How to make Instant Pot chicken and rice

It really doesn't get much easier than this recipe for chicken and rice in Instant Pot.


  1. Saute the veggies and rice. You simply saute the onions and carrots in a skillet until they are soft and golden. Then, you add the garlic and oregano followed by the rice and mushrooms.
  2. Add the chicken. After pouring the chicken broth into the pot, you add the chicken breasts and set the Instant Pot to pressure cook, allowing for a natural release.
  3. Shred the chicken, add the peas, and you are ready to serve this meal with some grated Parmesan cheese on top.

It's important that you follow the timing instructions exactly.

Just a few minutes off one way or another when you are using an Instant Pot can destroy a recipe. And, be sure that you set a timer to keep track of how long it cooks.

You don't want to over cook this recipe.

TIME SAVING TIP! A great short cut for shredding meats is to toss them into your stand mixer and run it on medium until it is perfectly shredded.

You can also place the chicken breasts in a large bowl and use a hand mixer to easily shred them.

This Instant Pot Chicken and Rice recipe is basically an entire meal in itself. It includes protein, starch, and vegetables.

But, if you want to offer an extra vegetable to stretch this meal, you can certainly do that. Here are a few you might want to try:

Frequently asked questions

Can you cook rice and meat at the same time in the Instant Pot? 

Yes, you can cook chicken and rice in Instant Pot. But, they may need to cook for a different amount of time.

In this recipe, they both cook for the same amount of time. So, you simply layer them in the order I mentioned in the recipe and they will both be done at the same time.

How to prevent rice from burning 

It's important that you add enough thin liquid to your Instant Pot.

If you have added a thicker liquid like sauce or gravy, this may not let your Instant Pot generate enough steam. If this happens, your rice may burn.

What to do if you get an Instant Pot burn warning

You need to add enough thin liquids like broth or water to your Instant Pot.

If you do get a burn warning when making Instant Pot Chicken and Rice, cancel the time left on the timer and use the quick release to release the steam.

Then, carefully open the Instant Pot and remove the inner pot. Check to be sure that all of the seals and parts are in proper working order.

Check your meal and stir it carefully. Remove anything that is overcooked or burned. Clean up the scorched food and put the food back into the clean pot.

Then, add more thin liquid. And, set the steam release. Finally, finish cooking per the original recipe.

  • chicken stock - this is my favorite, it is incredibly flavorful without too much salt

How can I store leftovers? 

Place leftovers in an airtight container and store them in the refrigerator for three to five days. Or, you can freeze them for up to six months.

Just thaw them in the refrigerator. And, reheat on the stove or in the microwave.

Instant Pot Chicken and Rice

Instant Pot chicken and rice is quick and easy to make in a pressure cooker. Make this recipe for creamy comfort food at its best!
Prep time: 5 Minutes Cook time: 20 Minutes Total time: 25 Minutes

Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoon kosher salt, divided
  • 1/2 yellow onion, diced
  • 1 cup diced carrots
  • 4 cloves garlic, minced
  • 1 tablespoon dried Italian seasoning
  • 1 1/2 cups uncooked jasmine long-grain rice, rinsed well
  • 1 cup baby Bella mushrooms, cleaned and sliced
  • 3 cups chicken stock
  • 1 pound boneless skinless chicken breasts
  • 1/2 teaspoon fresh ground black pepper
  • 1 cup frozen peas
  • 1/4 cup chopped fresh parsley
  • 1/2 cup Parmesan cheese

Instructions

  1. Set instant pot to saute on high. Add butter, olive oil, 1 teaspoon salt, onion and carrots.
  2. Saute the vegetables until soft and golden, stirring occasionally for about 4-5 minutes.
  3. Add minced garlic and oregano, stir and cook about 1 minute or until fragrant.
  4. Add salt and pepper to chicken, set aside
  5. Add rice and mushrooms to the pot.
  6. Pour the chicken broth into the pot covering rice and vegetables, add more broth if needed.
  7. Pour chicken broth into pot covering rice and vegetables, add more broth if needed
  8. Place chicken breasts on top of rice mixture and sprinkle them with the remaining 1 teaspoon salt and the pepper.
  9. Cover and cook on manual high pressure for 10 minutes.
  10. When done, allow the instant pot to naturally release pressure.
  11. Remove lid, remove chicken and shred into bite-size pieces.
  12. Stir in the parsley, peas, and the shredded chicken.
  13. Serve with Parmesan cheese to be sprinkled on top.

Mac and cheese quesadillas are a delicious way to enjoy your favorite mac and cheese nestled between a folded quesadilla.

My macaroni and cheese quesadillas are studded with jalapenos and crispy bacon for a delicious on the go meal or snack.

What's the best cheese for quesadillas? 

Any cheese that melts will work wonderfully in this mac and cheese quesadilla recipe. Just a few suggestions that you might want to try are:
  • Asiago
  • Colby
  • Cheddar
  • Gouda
  • Monterey Jack
  • Provolone
  • Queso
  • Swiss
  • Mozarella

Tips for making these cheese quesadilla recipe

This is really one of the easiest lunch or dinner recipes you can make. But, here are a few simple tips to make sure your mac and cheese quesadillas come out perfectly.

Are there special tortillas for making macaroni and cheese quesadillas? 

I used 4 8-inch flour tortillas in this recipe. So, you can use either white or whole wheat 8 inch tortillas.

I wouldn't choose the larger size tortillas when making this. The smaller tortillas are easy to handle.

How do you keep quesadillas crispy? 

One of my favorite things about this mac and cheese quesadilla recipe is how crispy and gooey it is after you cook it.

To make sure your quesadilla is crispy, simply lay one tortilla in the pan and add the toppings. Then, fold it in half.

You don't need to stack tortillas on top of each other. If you do this, it's possible that the top quesadilla won't be as crispy as the bottom.

If you want crispy mac and cheese quesadillas, do one at a time.

What can go inside a quesadilla?

You can put almost anything you want to inside a quesadilla. I've used jalapenos and bacon. But, you can add onions, peppers, mushrooms, diced chicken, cubes of ham, or steak.

It's all up to your family's taste preferences. Keep this mac and cheese quesadilla kid-friendly and try hot dogs with mac and cheese.

What's the easiest way to make bacon? 

For easy baked bacon: simply lay slices of bacon on a foil-lined baking pan. Place the pan in the cold oven, turn the heat to 400°F and bake for 15 to 25 minutes.

The length of time will vary based on the thickness of your bacon (thick-cut takes longer) and the doneness you prefer (I like mine crispy).

Chop up the cooked bacon and refrigerate until ready to use in your mac and cheese quesadillas.

You can substitute bacon bits for chopped bacon when making this cheese quesadilla recipe.

Serving suggestions

If you're wondering what to serve with my mac and cheese quesadillas, why not try fresh pico de gallo, cilantro, sour cream, avocado slices or chunky guacamole.

Finally, the kids may enjoy dipping it in ketchup rather than pico de gallo.

How can I store leftovers?

We try to make only as many as we know we will use. These cheese quesadillas are delicious right out of the pan.

But, if you do have leftovers, you can store them in an airtight container in the refrigerator for 3 to 5 days.

To reheat them, just warm them briefly on each side in a skillet. Add a bit of oil if you need to make them crispy again. Just warm them until the cheese starts to melt.

Mac and Cheese Quesadilla

Mac and Cheese Quesadillas are the ultimate comfort food, full of cheesy pasta. Make this recipe for the best cheese quesadillas you'll ever eat!

Ingredients

  • 1 Bob Evans Tasteful Sides Macaroni and cheese
  • 4 (8-inch) flour tortillas
  • 2 tablespoons butter
  • 1 cup (about 4 ounces) freshly shredded sharp cheddar cheese
  • 4 ounce diced green chiles
  • 8 slices of bacon, cooked and cut into bite-size pieces (about 1/2 to 3/4-inch)

Instructions

  1. Prepare mac and cheese according to package directions.
  2. Lay the tortillas on a clean countertop.
  3. Warm a 10-inch skillet over medium heat.
  4. Add 2 tablespoons of cheese to each tortilla. Sprinkle evenly over ½ of the tortilla, we are going to fold these in half to cook them so try to keep ingredients on the same side.
  5. Add about 1/4 of the prepared mac and cheese on top of the cheese in each tortilla.
  6. Then scatter about a tablespoon of green chiles over the mac and cheese in each tortilla.
  7. Sprinkle the bacon over the mac and cheese in each tortilla.
  8. Finish with another 2 tablespoons of cheese over the bacon in each tortilla. Fold the tortilla in half.
  9. Add 1 tablespoon of butter to the warm skillet and carefully place 2 quesadillas into the skillet (folded edge against folded edge to make a circle) and cook until golden brown, 2 to 3 minutes. Flip and cook the other side until golden brown, 2 to 3 minutes.
  10. Place quesadillas on a cooling rack while you prepare the remaining quesadillas. Cut the quesadillas in half.
