium skillet over medium high heat cook ground beef until cooked through. Add taco seasoning (about 1 1/2 tablespoons). Stir to combine. Add 1/4 cup water and cover. Allow to cook for 5-7 minutes. Remove cover and cook until the liquid cooks off. Set aside.
  3. Combine tortellini with cooked and seasoned ground beef, olives, bell pepper, cherry tomatoes, and green onions.
  4. Dress salad with Catalina Dressing, adding just enough to coat all of the ingredients. Taste and add additional dressing as needed.
  5. Top salad with crushed Doritos just before serving.

Helpful Tips to make Bacon Shrimp Pasta Salad:

  • As a shortcut I use frozen shrimp that is already peeled, deveined and cooked. If you are using raw shrimp, just boil until shrimp turn pink and are a loose ‘C’ shape.
  • Add in extra veggies to bulk up this pasta salad even more. Fresh peas, tomatoes, spinach, zucchini, cucumbers or broccoli would all be great additions.
  • Use your preferred pasta. I like the large bow tie pasta for this salad because they are similar in size to the shrimp. But, most any pasta will work just as well.
  • I prefer to cook bacon in the oven. Spray a rimmed baking sheet with nonstick. Lay bacon flat on pan. Bake at 375ΒΊF for approximately 15-20 minutes.

What you will need to make Bacon Shrimp Pasta Salad:

  • Large Colander- You will need this to drain the pasta and shrimp.
  • Sharp Knife- This recipe requires some chopping. A good, sharp knife is always handy to have in the kitchen.
  • Measuring Cup- You want to get the dressing measured and mixed up completely before adding into the pasta salad.

Bacon Shrimp Pasta Salad

Bacon Shrimp Pasta Salad will be a new favorite side dish for you barbecues, potlucks and parties! Pasta salad is taken up a notch with shrimp and bacon. In fact, this pasta salad could easily be a summertime dinner.

Ingredients

Salad
  • 16 ounces bow tie pasta - cooked according to package instructions, drained & cooled
  • 16 ounces large cooked frozen shrimp (deveined & peeled) - thawed & rinsed
  • 12 ounces cooked bacon - chopped
  • 4 celery stalks - chopped
  • 1 red bell pepper - seeded & chopped
  • 1/2 small red onion - finely chopped
Dressing
  • 1/2 cup mayonnaise
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground pepper
  • 1/2 teaspoon sugar
  • Handful fresh parsley - chopped

Instructions

  1. In large bowl, combine all salad ingredients.
  2. Whisk together all dressing ingredients until fully combined.
  3. Pour dressing over pasta salad. Gently toss until salad ingredients are evenly coated with dressing.
  4. For best results, refrigerate 2+ hours before serving.
