Last weekend we celebrated Chad's birthday. Family, friends and food; that is my kind of party!
It is deep in the heart of summer in the desert and at 110°, standing in front of an 800° grill for a long time is the last thing that I want to do. So I decided to pull together some crockpot components that helped me get off the grill quick.
I usually do potatoes and corn on the grill with burgers and brats. But, this time I only grilled the burgers and just tossed the brats on for a minute. Literally. I tossed them on, tossed them and took them off. No flare ups, no melted mascara... It was lovely.
So, you are wondering how I managed to cook brats that quickly. Crockpot of course! It is quite possibly one of the easiest slow cooker recipes I make. You toss in all the ingredients. Cook on high for 2 hours. Toss the brats on the grill just long enough to infuse that smoky caramelized grill flavor and then put them back in the crockpot on low until ready to serve. Easy peasy.
Not to mention they are so flavorful and juicy. The crockpot is loaded with beer cooked onions to top your brats with which makes this recipe absolutely perfect. Crockpot sides (see that perfect corn over there) and a salsa bar were amazing with these. But you will have to wait for those recipes, at least until tomorrow.

Helpful Tips to make Best Ever Crockpot Beer Brats:
- You can cook down the onions and the liquid if desired to serve on top of the brats.
- Do not use a strong flavored beer or it will overtake the brat. Also, DO NOT poke holes in the brat. All the flavor will escape that way.
- You can not replace the beer in this recipe. You can however make good ol' crockpot brats and use low sodium chicken stock in place of the beer (keep an eye on your salt here). It will give you a totally different flavor, but they will be fabulous.

Best Ever Crockpot Beer Brats
Best Ever Crockpot Beer Brats is an easy recipe, prepped in just 5 minutes. Brats are slow cooked in a mixture of beer and spices to create the most flavorful juicy brat you have ever eaten. Tossed on the grill just long enough to infuse a smoky caramelized grilled flavor and topped with beer cooked onions, these are sure to be on the menu all year long!
prep time: 5 minscook time: 2 hourtotal time: 2 hours and 5 mins
Ingredients
- 6 original brats (I used Johnsonville)
- 2 (12 ounce) bottles beer (I used Blue Moon)
- 1 large yellow onion, sliced
- 3 garlic cloves, smashed and peeled
- 2 tablespoons unsalted butter
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon kosher salt
- 1 teaspoon course black pepper
Instructions
- Combine all ingredients in a slow cooker. Cook for 2 hours on high heat, reduce heat to low. Remove brats from slow cooker. Grill brats (or toss in a skillet) until you have sear marks (which gives you that yummy grilled taste) and place back in slow cooker until ready to serve.
- Serve brats on a bun of your choice. Hoagie roll or big sesame seed buns are my favorite. Top with the crockpot beer onions and your favorite toppings (cheese, ketchup or mustard are our staples).
- Serve and enjoy!
