A frosting spiked with Cuervo Gold tequila and triple sec is brightened with fresh lime juice to make this the most amazing Boozy Margarita Cupcake you will ever sink your teeth into!

TSRI Tip:  If you don't have buttermilk, you can make your own to substitute.  To make 1 cup of buttermilk substitute:  simply add 1 tablespoon of white vinegar or lemon juice to a measuring cup.  Fill to the 1 cup line with milk.   Allow to set for 5 minutes at room temperature and use as needed.

  • If frosting is too thin, add powdered sugar to thicken it, about 1 tablespoon at a time until desired consistency is reached.

Boozy Margarita Cupcakes

Boozy Margarita Cupcakes are loaded with lime and tequila, the moist and tender cake will draw you in with incredible ribbons of lime zest through out. The icing on the cupcake? A true Margarita frosting!

Ingredients

For The Cupcake
  • 3 cups cake flour
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 4 large eggs 
  • 2 cup granulated sugar
  • 4 limes – zested and juiced (2 tablespoon zest, 1/2 cup juice)
  • 2 sticks (1 cup) unsalted butter, at room temperature
  • 1/2 teaspoon pure vanilla extract
  • 1/4 cup Cuervo Gold Tequila
  • 1 cup buttermilk (or make your own)
Boozy Margarita Frosting
  • 1/2 cup unsalted butter
  • 1/2 cup shortening
  • 1/4 cup Cuervo Gold Tequila
  • 3 tablespoons lime juice
  • 1 1/2 tablespoons triple sec
  • 1/4 teaspoon salt 
  • 5 cups powdered sugar

Instructions

For The Cupcake
  1. Preheat oven to 350°F. Prepare muffin tins with cupcake liners and set aside.
  2. In a large bowl combine flour, baking powder and salt.  Whisk to combine.  Set aside.
  3. In the bowl that you will prepare cupcake batter, add lime zest and sugar and mash together with a fork (or your fingers), until your sugar is coated in lime oils.  Attach bowl to stand mixer and use paddle attachment (or prepare electric mixer).  Add butter and whip until light and fluffy, about 3-5 minutes.  Add eggs and vanilla.  Mix until combined.  Add lime juice and tequila.  Your mixture may start to look funny here, just continue on with the next step.  It will work itself out.
  4. With mixer on low add dry and wet ingredients; add 1/3 dry ingredients to bowl, allow that to combine. Then add 1/2 of buttermilk wait for that to combine.  Add another 1/3 of dry ingredients and mix.  Add other 1/2 of buttermilk and mix.  Then finally add remaining dry ingredients.  Mix until combined.  Stop to scrape down the bowl as often as needed.  Do not over mix. 
  5. Fill cupcake liners 2/3 full.  Bake for 18-22 minutes, or until a toothpick inserted in the center of a cupcake comes out with few moist crumbs.
  6. Cool on a wire rack. Frost cupcakes with Boozy Margarita Frosting when completely cool.
Boozy Margarita Frosting
  1. In the bowl of an electric mixer, fitted with the whisk attachment, beat butter and shortening on medium speed until completely smooth (about 1 minute).  Add 3 cups of powdered sugar about 1 cup at a time, beat until well combined after each addition.  Add tequila, lime juice, triple sec and salt, beat to combine.  Add remaining powdered sugar one cup at a time.  Beat completed mixture for another minute or so until the batter is smooth and fluffy.
  2. *If frosting is too thin, add powdered sugar to thicken it, about 1 tablespoon at a time until desired consistency is reached.
  3. ** If frosting is too thick, add cold water a tablespoon at a time until desired consistency is reached.

The Best Ever Grilled Margarita Chicken with Marinade

Best Ever Grilled Margarita Chicken has the fantastic flavor of tequila cooked into the chicken with subtle hints of sweetness from the agave and a little kick from the jalapeno. The gang is all here in this flavor profile. Tequila, lime and orange all come together to create the best ever Margarita Chicken. This is one recipe you have to try!

Ingredients

  • 3-5 pounds boneless skinless chicken breast (washed and trimmed)
  • Zest of 1 lime (about 1 tablespoon)
  • Juice of 3 limes (about ½ cup)
  • Juice of 1 orange (about ¼ cup)
  • 1 jalapeño pepper, minced (seeded and deveined to reduce heat)
  • 5 cloves garlic, minced or grated
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander seed
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh ground black pepper
  • 2 ounces Cuervo Gold tequila
  • 1/4 cup extra virgin olive oil

Instructions

  1. Place chicken in a resealable gallon size plastic bag.  Set aside.
  2. Combine all ingredients, except chicken, in a small bowl or measuring cup.  Whisk to combine.  Pour the marinade over the chicken, seal and place in the refrigerator to marinate for 3-24 hours.  Turn chicken occasionally.
  3. Preheat grill to medium-high.  Place chicken on the counter to take the chill off, about 30 minutes.
  4. Grill chicken about 4-5 minutes on each side, turning half way to get great grill marks.  
  5. Serve and enjoy.

If you've ever wondered how to make frozen margaritas, I've got a few recipes that you need to try. The hot weather is a perfect time to enjoy a frozen margarita recipe.

And, you can try my Perfectly Peach Margarita which starts with peach chunks and peach schnapps to make a delicious summer drink.

Or, you will love the depth of flavor in my Strawberry Lime Margarita. Or, for a slightly different taste, why not try my Puckered Jalapeno Frozen Margarita.

This recipe does not use a frozen margarita mix. I find that they are often too sweet. And, I didn't want an overly sweet frozen margarita recipe.

This recipe uses a simple syrup which adds just the right amount of sweetness but doesn't leave it overpoweringly sweet. It's a simple, refreshing drink on a hot day.

Frozen Margarita Recipe Tips

This frozen margarita recipe is very easy to follow. But, here are a few simple tips to make the best possible frozen drink recipe.
  • Use crushed ice to make the job easier on your blender!
  • Add liquids first and the ice on top.
  • Start on low and slowly increase the speed.
  • Don't over blend or you will end up with a watery cocktail.
  • Be sure to add frozen fruit and not fresh or your frozen margarita will be too watery.

How to make frozen margaritas

  1. Rim the margarita glasses in lime juice and then dip in coarse salt.  Set aside.
  2. Add ingredients and 3 cups of ice to the blender (adjusting to personal preference).  Blend together until the mixture becomes a thick slush.
  3. Pour into rimmed glasses and garnish with a lime slice!
  4. Serve and enjoy!

Tools for making frozen margaritas

Blender - You can use any blender with this frozen margarita recipe, but I absolutely love this one! I use it for ice cream, smoothies, soups, my tomato sauce, and naturally this margarita.

Do you need triple sec for margaritas?
Yes, a classic margarita will contain triple sec. This frozen margarita contains tequila, triple sec, lime juice, and simple syrup. And, the ice of course. You will also need coarse salt and lime juice for rimming your glasses.

How to rim a margarita glass

One of the most important steps in this frozen margarita recipe is rimming your margarita glass with coarse salt and lime juice. It's very easy to do with a little bit of preparation.

You will need a shallow bowl of water, lemon juice, or lime juice (like I've used here). Then you need to dip the rim of your margarita glass into the liquid evenly.

Make sure that you cover the rim completely.

Finally, carefully dip the rim into the coarse salt until it's evenly coated. For a fun variation, you can add food coloring to the salt to change the color.

Try matching the color of the salt to your party theme. Or, try orange for a peach margarita and red for a strawberry frozen margarita recipe. There are lots of different variations you can try.

What pairs well with margaritas?

Frozen Margarita Recipe

You have got to try this frozen margarita recipe! No party is complete without the Best Ever Frozen Margarita made with Jose Cuervo Gold. It is a perfectly sweet frozen cocktail (with a simple recipe) that will transport you to Margaritaville!
Prep time: 5 MCook time: 09 MTotal time: 5 M

Ingredients:

  • coarse salt
  • lime (sliced)
  • 4 ounces Jose Cuervo Gold Tequila
  • 2 ounces triple sec
  • 2 ounces lime juice (fresh squeezed or Rose's Lime Juice)
  • 1 ounce simple syrup (1/2 water, 1/2 sugar heated until it becomes a syrup)
  • 3 cups ice

Instructions:

  1. Add coarse salt to a plate or bowl large enough to fit the top of your margarita glass in. 
  2. Run a lime slice around the lip of your glasses and then dip each glass into the coarse salt. Set aside.
  3. Add the remaining ingredients to your blender. Blend together until the mixture becomes a thick slush. You may need to pulse it
  4. Pour into rimmed glasses and garnish with a lime slice!
  5. Serve and enjoy!
