The meals that really stick in my memory from my childhood are the ones that we enjoyed on Sunday.  Sunday dinners were always filled with family, fun, lots of love and the best food we ate all week.

Memories of my mom and dad in the kitchen wash over me as I remember those days.  My daddy belting out a heartfelt 50’s tune to my mom in the kitchen still leaves me swirling.

Helpful Tips to make 25 Minute Chicken Parmesan with Linguine and Broccoli:

  • You can use your own mixture of Italian cheeses. I like mozzarella, provolone and romano.

What you will need to make 25 Minute Chicken Parmesan with Linguine and Broccoli:

  • Mixing BowlsI like a variety of mixing bowls and prep bowls and this set has them all.
  • A large skillet with a lid – To help the pasta cook evenly, a wide skillet works best, ideally one that’s more than 12 inches in diameter.

Chicken Parmesan with Linguine and Broccoli

Chicken Parmesan with Linguine and Broccoli is simmered in a scrumptious tomato sauce and topped with oodles of cheese, served over a bed of linguine and broccoli… With a little more cheese… WOW! A simple recipe ready in just 25 minutes, it can be on your table any night of the week!

Ingredients

  • 4 small boneless skinless chicken breast halves (1 lb.)
  • 2 tablespoons milk
  • 1/2 cup Grated Parmesan Cheese
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (8 oz.) Hunt’s Basil, Garlic & Oregano Tomato Sauce
  • 1/2 teaspoon black pepper
  • 4 ounces linguine, uncooked
  • 1 package (16 oz.) frozen broccoli cuts, thawed
  • 1 cup Italian Blend Shredded Cheese, divided
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Prepare onion.  Chop onion into small pieces.
  2. Mince garlic cloves.
  3. Prepare dipping station with 2 bowls, add milk to the first and grated topping to the second.
  4. Dip chicken in milk then in grated topping, turning to evenly coat both sides of each breast.
  5. Heat oil in large nonstick skillet on medium heat. Add onions and garlic; cook and stir 3 min. Add chicken; cook 3 min. on each side. Add tomato sauce and pepper; cover. 
  6. Simmer 15 min. or until chicken is done (165ΒΊF).
  7. Meanwhile, cook pasta in large saucepan as directed on package, adding broccoli to boiling water for the last 2 min.
  8. Sprinkle shredded cheese over chicken; cook 2 to 3 minutes or until mozzarella is melted. Top with fresh herbs and grated cheese.
  9. Drain pasta mixture. Serve with chicken.
