Y'all know I love to entertainand we agreed that Cherry Limeade Pound Cake that is inspired by Sonic's famous summer cool down drink the cherry limeade was just the way to go.


The cake was so easy to put together and I opted for maraschino cherries to make it ever easier, but you can certainly use fresh sweet cherries too!

The cake was in the oven in 20 minutes and just tasting the batter made me antsy to get the cake in my mouth!

While the cake was cooling I put together the glaze and let the cake sit.

We waited and waited for what seemed like forever  before we served this fabulous cake at Chad's mom Gigi's retirement dinner.  It was insane!

  • If you only have regular 7-Up just add a splash of maraschino cherry juice and make sure the liquid still measures ¾ cup in the cake.  For the glaze use 1 ½ tablespoons soda and ½ tablespoon maraschino cherry juice.

Cherry Limeade Pound Cake

Cherry Limeade Pound Cake is a simple recipe for a moist and tender cake speckled with cherries and ribbons of lime zest. As if that isn't perfect enough, it's topped with a cherry lime glaze that will knock your socks off.
prep time: 30 minscook time: 1 hour and 15 minstotal time: 1 hours and 45 mins

Ingredients

  • 3 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3 cups granulated sugar
  • 1 1/2 cups (3 sticks) unsalted butter, room temperature
  • 1 tablespoon fresh grated lime zest
  • 5 large eggs, room temperature
  • 3/4 cup Cherry 7-Up *See Donna’s Note for substitutions
  • 2 (10 ounce) jars Maraschino cherries, drained
Glaze
  • 1 1/2 cups powdered sugar
  • 2 tablespoons Cherry 7-Up
  • 1 tablespoon fresh grated lime zest

Instructions

  1. Preheat oven to 325°F.  Butter and flour a 12-cup Bundt pan.  Reserve 10 Maraschino cherries (to be used in glaze).
  2. In a large bowl, use an electric mixer to combine butter and sugar.  Add lime zest.  Beat in eggs one at a time until well combined.  Add flour mixture 1/3 at a time, alternating with 7-Up.  Add remaining cherries, stir to combine.
  3. Pour batter into prepared Bundt pan.   Tap pan on the counter several times to release air bubbles.  Bake 1 hour 15 minutes or until a thin sharp knife comes out of the center clean.  Place on a wire rack to cool for 20 minutes.  Place a plate over the pan and flip cake onto plate to continue cooling completely.  You may have to tap pan a few times with a knife to release from pan.
  4. While cake is cooling chop reserved Maraschino cherries.  In a medium bowl combine cherries and glaze ingredients.  Beat with an electric mixer until well combined.  Glaze should be the consistency of corn syrup, add more powdered sugar (a tablespoon at a time) if necessary to thicken glaze.
  5. Drizzle the glaze over the cooled cake. 
  6. Serve and enjoy!

DONNA'S NOTES

It all starts with a coconut milk and lime marinade.  The two create a virtual tropical bath for the chicken bites.

The marinade is so fragrant you may be tempted to drink it.  But, save it for the chicken, you will thank me later.

Coconut Lime Chicken Bites

Bite sized chicken breasts are marinated in coconut milk and limes, then they are double coated to make these the crispiest most flavorful Coconut Lime Chicken Bites you have ever tasted. This recipe is super easy and these chicken bites are sooo addictive you are going to want to make 2!
prep time: 60 minscook time: 15 minstotal time: 75 mins

Ingredients

  • ½ cup fresh lime juice (approximately 3 limes)
  • zest of 3 limes (reserve a pinch for garnish)
  • 3 garlic cloves, minced
  • 1 cup Silk Original Coconut milk + 1 tablespoon, divided
  • 2 teaspoons kosher salt, divided
  • ½ teaspoon fresh ground black pepper
  • 2 pounds boneless skinless chicken breasts, washed and trimmed
  • 4 cups corn flakes cereal
  • 2 cups sweetened flaked coconut
  • 2 large eggs
  • 1 cup unseasoned bread crumbs
  • olive oil spray (aerosol or non-aerosol)

Instructions

  1. Combine lime juice and zest, garlic, coconut milk, 1 teaspoon salt and pepper in a measuring cup.  Beat with a fork to combine.  Set aside.
  2. Lay chicken breasts on a cutting board, using a fork, prick the chicken several times to help tenderize the meat. Cut chicken into bite size pieces.  Place chicken in a 1 gallon resealable zip top bag.  Place in the refrigerator to marinate (30 minutes, up to over night).
  3. Preheat oven to 425°F.  Prepare 2 baking sheets with olive oil spray.  Set aside.
  4. Prepare coatings.  In a 1 gallon zip top bag add corn flakes.  Seal and press on bag to crush cereal.  Once crushed up to small pieces add coconut and 1 teaspoon salt.  Toss to combine.  Set aside.
  5. In a medium dish beat 2 eggs and a tablespoon coconut milk until well combined.  Set aside.
  6. In a 1 gallon zip top bag add bread crumbs.  Set aside.
  7. Remove chicken from refrigerator and drain marinade.
  8. Line up your prep station on a clean counter: marinated chicken, bread crumb bag, egg wash, coconut mixture and baking sheet. (Or reverse it if you prefer your baking sheet on the far left side).
  9. A few pieces at a time toss chicken into bread crumbs, toss to lightly coat.  Transfer chicken pieces into egg wash.  Toss chicken to coat and place into coconut mixture.  Toss to coat well and press coconut mixture onto chicken if necessary.  Place chicken onto prepared baking sheet.  Once the baking sheet is full, spray lightly with olive oil spray and set aside while you prepare the second sheet.
  10. Prepare the second sheet the same as the first.  Place baking sheets into oven and bake for 12-15 minutes.  Flip chicken bites after 10 minutes. Cook until coating is golden brown and chicken is cooked through.
  11. Garnish with reserved lime zest, serve and enjoy!

How to Make Fruit Salad

Fruit salads are a pretty reliable sign of spring and warmer weather around here. We love fruit in our house, we eat it year round, but come spring our counters and refrigerator are packed with fresh fruit.

I love how bright it is and love creating new dishes with it. Throughout the warmer months you will see fruit filled cakes, fruit ice pops, fruit ice cream and even fruit cocktails (the adult kind) in our house.

I could only think of bringing ice pops or fruit and I figured fruit would travel much better in 96-degree temps.  I have to say it was a brilliant decision and I am pretty sure every drop was devoured, although I can't know for sure.

We did leave a little early. Chad mentioned ice cream and the next thing you know we were in the car driving to Dairy Queen. You know, priorities.  LOL

As I was saying, the fruit salad....  The very next day I decided to test the fruit salad recipe and I have to say the second recipe test resulted in my 'happy dance' AND a few pats on the back as I shouted out "I AM A GENIUS! OH MY GOSH, THIS IS DIVINE!"

Ok, so I guess you figured out that I love the fruit salad and you are probably wondering what is so special about it.

Tropical Fruit Salads are pretty fantastic on their own. I mean look at the players: pineapple, mango, kiwi, mandarin oranges and strawberry (for a pop of color).

They can certainly pull off a fantastic dish all on their own. But, you know how well lime compliments those tropical flavors, right? What about lime, honey, and ginger?

They are a  true flavor affinity! Then to kick it up a notch we added in lemon and more orange. Last, for a little nuttiness, I added poppyseed.

Helpful Tips to make Best Ever Tropical Fruit Salad:

  • This fruit salad is fabulous with whatever you have on hand. I love carambola (star fruit) and papaya in this salad as well.
  • Bananas are lovely, but have to be added at the last minute or they will get soft and not look pretty.
  • If you want to make the salad ahead, prepare the dressing and store it in the refrigerator in a mason jar until 30 minutes or so before you are ready to serve. Shake the dressing, pour over the salad and toss to combine.

What you will need to make Best Ever Tropical Fruit Salad:

  • Citrus Juicer - This makes juicing the lime much easier. Plus you’ll get every last drop out.
  • Microplane/Zester - This is great for zesting citrus. I also use mine to grate garlic.
  • Colander - Washing fresh fruit is much easier with a colander. Plus it’s great for draining pasta too.

Best Ever Tropical Fruit Salad

The Best Ever Tropical Fruit Salad is the only recipe you'll ever need. My entire picky family devoured this fruit salad. The dressing is truly magical. The combination of citrus juices with honey are phenomenal. Then we added a few special ingredients that give it a little nuttiness and a touch of zestiness to kick it up a notch. Perfect any-occasion dish.
prep time: 25 MINScook time: total time: 25 mins

Ingredients

  • 12 mandarin oranges, divided (for dressing and salad)
  • 2 cup strawberries, sliced
  • 1 pineapple, cut into bite-size chunks
  • 5 kiwi, sliced
  • 3 mangoes, cut into bite-size chunks
Citrus Poppy Seed Dressing
  • 1 medium lemon
  • 1 lime
  • 1/4 cup honey
  • 1/2 teaspoon Gourmet Garden Ginger Paste or fresh grated ginger
  • 1/2 teaspoon poppy seeds

Instructions

  1. Wash and dry lemon, lime and 2 mandarin oranges. Zest the washed and dried citrus with a zester or fine grater. Add to 1 cup measuring cup or small bowl. Cut each in half and squeeze the juice into the measuring cup. (You should get about 1/2 cup juice).  Add honey, ginger and poppy seeds to juice mixture and whisk until combined.  Set aside or place in the refrigerator if serving later.
  2. Prepare remaining fruit. Slice strawberries and kiwi. Section remaining oranges. Cut pineapple and mango into bite size chunks. Place fruit in a large bowl. Pour dressing on top of fruit about 30 minutes before serving. Gently toss to coat. 
  3. Serve and enjoy!

DONNA'S NOTE

How to make our Chipotle Rice recipe

  1. In a medium saucepan over high heat bring water to a boil. 
  2. Add rice, bay leaf, and salt.  Stir to coat. 
  3. Return to a boil. 
  4. Once it is a full rolling boil, reduce to simmer and cover for 15 minutes.  Remove from heat, leave covered for 5 minutes.
  5. Remove bay leaf. Fluff rice with a fork, add the oil, cilantro, and juices. Stir to combine.
  6. Serve and enjoy!

Cooking Tips for Fluffy Rice


The key to making this Chipotle rice recipe is making sure that it is light and fluffy with no lumps. Here are a few simple tips you can follow when making this recipe to make sure that happens.

  • Put your uncooked rice in a large bowl filled with cold water. Using your hands, stir it around. Then, strain the rice through a colander to remove the cloudy water which contains excess starch.

  • When making this recipe, do NOT try to cook it on high. You will just allow the water to cook off and the rice will not be cooked through before the water has evaporated. 

  • When it is done, allow it to sit for at least 5 minutes with the lid on before you serve it. This step allows the rice to steam. Make sure you do not skip this step.

FREQUENTLY ASKED QUESTIONS

Does Chipotle put oil in their rice?
Yes, Chipotle uses rice bran oil in their recipe. If you cannot find this, you can use any flavorless oil in our Chipotle Rice recipe.

I usually use canola oil when I make it. Or, for a heart-healthy choice, you can also use olive oil when you make this.

How to prevent rice from clumping
If your rice is clumping together rather than being light and fluffy, you may be stirring it wrong. Never stir cooked rice with a spoon.

Always fluff it with a fork instead. This is one of the most important steps in this Chipotle rice recipe. Stirring it activates the starch and will make your rice gummy.

Can you freeze cooked rice?
If you have leftovers after making this Chipotle rice recipe, you can freeze them. Package it in a freezer container or a resealable freezer bag.

This way, you can store your cooked rice for up to six months.

If you would prefer to store leftover rice in the refrigerator, just place it in an airtight container and use it within 3 to 5 days.

When you want to reheat it, just put 2 tablespoons of water for every cup of rice you want to reheat. Just heat until it's warmed through.

Or, you can heat it in a microwave instead of in a pot on the stove following the same method.

    Chipotle Rice Recipe

    Chipotle Cilantro Lime Rice is a simple recipe that is sure to become a staple in your house. Cilantro Lime Rice is perfectly soft and sticky with a nutty floral aroma. It has fresh cilantro speckled throughout and a bright flavor from citrus that makes this an incredible side dish that you are going to make again and again!

    Ingredients

    • 2 cups water
    • 1 cup long-grain jasmine rice
    • 1 bay leaf
    • 1 teaspoon kosher salt
    • 1 tablespoon canola oil (or any flavorless oil)
    • 1 tablespoon finely chopped cilantro
    • 1 tablespoon fresh lime juice
    • 2 teaspoon fresh lemon juice
    • 1 teaspoon orange juice

    Instructions
