I really love the tropical hint that coconut milk adds to a recipe and I have been wanting to make Coconut Lime Chicken Nuggets for a while now and there is no time like the present.

It all starts with a coconut milk and lime marinade.  The two create a virtual tropical bath for the chicken bites.

The marinade is so fragrant you may be tempted to drink it.  But, save it for the chicken, you will thank me later.

These fabulous tender chicken bites bake up with a super crispy coconut coating and a moist and flavorful chicken center.

The warm coconut and the bright lime come together to create a chicken nugget unlike anything you can buy at the store.

Munchkin called them "coconut candy nuggets".  They are that good.

Coconut Lime Chicken Bites

Bite sized chicken breasts are marinated in coconut milk and limes, then they are double coated to make these the crispiest most flavorful Coconut Lime Chicken Bites you have ever tasted. This recipe is super easy and these chicken bites are sooo addictive you are going to want to make 2!
prep time: 60 minscook time: 15 minstotal time: 75 mins

Ingredients

  • ½ cup fresh lime juice (approximately 3 limes)
  • zest of 3 limes (reserve a pinch for garnish)
  • 3 garlic cloves, minced
  • 1 cup Silk Original Coconut milk + 1 tablespoon, divided
  • 2 teaspoons kosher salt, divided
  • ½ teaspoon fresh ground black pepper
  • 2 pounds boneless skinless chicken breasts, washed and trimmed
  • 4 cups corn flakes cereal
  • 2 cups sweetened flaked coconut
  • 2 large eggs
  • 1 cup unseasoned bread crumbs
  • olive oil spray (aerosol or non-aerosol)

Instructions

  1. Combine lime juice and zest, garlic, coconut milk, 1 teaspoon salt and pepper in a measuring cup.  Beat with a fork to combine.  Set aside.
  2. Lay chicken breasts on a cutting board, using a fork, prick the chicken several times to help tenderize the meat. Cut chicken into bite size pieces.  Place chicken in a 1 gallon resealable zip top bag.  Place in the refrigerator to marinate (30 minutes, up to over night).
  3. Preheat oven to 425°F.  Prepare 2 baking sheets with olive oil spray.  Set aside.
  4. Prepare coatings.  In a 1 gallon zip top bag add corn flakes.  Seal and press on bag to crush cereal.  Once crushed up to small pieces add coconut and 1 teaspoon salt.  Toss to combine.  Set aside.
  5. In a medium dish beat 2 eggs and a tablespoon coconut milk until well combined.  Set aside.
  6. In a 1 gallon zip top bag add bread crumbs.  Set aside.
  7. Remove chicken from refrigerator and drain marinade.
  8. Line up your prep station on a clean counter: marinated chicken, bread crumb bag, egg wash, coconut mixture and baking sheet. (Or reverse it if you prefer your baking sheet on the far left side).
  9. A few pieces at a time toss chicken into bread crumbs, toss to lightly coat.  Transfer chicken pieces into egg wash.  Toss chicken to coat and place into coconut mixture.  Toss to coat well and press coconut mixture onto chicken if necessary.  Place chicken onto prepared baking sheet.  Once the baking sheet is full, spray lightly with olive oil spray and set aside while you prepare the second sheet.
  10. Prepare the second sheet the same as the first.  Place baking sheets into oven and bake for 12-15 minutes.  Flip chicken bites after 10 minutes. Cook until coating is golden brown and chicken is cooked through.
  11. Garnish with reserved lime zest, serve and enjoy!

Bite-size finger food seems to be the theme around here.  We have enjoyed countless quinoa bite lunches.

Then came the pizza bites and you had to know the cheeseburger bites would not be far behind.  Chad raved about them.

He was so excited.  He kept dipping them in ketchup and saying "It's amazing they taste just like a bacon double cheeseburger".  I was in total agreement.  Well, there you have it...

For lunch, we serve a small portion of these puffs with fresh vegetables and it makes Munchkin totally happy.  But, as an appetizer these are perfect.

Serve with your favorite burger toppings and even a pickle on the side.  Perfect!

What is your perfect formula for getting your kids to eat?  Right now, ours is bite-size food and fresh veggies.

Dinner's Ready!

Helpful Tips to make Bacon Double Cheeseburger Bite-Size Puffs:

  • Pre-shredded cheeses have additives to help keep the cheese from sticking together, called anti-caking agents. They also change the way the cheese melts and will cause thickening of your recipes. Skip the pre-shredded cheese and grate your own. I store it in a zip-top bag in the fridge and it keeps for several weeks.

Tools needed to make pizza bites
  • Mini Muffin Pan
  • Silpat Mat - is perfect for everything. We use them for rolling out doughs, baking cookies, biscuits, and other desserts. They are also great for transporting pans. Just line a baking sheet and place your baking dishes on the mat. It provides a non-slip surface for traveling.
  • THERMOS food jar is the best way to send your little ones off to school with a hot lunch!

Frequently asked questions

Recipe notes and tips for success
  • To send these pizza bites to school just fill a thermos with hot boiling water while you warm up the pizza puffs. Then pour out the water and place the pepperoni pizza puffs in the thermos. Seal and they will stay warm until lunchtime!

  • You can also stuff a cube of mozzarella cheese in the center of the puff before baking for an ooey-gooey cheesy center!

  • To save time, you can use a premade roll of biscuits. Just cut each one into 4 pieces and use two pieces per muffin cup. It's a great way to save time on a busy day.
  • You can make these in a cake pan or a bundt pan but you will need to cook it longer to make sure that they are done.

  • If you don't have Italian seasoning, substitute 2 parts of oregano, 2 parts of basil, and one part of thyme.

  • If you prefer not to use pepperoni, you can substitute Italian sausage. Or, you can make these with chopped peppers, onions, olives, and mushrooms for a vegetarian option.

  • When they are done, you can dip them in spaghetti sauce, cheese sauce, or even Ranch dressing.

How to freeze and reheat pizza puffs

My favorite way to freeze these pizza bites is to let them come to room temperature and place them on a jelly roll pan lined with a Silpat mat.

They flash freeze and then I pop them in a freezer gallon storage bag. That way, I can enjoy them whenever I want a quick snack or a light lunch.

Spritz them with water and either microwave them until heated or defrost them and pop them in a 350°F oven for about 10 minutes.

Enjoy!
